- Prepare stuffing as directed.
- Best if stuffing is leftover or made 1 day in advance.

- Layer stuffing over soup.

- In large skillet, cook bacon until crisp. Remove bacon from skillet and drain on paper towels. Crumble bacon and set aside in refrigerator.
- In bacon drippings in skillet, cook chicken over medium heat 3-5 minutes or until light brown, turning once. Place in 4-6 quart slow cooker. Top with mushrooms. In skillet, heat soup and pour over mushrooms and chicken. Cover and cook on low setting for 4-5 hours, or until chicken registers 165 degrees F on a meat thermometer.
- Top chicken with cheese slices and sprinkle with bacon. Cover and cook on high for 10-15 minutes or until cheese is melted.

- Combine bread crumbs, paprika, pepper and flour on a paper plate.
- Dip chicken in egg, making sure all sides are coated, and then dredge in crumb mixture. Repeat process with second chicken breast, being sure to use all the egg and crumbs. Set aside.
- In 10 inch skillet, combine oil and butter; heat over medium heat until bubbly and hot. Add chicken and cook, turning once, until both sides are lightly browned and chicken is almost cooked through, 2 to 3 minutes on each side; transfer to plate and keep warm.
- To same skillet, add mushrooms and saute until lightly browned, 1 to 2 minutes; sprinkle with 1 tsp flour and stir quickly to combine. Add chicken broth and wine and cook, stirring constantly, until mixture thickens, about 1 minute.
- Return chicken to skillet and top evenly with cheese; cover and cook until cheese is melted, 2 to 3 minutes.
- Garnish with freshly snipped parsley, if desired.

- 1. Preheat oven to 350 degrees. Pull out a 2 qt. casserole or a 9x13 pan. Lightly grease the baking pan.
- 2. Place the chicken breasts in the pan.
- 3. Cover the chicken with the Swiss cheese.
- 4. In a small bowl, mix the soup with 1/2 can of water. Pour soup over chicken.
- 5. Pour melted margarine over chicken and soup. Top with dry stuffing mix.
- 6. Bake at 350 degrees for 1 hour. Remove from oven, let rest 10 minutes. serves 4-6.
- 7. Notes: This recipes uses Pepperidge Farm stuffing mix. I like the herb seasoned, but you could use cornbread if you prefer. I also amp up the stuffing with some sauteed onions and celery and a couple dashes of poultry seasoning.
