1 pound ground beef
1 egg
¼ cup dry bread crumbs
1 onion, diced
1 cup packed brown sugar
3 tablespoons all-purpose flour
1 ½ cups water
¼ cup distilled white vinegar
3 tablespoons soy sauce

Steps:

  • In a medium bowl, combine the ground beef, egg, bread crumbs and onion. Mix thoroughly and shape into golf ball-sized balls.
  • In a large skillet over medium heat, gently brown the meatballs and set aside.
  • In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.

2 pounds frozen meatballs
OR
2 pounds lean ground beef
½ small onion (very finely diced)
½ cup bread crumbs
2 eggs
1 teaspoon pepper
1 ½ cups ketchup
¾ cup grape jelly

Steps:

  • Preheat oven to 350°F.
  • Mix together all meatball ingredients just until combined. Form into 1" meatballs. Bake for 18-20 minutes (or bake frozen meatballs according to package directions).
  • Combine sauce ingredients in a small saucepan over medium-low heat. Stir until preserves/jelly melts. Allow to come to a boil for 1 minute. Toss with meatballs and allow to simmer on low 10-15 minutes.

1/2 cup whole milk
2 large egg yolks
1/2 lb ground pork
1/2 cup finely chopped fresh parsley
2 garlic cloves, minced
1 teaspoon salt
2 teaspoons pepper
2 1/2 lbs lean ground beef
1 tablespoon vegetable oil
1 onion, minced
1 (28 ounce) can tomato sauce
2 1/2 cups apricot preserves
1/4 cup packed dark brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1/4 teaspoon red pepper flakes

Steps:

  • MAKE MEATBALLS: Adjust oven racks to upper-middle and lower middle positions and heat oven to 450 degrees F.
  • Using fork, mash bread, milk, and egg yolks in large bowl until smooth.
  • Add pork, parsley, garlic, salt, and pepper and mix until incorporated. Add beef and knead gently until combined.
  • BAKE MEATBALLS: Form mixture into 1 1/4 inch meatballs (you should have about 80). Bake meatballs on 2 rimmed baking sheets until cooked through and beginning to brown, 12 to 15 minutes, switching and rotating sheets halfway through cooking.
  • Let cool to room temperature, then refrigerate until firm, about 30 minutes.
  • Transfer to large zipper lock freezer bag and freeze for up to 1 month.
  • MAKE SAUCE: Heat oil in Dutch oven over medium high heat until shimmering. Cook onion until softened, about 5 minutes.
  • Whisk in tomato sauce, preserves, sugar, Worcestershire, mustard, and epper flakes and bring to boil.

Sweet and Sour Meatballs (Oriental Sweet and Sour Meatballs) image

This is one of my recipes I like to use for special occasions such as at my Christmas 'open house' and New Years Day buffet. It is a great addition to a buffet and is definitely a crowd pleaser at potlucks. I often prepare double batches of the meatballs, bake them in the oven, freeze on a cookie sheet and when frozen slip them into a plastic bag. This allows me to take out as many as I need for the meal I am preparing. Found this recipe hand written on a sheet of paper tucked in a cookbook picked up at a yard sale.

1/2 lb ground beef (I use all ground beef)
1/2 lb ground pork
1 teaspoon white sugar
1/8-1/4 teaspoon black pepper
1 teaspoon dried ginger
3 teaspoons soy sauce
2 tablespoons tapioca starch or 2 tablespoons cornstarch
1 small onion, chopped fine (best minced or grated)
1/4 cup water chestnut, chopped fine (optional)
1/3 cup white vinegar
3/4 cup white sugar (You may wish to use less)
2 3/4 ounces tomato paste
1 tablespoon tapioca starch or 1 tablespoon cornstarch
1 cup water (I use the drained juice from one 19 ounce can of pineapple chunks plus water to equal one cup)
1 cup pineapple chunk, drained (I use one 19 ounce can of pineapple chunks)
1 green pepper, cut into small squares
1 red pepper, cut into small squares (optional)
1 carrot, cut into thin slices (I use more ...about 4)

Steps:

  • In large mixing bowl combine and mix: ground meat, sugar, black pepper, dry ginger, soy sauce, the tapioca or cornstarch, minced onion and(the water chestnuts if using).
  • Knead above for at least two minutes to insure proper marination, form into even sized balls.
  • Fry in oil and drain (I never fry my meatballs, I put them on a cookie sheet and bake at 350 for about twenty minutes or until done.).
  • Meanwhile make the Sweet and Sour Sauce: in sauce pot on medium heat whisk together vinegar, sugar, tomato paste, the tapioca starch or cornstarch, the cup of water (or water/pineapple juice mix) Bring to boil stirring while cooking. (I find using a whisk to stir works very well).
  • When mixture reaches boiling point add the meatballs and heat through.
  • Add the carrots, peppers and pineapple chunks and cook until vegetables are 'just done'. Do not overcook.
  • NOTE: This can be made ahead and refrigerated. It can then be quickly reheated in the microwave and kept hot in a Crockpot. This freezes well.
  • I also find cooking the carrots separately and then adding, assures they don't get overcooked.

2 lbs ground beef (80-85% lean)
1/2 cup plain breadcrumbs
2 large eggs
1 white medium onion, minced (about 1 cup)
2 cloves garlic, minced
1/2 Tbsp salt
1/2 tsp freshly ground black pepper
1/2 tsp chili powder
2 Tbsp olive oil
2 cups ketchup or chili sauce
18 oz natural grape jelly

Steps:

  • Combine ground beef, breadcrumbs, eggs, onion, garlic, salt, pepper, and chili powder in a large bowl until well-combined.
  • Form the meat into 50 equally-sized balls, using a rounded teaspoonful for each.
  • Add oil to a large skillet and heat over medium-high heat, or add to your slow cooker and turn on the SEAR setting. Once hot, lightly brown the meatballs in batches. Transfer to a large plate after they brown.
  • Add ketchup or chili sauce and jelly to a medium saucepan over medium heat. Bring to a boil. Pour about 2/3 cup of the sauce into the bottom of a Dutch oven or Crock-Pot insert, spreading to coat the bottom in an even layer. This can also be done on the SEAR setting in your slow cooker.
  • Add one-third of the meatballs to the bottom of the pan or insert. Top with another 2/3 cup of sauce. Add another third of the meatballs on top, followed by another 2/3 cup of sauce. Finish with the remaining meatballs and top with remaining sauce.
  • If you are using a Dutch oven, cover and cook on low heat for 3 hours, until sauce has thickened and meat is cooked through.
  • If you are using a slow cooker, set to low and cook for 2-3 hours, until sauce is very thick and beef is cooked through.
  • Serve immediately on a platter with toothpicks.

Why this recipe works:Browning our Make-Ahead Sweet and Sour Cocktail Meatballs in a skillet was a pain. Baking them in the oven was faster and ensured the meatballs browned evenly. We found that the most common binders-bread crumbs, cracker crumbs, and cornflake crumbs-dried out the meatballs. We settled on a panade, a paste made from bread softened in milk, to protect our Make-Ahead Sweet and Sour Cocktail Meatballs recipe from the freezer's dry cold. The right balance of salt, pepper, garlic, and parsley complemented the sweet and sour flavor of the sauce perfectly. Tomato sauce doctored with red pepper flakes, Dijon mustard, and a few other key ingredients took care of the sour portion of the sauce. For the sweet, we tested every type of jam and jelly we could think of and settled on one standout.
