3 tablespoons butter
4 (1 inch) cubes salt pork
3 ribs celery, diced
1 Spanish onion, diced
1 clove garlic, minced
5 potatoes, peeled and cut into 3/4 inch cubes
5 cups clam juice
1 teaspoon dried tarragon
1 teaspoon celery salt
2 bay leaves
1 ½ pounds fresh clams, shelled and chopped
5 dashes Worcestershire sauce
2 cups heavy cream
¼ teaspoon chopped fresh dill
salt and ground black pepper to taste
10 sprigs fresh parsley, for garnish

Steps:

  • Melt butter in a stockpot over medium-high heat; cook and stir salt pork, celery, onion, and garlic in melted butter until softened, about 7 minutes. Add potatoes, clam juice, tarragon, celery salt, and bay leaves to the stockpot. Bring the mixture to a boil, reduce heat to medium, and place a cover on the pot. Cook at a simmer until potatoes are tender, about 35 minutes.
  • Stir clams into the soup and simmer uncovered for 5 minutes. Add Worcestershire sauce, heavy cream, dill, salt, and pepper; stir and cook another 7 minutes. Remove the pot from heat. Remove and discard bay leaves. Garnish with parsley to serve.

1/2 cup each chopped onion, celery and carrot
1/4 cup chopped green pepper
3/4 cup butter, divided
3/4 cup all-purpose flour
1 carton (32 ounces) chicken broth
1 bottle (8 ounces) clam juice
1 medium potato, peeled and cubed
1 bay leaf
1/2 teaspoon salt
1/2 teaspoon dried parsley flakes
1/4 teaspoon curry powder
1/4 teaspoon pepper
2 cups half-and-half cream
4 cans (6-1/2 ounces each) minced clams, undrained
1 cup milk

Steps:

  • In a Dutch oven over medium heat, cook the onion, celery, carrot and green pepper in 1/4 cup butter until tender. Add the remaining butter; cook until melted. Sprinkle with flour; stir until blended., Gradually stir in the broth, clam juice, potato and seasonings. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 15-20 minutes or until potato is tender, stirring frequently. , Add the cream, clams and milk; heat through (do not boil). Discard bay leaf before serving.

Number Of Ingredients 12

2 cups water
1 pinch salt
4 cups peeled chopped potatoes
1/2 cup finely chopped onion
1/4 cup butter or 1/4 cup margarine
3 tablespoons all-purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon celery seed
2 tablespoons dried parsley flakes
1 (12 ounce) can evaporated milk
2 (10 ounce) cans baby clams
salt and pepper

Steps:

  • Cook potato in 2 cups water with pinch of salt until tender, but do not drain.
  • In a small pan, saute onion in butter until tender; add flour, cayenne, and celery seed; stir well.
  • Drain juice from clams into potatoes and reserve clams for later.
  • Add parsley and milk to potatoes, and stir well.
  • Heat potato mixture, and add onion/flour mixture, stirring constantly until thickened slightly.
  • Stir in clams; and season to taste with salt and pepper.
  • Cook for 5-10 minutes more or until heated through.
  • Serve.

MOM'S FAMOUS CLAM CHOWDER

Ummm thick and Creamy!! This is a good one!! I don't care for clams so I divide this soup in half before I add the clams and I have an awesome potato soup for myself and my daughter and my happy hubby gets all the clam chowder.

Number Of Ingredients 12

1 (6 1/2 ounce) can chopped clams (you can add 2 cans if you really like clams)
1/4 lb bacon (diced)
2 cups bottled clam juice
4 large potatoes (diced)
1 cup diced celery
1/2 cup diced carrot
1 whole onion, chopped
1 quart half-and-half
salt
pepper
1/4 teaspoon thyme
2 tablespoons chopped fresh parsley or 2 tablespoons dried parsley

Steps:

  • Chop or dice all of your vegetables and set aside.
  • Drain clams, save the liquid.
  • (I usually throw in the extra clam juice for the added flavor, you will get about 1/2 cup of juice from the can of clams).
  • (I start the bacon and the vegetables all in the pan that I will finish the soup in- then you get the flavor from the bacon crustys on the bottom).
  • Fry bacon bits and set aside.
  • Drain off all bacon fat but enough to coat the bottom of the pan.
  • Saute potato, onion, celery and carrot in bacon drippings for 5 minutes.
  • Add the clam juice, salt and pepper, thyme and chopped parsley.
  • Cook for 20 minutes or until the veggys are all fork tender.
  • Add the 1/2 and 1/2.
  • Add the Bacon.
  • (This is where I divide the soup if you want a pot of potato soup as well).
  • Add the clams.
  • Thicken to desired consistency with cornstarch and water.

1 bay leaf
1/2 teaspoon dried parsley flakes

1 medium potato, peeled and cubed
2/3 cup all-purpose flour
2 cups 2% milk, divided
4 cans (6-1/2 ounces each) minced clams, undrained

Steps:

copycat version of my favorite seaside diner clam chowder

Number Of Ingredients 11

1 lb. Bacon (diced)
1/4 lb smoked ham (diced)
6 cups chopped onions
1/4 cup all-purpose flour
1 can minced clams (drained, keep the juice)
2 jars clam juice
12 cups diced potatoes
Salt and pepper
5 cups water
6 cups whole milk
Butter and paprika

Steps:

  • Saute bacon and ham together, add onions and saute until limp. Set this mixture aside, but do not drain. In 5 cups of water, add potatoes, salt, pepper and all the clam juice. Cook until potatoes are tender. Set aside and do not drain.
  • To the bacon, ham and onion mixture add the flour and make a roux. Mix the roux into the potato mixture, bring to a boil. Stir down when the boiling point is reached and add the milk and clams. Garnish with a dollop of butter and add a dash of paprika.

  • Cube the red potatoes bite sized. You can peel them or not, your choice. Place them in your soup pot and cover with enough water to just cover the potatoes. Bring to a boil and cook until just fork tender. (Cooking time will depend on potato size.) Drain and set aside.
  • Open the canned clams and drain the juice into a measuring cup. Set the clams aside for the end of cooking.
  • Place the pot back on the stove over medium heat. Add the olive oil, then the green onions and garlic. Stir until fragrant, just under minute or so, then add butter and cook until the butter is melted. Stir in the flour and cook a minute or two.
  • Whisk in the half and half, making sure to fully mix in the flour mixture. Cook about 5 minutes or so, or until the mixture thickens, stirring often and whisking when necessary. Be sure to get all the bits off the bottom while you’re stirring so the flour mixture doesn’t stick.
