EASY BERRY PARFAIT
This is a quick and easy way to top off any meal with the light taste of sweet berries. You can use fresh seasonal berries or the frozen ones work just as well. Top with a few berries and mint leaves for garnish.

Steps:
- In a blender, combine blueberries, strawberries and whipped topping. Blend until smooth. Transfer to a mixing bowl and fold in raspberries and blackberries. Layer the berry mixture with the frozen yogurt in 6 dessert glasses, finishing with a berry layer. Serve at once.

Steps:
- Layer 1/4 - 1/3 c. of mixed berries in the bottom of each cup.
- Next spoon about 1/4 - 1/3 c. of yogurt on top of the berries.
- Continue layering until the cup is as full as you would like (with yogurt being the top layer).
- Fill a snack-sized ziploc bag with granola and seal (one for each cup).
- Cover each cup tightly with plastic wrap and seal with rubber band.
- Place (or tie on) a granola bag on each cup along with a plastic spoon (see picture above).
- Place in refrigerator for up to 5 days.

- In a heavy saucepan, combine 1/2 cup sugar and cornstarch. Stir in milk until blended. Bring to a boil over medium-low heat; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Stir a small amount into egg yolks; return all to the pan, stirring constantly. Remove from the heat; stir in vanilla. transfer to a bowl; press a piece of plastic wrap on top of custard. Refrigerate., In a bowl, combine the flour, baking powder, baking soda, salt and remaining sugar. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk until a soft dough forms. Pat gently into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 15-20 minutes or until lightly browned. Cool on a wire rack., Cut shortcake into 3/4-in. cubes. In parfait glasses, alternate layers of shortcake, custard, sliced strawberries and blueberries. Garnish with halved strawberries and a dollop of whipped topping.

- Melt the butter in a small saucepan over medium heat. Add the berries and stir to coat with the butter. Cook uncovered for about 5 minutes, stirring occasionally. In a small dish, combine the cornstarch and hot water and stir together until thoroughly combined. Pour the sugar and cornstarch slurry over the berries and stir to combine. Once the mixture is bubbling (should happen almost immediately), cover the pan and reduce the heat to low. Cook for another 2-4 minutes until the mixture thickens.
- Once the berry sauce is cooked, transfer it to a container you can refrigerate and let it cool on the counter for a bit before transferring it to the refrigerator. Refrigerate until cooled (about an hour).
- To build each parfait, measure out ¾ cup of yogurt and place about half of it in the bottom of a 7-8 oz sealable mason jar or yogurt cup (the ones I use are linked in the post above). Spoon about 2 ½ tablespoons of berry sauce on top of the yogurt and then top with the remaining yogurt. Repeat with the remaining ingredients to build six parfaits. Place the air-tight lid on to seal and refrigerate until ready to use. Eat within 5 or so days.
