Freezer Breakfast Sandwiches made with baked eggs and topped with cheese, sausage, bacon, or ham on an English muffin. These make-ahead breakfast sandwiches are easy and delicious.

12 eggs
2 Tablespoons milk
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
12 slices cooked bacon, sausage patties, ham, or canadian bacon
12 English muffins
12 slices cheddar cheese (, or your favorite cheese)

Steps:

  • Preheat the oven to 325 degrees. Generously grease a 9x13'' pan
  • Whisk the eggs, milk, salt and pepper. (I use an electric mixer to make it easier).
  • Pour the egg mixture into the greased pan and bake for 18-22 minutes, or just until the center is set. Don't over-cook.
  • Remove from oven and allow to cool before cutting into 12 squares.
  • Top each English muffin half with egg, cheese, meat, and the other half of the muffin. If you are consuming right away, heat the sandwiches at 350 degrees for about 5 minutes or until the cheese melts.

Steps:

  • In a large nonstick skillet, melt butter. Beat the eggs, chives, water, salt and pepper; pour into skillet. Cook and stir gently until eggs are set. , Top each muffin half with eggs, bacon, tomato and cheese. Place on a baking sheet. Broil 2-3 in. from the heat for 1-2 minutes or until cheese is melted. Garnish with chives if desired.

1 tablespoon olive oil
4 large eggs, lightly beaten
1/4 cup half and half
Kosher salt and freshly ground black pepper, to taste
8 mini croissants, halved horizontally
4 ounces thinly sliced ham
4 slices cheddar cheese, halved

Steps:

  • Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside. Fill croissants with eggs, ham and cheese to make 8 sandwiches. Wrap tightly in plastic wrap and place in the freezer. To reheat, remove plastic wrap from the frozen sandwich and wrap in a paper towel. Place into microwave for 1-2 minutes, or until heated through completely. Serve immediately.

Salted butter, at room temperature, for the pan and/or spreading, optional
10 large eggs
1/2 cup whole milk
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
8 ounces cremini mushrooms, sliced
3 cups stemmed spinach
6 slices Swiss cheese (about 6 ounces)
6 English muffins, split

Steps:

  • Preheat the oven to 375 degrees. Spray a 9-by-13-inch baking pan with nonstick cooking spray or grease with butter.
  • Heat 1 tablespoon of the olive oil over medium-high heat. Add the mushrooms and cook, stirring occasionally, until wilted and beginning to brown; about 5 minutes. Whisk eggs, milk, and seasonings (I do 1/4 tsp each salt, pepper and garlic powder) in a bowl and then pour into the baking dish. Cook for 20-25 minutes, until eggs are fully cooked and the center is no longer jiggly. Cut into 6 equal slices, and set aside to cool.
  • While the eggs are cooking, make the bacon on the stovetop (or your preferred method). Heat a deep skillet or Dutch oven over medium heat. When hot, add strips of bacon. Using tongs, flip after a couple minutes, let them cook through to your desired crispness, and then place on a plate lined with paper towels. Repeat with remaining bacon. TIP: After cooking, fold the bacon into a V shape on the paper towels while hot and pliable (see photo above). The bacon will cool and slightly harden in this shape, and fit perfectly onto your sandwich. Set aside to cool.
  • (optional): Lay the English muffin halves out on a half size baking sheet, cut side facing up. Brush each with melted butter. Place into the 375F oven for 5-7 minutes or until the edges are crispy and golden brown. If toasting at the same time as cooking the eggs, put the eggs on the bottom rack and the muffins on the top rack. Watch closely so they don’t burn.
