I make this at the beginning of the cold weather, and have it ready all winter. Vary the flavor of your mix by trying flavored nondairy creamer; I like the cinnamon.

- In a large mixing bowl, combine milk powder, confectioner's sugar, cocoa powder, and creamer. Stir till thoroughly combined. Store cocoa mixture in an airtight container. Makes about 15 cups mix, or enough for about 45 servings.
- For 1 serving, place 1/3 cup cocoa mixture in a coffee cup or mug, and add 3/4 cup boiling water. Stir to dissolve. Top with dollop of whipped cream or a few marshmallows, if desired.

DIY INSTANT CHOCOLATE PUDDING MIX
Steps:
- In a bowl, whisk all the ingredients together. Seal in an airtight container for later use.
- In a sauce pan, bring 2 cups of milk and 1/2 cup of Instant Pudding Mix to a boil. Reduce the milk to a simmer and stir constantly for about 5 minutes or until the pudding thickens. Remove from stove top, pour into a large bowl and let rest for 5-10 minutes until warm and ready to eat, or place in the fridge and let cool completely.
- To prevent the "skin" that forms on cook and serve puddings, press plastic wrap onto the top of the pudding and place in the fridge to chill.
- Serve.

If you are having trouble with clumping, you can either pour the contents into a blender and blend on medium until smooth or use a stick blender to break up the lumps and smooth the mixture. It will be soft set immediately, but improves in flavour and texture if it is allowed to rest (with a piece of plastic wrap directly on the surface) for at least 30 minutes.
