SANGRIA BY THE PROS
I found a good sangria recipe and headed to the liquor store to purchase the alcohol. In line, ahead of me, was a man who said he has been a bartender for twenty years now, and that the recipe needed a few touch-ups if I wanted to make it like the Pros. So, here is what he professed to me, muchos thanks to the other submitters for their delicious versions.

Steps:
- Slice the orange, lemon, and lime into thin rounds. Place the citrus in a pitcher with the apples, cherries, and pineapple. Pour in the brandy and refrigerate for 2 hours of more. Chill the bottle of red wine, lemon-lime soda, and orange juice at the same time.
- Gently crush the fruits with a spoon, then stir in the red wine, lemon-lime soda, and orange juice. Add additional brandy or orange juice to taste.

MAJORCA SANGRIA (THE REAL DEAL)
From CULINARIA SPAIN & recipe editor Ingeborg Pils comes this recipe straight from Majorca, known as Spain's *Island of Wine* for its long tradition of excellence. Altho the vineyards are sml by modern stds & produce 1.5 mil liters for export, demand for the wine is so great on the island that very little wine is actually exported. This recipe was described as authentic, but strangely did not suggest a particular red wine. Since I do not feel qualified to choose for you, I will leave that to your best judgment. (Time *does* include time for fruits to sit in the sugar) *Enjoy*

Steps:
- Using a sharp knife, cut away the rind from the orange & lemon in a spiral motion. Remove the pith from both fruits & slice the flesh.
- Peel peaches, halve them, remove the pits & cut the flesh into pieces.
- Place the fruit in a lrg glass pitcher, sprinkle w/the sugar & allow mixture to sit for 10-15 minutes in the refrigerator.
- Add red wine, brandy + mineral water, stir gently to mix well & serve immediately.
- NOTE: The recipe emphasized strongly that all ingredients should be well-chilled & sangria should *ALWAYS* be served *ICY COLD* !

GAME DAY SANGRIA
This very refreshing and light sangria is perfect for hot game days. I use 'Real Sangria' from the wine section at the local grocer. It's a dark bottle with an orange label.

Steps:
- Juice all but one of the oranges and limes.
- Mix juice, wine, triple sec and apricot brandy in a pitcher.
- Slice remaining orange and lime into thin slices and drop into pitcher.
- Put ice into red wine glass or brandy snifter.
- Pour glass 2/3 full of sangria and top remaining 1/3 of glass with club soda.
- Stir and enjoy!
