Spinach & Cheese Strata image

Layered with spinach, cheese, and bread, and soaked in a savory custard, this make-ahead strata is ideal for entertaining.

Provided by Jennifer Segal, inspired by

Categories     Breakfast & Brunch

Time 1h45m

Yield 8 to 10

Number Of Ingredients 13

1 pound bag chopped frozen spinach, thawed and squeezed as dry as possible
3 tablespoons unsalted butter
1 large yellow onion, chopped (about 2 cups)
3 garlic cloves, minced
12 ounces (¾ pound) Italian sandwich bread, cut into 1-inch cubes (about 11 slices or 8 cups)
6 ounces (1½ cups) coarsely grated Gruyère
2 ounces (⅔ cup) finely grated Parmigiano-Reggiano
9 large eggs
2¾ cups half-and-half
2 tablespoons Dijon mustard
1¾ teaspoons salt
¾ teaspoon black pepper
¼ teaspoon ground nutmeg

Steps:

  • Melt the butter in a large skillet over medium heat. Add the onion and cook, stirring frequently, until soft and translucent, 4 to 5 minutes. Add the garlic and drained spinach and cook 2 minutes more. Set aside.
  • Butter a 3-quart or 9x13-inch baking dish. Spread one third of the bread cubes in the dish and top evenly with one third of spinach mixture. (Try to break it up as much as possible so there are no huge clumps of spinach.) Sprinkle with one third of each cheese. Repeat layering twice, ending with cheeses.
  • In a large bowl, whisk the eggs. Add the half-and-half, mustard, salt, pepper, and nutmeg and whisk until well combined. Pour the custard mixture evenly over the strata. Cover the strata with plastic wrap and chill for at least 1 hour or overnight.
  • Preheat oven to 325°F. Bake the strata, uncovered, until puffed, set and golden brown all over top, 70-80 minutes. Let stand 10 to 15 minutes before serving. It will settle a bit as it cools.
  • Note: The cook time is based on the strata going immediately from the fridge to the oven. If it sits out at room temperature before baking, the cook time will be about 10 minutes less.

3 cups whole milk ((or half & half))
1 1/2 cups shredded sharp cheddar cheese ((off the block))
1 1/2 cup shredded smoked gouda cheese ((off the block))
1 cup chopped deli ham
1 cup chopped scallions
3/4 cup chopped roasted red pepper
1 1/2 teaspoons salt

  • Tear the bread loaf into 1-2 inch chunks and place them in the baking dish.
  • Pour the egg mixture over the top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed. Cover and chill until ready to bake.

Prepare and refrigerate this cheese Strata several hours ahead of time or overnight. For breakfast, simply add bacon, sausage, or ham to the cheese strata, then pop it in the oven when you wake up, pour some coffee, and sit down to an all-in-one meal. The red pepper (cayenne) gives the strata a "Bite" that gets your heart started! I always add something extra because I do like the "Bite" (Louisiana Hot Sauce)!!

  • In a large bowl, mix together the milk, eggs, salt, and pepper. In a medium-size bowl, toss the cheeses together.
  • Place 2 pieces of bread on the bottom of the prepared pan. The bread should cover most of the bottom. If it doesn’t not, add another piece of bread or part of one to fill in the gap. Sprinkle with one third of the cheese. Place the second layer of bread over the cheese and again, fill in any large gaps with extra bread. Carefully pour the milk and egg mixture over the entire casserole. It will seem lie a lot, but the bread will soak it up as it cooks. Top with the remaining cheese. (At this point you can cover and refrigerate the strata for up to 24 hours before baking.)
  • Bake for 45 to 50 minutes, or until the casserole is very puffy and the cheese is golden brown on the top. Let sit for about 10 minutes before cutting and serving.

  • Start With a Buttered Baking Dish, and Fill it With Bread. Choose an oven-proof baking dish that's about the right size to feed however many people you're planning on serving.
  • Use half the volume of milk and eggs as bread. A mixture of equal parts eggs and milk is what forms the quiche-like filling of the strata. Whatever volume the bread yielded, use half of that measurement for your milk as well as your eggs.
  • Flavor your liquid base. Season your egg and milk mixture with some salt and pepper and whatever else you want it to taste like: a spoonful of mustard, a splash of hot sauce, a pinch of paprika, or a whisper of nutmeg.
  • Use About the Same Volume of Shredded Cheese as Milk. You need some cheese in there to get everything cheesy and delicious, right? Your strata can hold up to equal parts cheese as milk and eggs.
  • Add Some Extras. If you want your strata to have more going on in it than eggs and cheese (you might not), you can add up to equal parts add-ins as cheese.
  • Assemble your Strata, and Let it Sit. Pour the milk and egg mixture over the top over the mix of bread, cheese, and add-ins. Press the bread down with your hands to make sure it's covered in liquid.
  • Bake your Strata. Before you bake it, cover your strata tightly with foil, and bake it for about 20 minutes at 350°F. Open up the oven, uncover the strata, and continue baking until the cheese is melted on top and the egg custard is set, 15 to 30 minutes more depending on the depth of your strata.

  • PREPARE FILLINGS: Choose 2-3 options. For vegetarian strata, I use spinach, onions, mushrooms. For meat-based, I use sausage, onions, spinach. Spinach: Defrost and squeeze water out using hands or paper towels. Get as much water out as possible. Onions: Dice or process onion. Saute in 2 teaspoons oil on medium until translucent (or cook 25-30 minutes, stirring, to caramelize, adding 1/2 teaspoon sugar to speed up caramelization). Sprinkle with a pinch of salt. Mushroooms: Saute in butter or oil for 5-7 minutes. Sprinkle with salt and garlic powder. Sausage: Pan fry or grill until no longer pink. Cut into small pieces. Or remove from casings and saute ground sausage until cooked. Bacon: Fry or microwave. Or bake at 400F for 18-20 minutes. Crumble. Green Onions or Ham: Chop. No need to cook.
  • PREPARE CORE INGREDIENTS: Cut bread (with or without crusts) into 1 inch cubes. Measure 8 cups packed. Place in large bowl. In separate bowl, whisk together eggs, milk and all seasonings. Grate cheeses.
  • ASSEMBLE AND REFRIGERATE: Add to large bowl with bread: the egg-milk-seasoning mixture; the vegetable filling; and cheeses (reserving 1/2 cup cheese to sprinkle on top). Mix lightly to combine well. Pour into prepared pan(s). Sprinkle on remaining cheese. Cover with plastic and refrigerate for at least 30 minutes (1 hour is better) or overnight.
