Mmm mmm good! This is a must do for every holiday in my household, or just when you have guests overnight! Can be made with egg substitute, skim milk and turkey sausage to make it healthier!

2 ½ cups seasoned croutons
1 pound spicy pork sausage
4 eggs
2 ¼ cups milk
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 (4.5 ounce) can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
¼ teaspoon dry mustard
2 sprigs fresh parsley, for garnish

Steps:

  • Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
  • In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
  • The next morning, preheat oven to 325 degrees F (165 degrees C).
  • Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot.

Delicious and decadent, simple spin on French toast. Got the idea from a bed and breakfast in the south. Add additional ingredients; we like blueberries and cream cheese, cinnamon apples, nuts, and dried fruit!

1 cup brown sugar
½ cup butter
1 (8 ounce) loaf crusty French bread, cut into bite-size pieces, or as needed
2 cups milk
6 eggs
2 teaspoons vanilla extract
1 pinch ground cinnamon, or to taste
1 tablespoon brown sugar, or as needed

Steps:

  • Grease a 9x12-inch baking dish.
  • Stir 1 cup brown sugar and butter together in a saucepan over medium-low heat until butter melts and sugar dissolves into butter, 2 to 4 minutes. Pour into prepared baking dish and spread a 1 1/2- to 2-inch layer of bread pieces over the top.
  • Beat milk, eggs, and vanilla extract together in a bowl; pour milk mixture over bread into the baking dish and move bread as necessary to ensure all bread is absorbing liquid. Sprinkle cinnamon over the top. Cover the dish with plastic wrap and refrigerate, 8 hours to overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Remove and discard plastic wrap from baking dish and sprinkle remaining brown sugar over the top of the bread mixture.
  • Bake in the preheated oven until browned and bubbling, about 30 minutes.

4 tablespoons salted butter, softened, divided
6 slices white sandwich bread, crusts removed
1 cup grated Swiss cheese
2 green onions, chopped
2 tablespoons chopped fresh parsley
½ pound cooked small shrimp
1 ½ cups 2% milk
½ cup low-fat sour cream
3 large eggs
½ teaspoon Dijon mustard
½ teaspoon salt

Steps:

  • Butter an 8x8-inch casserole dish.
  • Use remaining butter to lightly butter bread. Cut each slice in half diagonally. Arrange 1/2 of the bread in the prepared dish. Sprinkle with half of the Swiss cheese, 1/2 of the green onions, 1/2 of the parsley, and 1/2 of the shrimp, in that order. Top with remaining bread and sprinkle with remaining cheese, onions, parsley, and shrimp.
  • Beat milk, sour cream, eggs, Dijon mustard, and salt together in a bowl. Pour over casserole, cover, and refrigerate for 8 hours, to overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake casserole in the preheated oven until puffed and golden, 30 to 40 minutes. Let sit for 5 minutes. Cut into squares and serve.

12 to 16 ounces breakfast sausage (see note)
1 cup small diced bell peppers (any color)
1/2 cup small diced onion
6 large eggs (see note)
1 cup milk
1/2 cup sour cream
1/2 teaspoon salt
Pinch of black pepper
24 ounces (about 6 cups) frozen tater tots
1 cup grated cheddar cheese
1 cup grated Monterey Jack cheese
Chopped green onion or chives (for garnish (optional))
Sour cream and salsa (for serving (optional))

Steps:

  • In a large skillet over medium heat, cook the sausage, peppers and onions, crumbling the sausage into small pieces as it cooks, until it is no longer pink and cooked through and the veggies are tender. Drain the grease (you can let the sausage/veggies hang out in the skillet for a minute or remove them to a plate).
  • In a medium bowl, whisk together the eggs, milk, sour cream, salt and pepper until smooth.
  • Lightly grease a 9X13-inch baking pan. Place the tater tots in a single layer across the bottom of the pan. (Use only as many tater tots as will fit in a single layer).
  • Sprinkle sausage over the tater tots followed by the veggies. Sprinkle cheese evenly across the top.
  • Pour the egg mixture evenly over and across the top. Cover the dish with lightly greased foil and refrigerate (overnight, up to 18 hours). OR you can bake it right away. The tater tots won't break down quite as much, but it is still delicious.
  • Preheat the oven to 350 degrees F. Bake covered for 25 minutes. Uncover and bake 20-25 minutes longer until golden, bubbly, and set. Sprinkle with green onions or chives, if using. Serve warm.

This Vegetarian Breakfast Casserole is loaded with vegetables, eggs and cheese for a delicious brunch. Prepare this make ahead meatless breakfast casserole the night before.

1 medium onion (- diced)
1 medium green pepper (- diced)
1 medium red pepper (- diced)
7 ounces white mushrooms (- chopped into at least 1-cm pieces)
1 cup lacinato kale ribbons
9 large eggs
2 cups milk
1/2 teaspoon sea salt salt
1/2 teaspoon ground black pepper
2 cups big croutons
1 1/2 cups shredded cheddar cheese ((I use a mix of cheddar and mozzarella))

Steps:

  • Sauté the onions, bell peppers and mushrooms in a large skillet on medium-high heat for about 6 minutes, until they start to soften and most of the water has cooked away. Stir in the kale and remove from heat.
  • Whisk the eggs, milk, salt and ground black pepper together in a large bowl. Set aside.
  • Lightly oil a 9x13 baking dish. Layer the croutons evenly on the bottom. Layer the vegetable mix on top of the croutons. Evenly layer the grated cheese on top of the vegetable mix. Gently pour the egg mixture on top. Cover and let it sit in the refrigerator overnight, at least 8 hours.
  • In the morning, preheat the oven to 325°/160°C. Place the casserole in the middle of the oven. Bake for 30 minutes. Turn the heat up to 350°C/176°C. Bake for an additional 20-30 minutes, until the egg is set. To check, insert a knife in the middle of the casserole and it should come out clean. If the casserole is browning too quickly, cover with a foil for the last bit of baking time.
  • Let the casserole sit for 5 minutes before cutting and serving.

1 (32-ounce) bag of frozen tater tots
1 pound diced ham
1/2 cup bacon bits
1 1/2 cups, plus 1/2 cup cheddar cheese (shredded)
8 eggs
1 (10.5-ounce) can of cream of mushroom condensed soup
1 cup of milk
1/3 cup sour cream
1 teaspoon ground black pepper
1 teaspoon season salt
1 teaspoon onion powder
2 teaspoons hot sauce
1 red bell pepper (diced)
1 green bell pepper (diced)

Steps:

  • Preheat the oven to 375 F. Grease a 9 x 13-inch casserole dish with cooking spray.
  • Spread the tater tots, bacon, ham, and 1 1/2 cups of cheddar cheese into the casserole dish. Toss gently with your hands or a large spoon so that all of the bacon, cheese, and ham is evenly dispersed among the tater tots.
  • In a medium-sized bowl, whisk together the eggs, cream of mushroom soup, milk, sour cream, pepper, salt, onion powder, and hot sauce.
  • Pour the egg mixture evenly over the top of the tater tot mixture. Cover with aluminum foil and place in the oven. Bake for 45 to 50 minutes or until the eggs are almost completely set.
  • Remove the aluminum foil. Top the casserole with the remaining 1/2 cup of cheddar cheese and evenly distribute the red and green bell peppers.
  • Turn the heat of the oven up to 425 F and cook for 20 more minutes, or until the cheese is melted, the eggs are completely set, and the edges have browned.
  • Serve with a nice slice of toast and some fruit for a beautiful and complete breakfast!
