- Cut in shortening with a pastry blender until mixture resembles fine crumbs.
- Store mixture in airtight container in the refrigerator up to 4 months.
- Use whenever your recipe calls for "Bisquick mix".
MAKE YOUR OWN BISQUICK MIX - CLONE, SUBSTITUTE
This recipe makes 12 cups and has no sodium, unless you opt to add it. This mix makes it possible to still fix those dishes which my husband loves.

EASY BISCUIT MIX (BISQUICK CLONE)

Steps:
- Use shortening that does not require refrigeration.
- In a bowl, stir together flour, baking powder, sugar, and salt.
- Cut in shortening till mixture resembles coarse crumbs.
- Store in an airtight container for up to 6 weeks at room temperature, or for up to 6 months in the freezer.
- Makes about 12 cups.
- Use to make Easy Biscuits or Easy Muffins.
- Easy Biscuits: Place 1 cup of Easy Biscuit Mix in a bowl. Make a well in the center.
- Add 1/4 cup milk.
- Stir with a fork, just till dough clings together.
- On a lightly floured surface, knead dough gently for 10 to 12 strokes.
- Roll or pat to 1/2 inch thickness.
- Cut with a 2 1/2 inch biscuit cutter, dipping cutter into flour between cuts.
- Place on a baking sheet.
- Bake in a 450 degree oven for 8-10 mminutes, or till golden.
- Makes 4.
- Easy Muffins: In a mixing bowl, combine 1 cup of Easy Biscuit Mex, and 1-3 Tbl. sugar.
- Combine 1 beaten egg and 1/4 cup milk; add all at once to biscuit mixture.
- Stir just till moistened (mixture should be lumpy.).
- Fill greased muffin cups 2/3 full.
- Bake at 400 degrees for 13-20 minutes, or till golden.
- Makes 6.

THE MASTER MIX (HOMEMADE BISQUICK SUBSTITUTE)
This recipe is in response to a discussion on the boards about Bisquick. Bisquick is apparently not available in the country where the originator of the thread lives. I prefer to use this in recipes that call for 'Bisquick' rather than purchase it, myself. If stored in the freezer, this will keep for several months. I hope you find this as handy as I do, since I could never keep 'Bisquick' on hand before. If I recall correctly, I think this came from one of my Make a Mix Cookery cookbooks.

Steps:
- In a large pan, stir the dry milk, baking powder, sugar and salt into the flour; mix thoroughly.
- Cut the shortening into the dry ingredients until the MIX is the consistency of corn meal.
- Place the mix in a covered glass or plastic container and keep in a cool, dry place.
- In warm weather the MIX should be refrigerated.
- Use within a month.
- To measure, pile the MIX lightly into a cup and level off with a spatula or the back of a knife.
