- Flatten chicken to 1/4-in. thickness; top each with a slice of ham and cheese. Roll up and tuck in ends; secure with toothpicks. , In a shallow bowl, combine the flour, salt, paprika and pepper. In another bowl, whisk egg and milk. Place bread crumbs in a third bowl. Dip chicken in flour mixture, then egg mixture; roll in crumbs., In a small skillet, brown chicken in oil on all sides. Transfer to an 8-in. square baking dish coated with cooking spray. , Bake, uncovered, at 350° until a thermometer reads 170°, for 20-25 minutes. Discard toothpicks; drizzle with butter.

- Combine all ingredients for BBQ sauce in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat and simmer for 5 minutes, stirring frequently. Remove from heat.
- Season chicken with BBQ seasoning on both sides. Prepare grill and cook chicken until almost done.
- During last few minutes of cooking, baste chicken on both sides with BBQ sauce.

- Preheat your oven to 350*F. Place the coconut oil in the bottom of a 9 x 13 baking dish and evenly distribute the oil over the bottom of the dish. In a medium bowl, add the beaten eggs. Set aside.
- In a large ziploc bag, combine the cornstarch, onion powder, 1/2 tablespoon garlic powder, salt and pepper and mix well. In another large ziploc bag, pour in the rice flour. Set these two bags aside.
- Dip the cubed chicken pieces into the egg and allow the excess to drip off. Then place the chicken pieces into the bag with the rice flour, zip the bag up tightly, shake the contents until evenly covered in the flour and then remove and place the pieces inside the bag with the cornstarch mixture and do the same shaking technique as before.
- Place the coated chicken pieces into the baking dish and bake for 45 minutes, stirring every 15 minutes to allow the chicken to cook and crisp evenly.
- While the chicken is baking, combine the BBQ sauce, honey, mustards, and vinegar together in a medium bowl.
- Once the 45 minutes is up, pour the sauce overtop the chicken and stir to make sure that the chicken pieces are entirely covered in the sauce.
- Cook for another 10-20 minutes (stir after 10 minutes) or until the chicken is fully cooked and the sauce starts to thicken and turn into a glaze. Remove from oven and serve while still warm. The sauce will thicken slightly more while cooling.

Steps:
- 1. Rinse beans and pick over to make sure there are no stones. Place in large bowl and cover with water (at least 1" above beans). Let sit overnight.
- 2. In morning, parboil the beans until the skins crack when blown upon (maybe 10-15 minutes).
- 3. Cut onion into quarters and place in bottom of bean pot or a 4 quart casserole. Drain beans and pour over onion. Slice salt pork and lay on top of beans.
- 4. Mix sugar, molasses, mustard, pepper and salt with 2 cups of boiling water. Pour over pork and beans. If necessary, add more boiling water until beans are covered.
- 5. Bake, covered at 300 deg F for 6 hours, adding more boiling water as the beans cook (if necessary.
- 6. Serve with steamed brown bread or corn bread. NOTE: Beans can be cooked in crockpot but will be a bit more soupy. Not a bad thing. Just different. BEANS: Jacob's cattle beans are the best and I usually order 10# at a time online. They're worth it. May also use kidney beans, red beans or navy beans (my least favorite).
