- Line a 9-in. round pan with plastic wrap. Spread ice cream into pan. Freeze 2 hours or until firm., Prepare and bake cake mix according to package directions, using two 9-in. round baking pans. Cool in pans 10 minutes before removing to wire racks to cool completely., Using a serrated knife, trim tops of cakes if domed. Place 1 cake layer on a serving plate. Invert ice cream onto cake layer; remove plastic wrap. Top with remaining cake layer. Spread whipped topping over top and sides of cake. Decorate with sprinkles as desired. Freeze 2 hours longer or until firm.

- Place 8 of the ice cream sandwiches side by side in a 9x13 inch baking dish. Spread evenly with half of the hot fudge topping, then half of the whipped topping. Repeat with the remaining sandwiches and toppings. Sprinkle with grated chocolate bar.
- Cover and freeze for at least 1 hour before serving. Keep unused portion covered and frozen.

MAKE-YOUR-OWN ICE CREAM CAKE
For my son's 25th birthday today I thought I'd make an ice cream cake with his favorite-chocolate mint Blue Bell ice cream and a brownie layer on the bottom for the cake base. You could use any flavor of cake/ice cream. Just frost the top and put candles on it! Much more affordable than the kind you buy and every bit as good!

- 1. Preheat oven to 350 degrees. Spray bottom only of a 9x13 inch baking pan.
- 2. Make brownies according to directions on box. Spread into the bottom of the baking pan. Cook 35 minutes, or according to package instructions, until cooked well and set in the middle. Let cool completely.
- 3. (You can also use a cake mix or cookie mix, either homemade or boxed for this bottom layer)
- 4. While brownie is cooling, set ice cream out to soften. When brownie is cool and ice cream is soft but not melted, spread all of ice cream on top of brownie or cake layer, spreading to all corners and sides completely. Place immediately into freezer for 30-45 minutes.
- 5. After ice cream has frozen well, spread top with canned frosting (you could also make homemade buttercream or cream cheese frosting, any flavor). Decorate with chopped candy-I used Andes candies cut in half diagonally. Place back into freezer and take out at least 15 minutes before ready to cut and serve. Keep in freezer.
