HOW TO MAKE HOMEMADE BUTTER
We're going to do our own handmade butter, using just cold, heavy cream. It's done with no heavy equipment at all, just good old-fashioned arm power. It's the original elbow grease!

- Pour cream into the jar and screw on the lid. Shake jar until butter forms a soft lump, 15 to 20 minutes. Continue to shake until buttermilk separates out of the lump and the jar contains a solid lump of butter and liquid buttermilk.
- Pour contents of the jar into a fine mesh strainer and strain out the buttermilk, leaving the solid butter. Remove the lump of butter and wrap in plastic wrap. Refrigerate until needed.

You can make great tasting butter at home just by putting heavy cream in a food processor and running it till it turns into butter.

- Pour cream into a food processor or blender. Process for 10 minutes, or until the butter separates. Strain off the liquid. Season to taste with salt if you like. Press butter into a small bowl with the back of a spoon to further remove liquid.

- Pour the whipping cream into a plastic pint-sized jar with a screw-top lid (a peanut butter or mayo jar both work well).and add a pinch of salt if desired. Screw on the the lid tight-- I usually reinforce with masking tape as a precaution.
- Take turn with the children and shake the jar. We usually pick a song to sing for each child's turn. This takes a while-- about 5 minutes or so.
- Drain the liquid from the butter. This is the buttermilk, and some of the children may want to try it (I offer **very small tastes** in paper cups). Add more salt, or honey, to taste if desired.
- Serve the butter at once on crackers or bread, or chill to serve later.

- Pour cream into the bowl of a stand mixer using the whisk attachment, or use a mixing bowl and hand mixer. Begin beating the cream on a low speed, and gradually increase the speed as the mixture thickens.
- Pour heavy cream into the mason jar, filling it half-way full. Do not overfill past the half-way mark. Screw the lid on tightly so there are no leaks.

- Pour a pint of heavy cream or whipping cream into your device or into a jar with a tight-fitting lid. If using a machine, turn on low speed, then raise to medium speed. If you're using a jar, start shaking (you'll need some serious elbow grease if doing it by hand). First, the cream will turn into whipped cream with soft, then stiff peaks. Keep going until the cream breaks. If you’re shaking the cream by hand, you’ll hear a sloshing, then you’ll begin to feel something more solid hit the sides of the jar. If you’re using a stand mixer, you’ll see the butter clinging to the beater. This usually takes anywhere from 5 to 10 minutes -- by hand may take longer. In this process, you are separating the butterfat from the liquid.
- Once the butter has solidified, pour off the buttermilk and save it for baking (or drink it!). Scoop the butter into a bowl. Rinse the butter by pouring ice water over it and pressing the remaining buttermilk out with a small spatula or a spoon. Pour off the water and repeat the process. Keep rinsing and squishing the butter with the ice water until the water runs clear. Then add some salt if you like and work that through the butter.
- There you have it-- old-fashioned butter, no churn required! Spread on toast, corn on the cob, a baked potato, or whatever you like and enjoy!

- First, get yourself some cow’s milk cream. Fresh, raw cream is best, but you can certainly try this with heavy cream from the store.
- Place the cream in a mason jar, ideally no more than 1/3 of the way full.
