Cobblers are an easy way to get a "pretend pie". They are easy to make and soooo good. It makes a dinner end with a real treat. You can make them with the wild blueberries which have tons of flavor, or you can use the frozen ones. This may be doubled and put in a 9"x13" baking dish.

4 cups blueberries (fresh or frozen)
1/2 cup sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 1/2 cups flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon baking soda (scant)
4 1/2 tablespoons cold butter
3/4 cup buttermilk, plus 1 tablespoon

Steps:

  • BLUEBERRIES:.
  • In a large bowl combine all the ingredients.
  • Put into a 2 quart baking dish which has been sprayed with cooking spray.
  • Bake at 375 degrees for 10 minutes while you make the Cobbler.
  • COBBLER:.
  • In a small bowl combine the first five ingredients; mix well.
  • Cut in the cold butter till mixture resembles coarse crumbs.
  • Stir in the buttermilk just till moistened.
  • Drop by tablespoons onto blueberry mixture.
  • Sprinkle some sugar over the top of the dough.
  • Bake uncovered at 375 degrees for about 25-30 minutes or till golden.
  • Serve warm with vanilla ice cream or whipped cream.

Of coarse you can substitute regular blueberries for this recipe. This makes a large amount of cobbler, serve warm with vanilla ice cream!

8 cups wild blueberries
1 orange, zest of
1 orange, juice of
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon cinnamon (can use more)
1/4 teaspoon ginger powder (optional)
3 cups flour
3/4 teaspoon salt
1 tablespoon baking powder
3/4 teaspoon baking soda
3 tablespoons sugar
5 tablespoons cold butter (cut into small pieces)
3 tablespoons cold Crisco shortening
1 1/2 cups buttermilk
1/4 cup sugar
1/2 teaspoon cinnamon
vanilla ice cream

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a large bowl combine blueberries, orange zest, the juice of one orange, 3/4 cup sugar, cornstarch, cinnamon and ginger (if using) toss to combine.
  • Pour the mixture into the prepared baking dish.
  • Place the dish on a baking sheet to catch and spills.
  • Bake for 20 minutes.
  • While the blueberries are baking, prepare the cobbler topping.
  • In a small bowl mix together 1/4 cup sugar with 1/2 teaspoon cinnamon; set aside.
  • In a food processor combine flour, salt, baking powder, baking soda and 3 tablespoons sugar; pulse to combine.
  • Add in the cold butter and cold shortening; pulse to combine until the mixture forms crumbs; dump the mixture into a bowl.
  • Add in the buttermilk; mix JUST until combined.
  • When the blueberry mixture is cooked for 20 minutes, remove and sprinkle about 4-inch portions of the cobbler over the berry mixture.
  • Sprinkle 1/4 cup sugar/cinnamon mixture over the cobbler dough.
  • Return to the oven to bake for about 30 minutes, or until the dough is golden brown and the top is baked.

Old-fashioned and delectable, this easily made dessert is memorable! Top with vanilla ice cream, yogurt, or whipped cream.

butter, to grease pan
2 pints blueberries or mixed berries, rinsed and picked over or 2 (14-ounce) bags frozen blueberries not defrosted
Grated zest of 1 lemon
1 (13-ounce) jar Stonewall Kitchen Wild Maine Blueberry Jam
1/2 teaspoon cinnamon
2 cups unbleached all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, chilled and cut into pieces
1/2 cup half and half or light cream

Steps:

  • Preheat oven to 425 degrees F. Butter a 2- to 3-quart heavy baking dish.
  • Gently stir blueberries, lemon zest, Wild Maine Blueberry Jam, and cinnamon together in a bowl, then pour into prepared dish.
  • Combine flour, 1 tablespoon of the sugar, baking powder, and salt in a food processor and process briefly to blend. Add butter and pulse until mixture resembles coarse meal. Pour in half-and-half and pulse just until dough begins to pull together.
  • Remove dough from processor and knead briefly to form a ball, adding more flour if dough is sticky. Break pieces of dough from ball and cover berries with slightly flattened pieces of dough in a "cobbled" irregular pattern. Sprinkle on remaining 2 tablespoons of sugar.
  • Bake until crust is lightly browned and berries are hot, 25 to 30 minutes. Remove from oven and let stand for at least 15 minutes before serving. Serve with sweetened whipped cream, vanilla ice cream or yogurt.
