2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 large egg
3/4 cup orange juice
1/3 cup vegetable oil
1/4 cup whole milk
1 tablespoon grated orange zest
STREUSEL TOPPING:
1/4 cup sugar
1/4 cup all-purpose flour
2 tablespoons cold butter

Steps:

  • In a bowl, combine the dry ingredients. Combine egg, orange juice, oil, milk and orange zest; add to the dry ingredients just until combined. Pour into a greased 10-in. pie plate. For topping, combine sugar and flour in a bowl; cut in butter until crumbly. Sprinkle over batter. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean.

1/3 cup butter, softened
2/3 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 cup reduced-fat sour cream
TOPPING:
1/3 cup chopped walnuts
1/3 cup packed brown sugar
2 tablespoons sugar
1 teaspoon ground cinnamon
2 medium tart apples, peeled and thinly sliced

Steps:

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking soda; add to creamed mixture alternately with sour cream, beating well after each addition (batter will be sticky). , In a small bowl, combine the walnuts, sugars and cinnamon. Spread half of the batter into an 11x7-in. baking dish coated with cooking spray. Top with apples; sprinkle with half of the topping. Gently top with remaining batter and topping., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1/4 teaspoon baking soda
FILLING:
1/2 cup finely chopped pecans
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
2 tablespoons butter, melted
2 teaspoons ground cinnamon
ICING:
1/4 cup confectioners' sugar
1-1/2 teaspoons fat-free milk
1/4 teaspoon maple flavoring

Steps:

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in milk and applesauce (mixture may appear curdled). Combine the flour, baking powder, salt and baking soda; add to butter mixture just until moistened. 1 package white cake mix (regular size)
1 package (.3 ounce) sugar-free strawberry gelatin
4 egg whites
1/3 cup canola oil
1 cup frozen unsweetened strawberries, thawed
1/2 cup water
ICING:
1/3 cup butter, softened
2-1/3 cups confectioners' sugar

Steps:

  • Line two 9-in. round baking pans with waxed paper. Coat pans with cooking spray and sprinkle with flour; set aside. In a large bowl, combine cake mix and gelatin. Add egg whites and oil; beat until well blended., In a small bowl, mash strawberries in their juice. Set aside 3 tablespoons for icing. Add water and remaining berries to the batter; mix well. , Pour into prepared pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For icing, in a small bowl, combine butter and reserved strawberries. 1/2 cup butter, softened
3/4 cup sugar
3 eggs
1/4 cup unsweetened applesauce
1 1/4 teaspoons vanilla extract
1/2 teaspoon grated lemon peel
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • In a small mixing bowl, cream butter and sugar until light and fluffy, about 5 minutes.
  • Add eggs, one at a time, beating well after each egg addition.
  • Stir in the applesauce, vanilla and lemon peel.
  • Combine the flour, baking powder and salt together and add to the creamed mixture just until blended.
  • Transfer to an 8" loaf pan which has been sprayed with non-stick cooking spray.
  • Bake at 350F for 45-55 minutes or until golden brown and cake tester inserted comes out clean.
  • Cool for 10 minutes before removing to a wire rack to cool completely.
