Peanut butter refrigerator pie, very easy to make. Originally submitted to ThanksgivingRecipe.com.

1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
½ cup creamy peanut butter
½ cup confectioners' sugar
1 (16 ounce) container frozen whipped topping, thawed
15 miniature chocolate covered peanut butter cups, unwrapped

Steps:

  • Mix the cream cheese, confectioners' sugar and peanut butter together until smooth. Fold in 1/2 of the whipped topping. Spoon the mixture into the graham cracker crust.
  • Place the remaining whipped topping over the top of the peanut butter mixture and garnish with the peanut butter cups. Chill for at least 2 hours or overnight before serving.

1 package chocolate cake mix (regular size)
1 egg
1/4 cup canola oil
1/4 cup unsweetened applesauce
TOPPING:
1 package (8 ounces) reduced-fat cream cheese
1/2 cup creamy peanut butter
1/2 cup reduced-fat butter, melted
2 eggs
2 egg whites
1 teaspoon vanilla extract
2 cups confectioners' sugar

Steps:

  • In a large bowl, beat the cake mix, egg, oil and applesauce on low speed until combined. Press into a 13-in. x 9-in. baking pan coated with cooking spray., In a another large bowl, beat cream cheese and peanut butter until smooth. Add the butter, eggs, egg whites and vanilla; beat on low until combined. Add the confectioners' sugar; mix well. Pour over crust., Bake at 350° for 40-45 minutes or until edges are golden brown. Cool on a wire rack for 20 minutes before cutting. Refrigerate leftovers.

  • Cut off the crusts from the bread and roll flat using a rolling pin. Spread 12 slices with peanut butter and the other 12 slices with jelly. Place the halves together to make sandwiches. Cut circles out of four of the sandwiches. Set aside. Cut the rest of the sandwiches diagonally. Place the triangles overlapping in the tart pan. Place the 4 circles overlapping to cover the center of the dish. Set aside.
  • Over medium head melt together the 1/2 cup of peanut butter, butter, cream cheese, and vanilla. Cook until smooth. Remove from the heat and whisk in powdered sugar. Chill for 30 minutes. Spread a layer of the peanut butter cream in the tart pan.
  • In a medium saucepan, combine 1 jar of jelly, with gelatin sheets and lemon juice. Mix until smooth. Add the gelatin and whisk until it dissolves. Set aside to cool for 10 minutes.
  • Pour the jelly glaze on top of the chilled peanut butter cream. Chill until set. Garnish with chopped peanuts. Enjoy!
