This recipe comes from Maine and is EXCELLENT! These cakes are so yummy they almost melt in your mouth! They're great served with a seafood pasta salad, boiled potatoes, or fresh steamed veggies.

1 pound crabmeat
½ cup dry bread crumbs
1 egg, beaten
1 tablespoon mayonnaise
1 teaspoon prepared Dijon-style mustard
1 teaspoon Worcestershire sauce
1 tablespoon Old Bay Seasoning TM
2 tablespoons butter

Steps:

  • In a medium size bowl, combine the bread crumbs and the crab meat. Stir the beaten egg, mayonnaise, mustard, Worcestershire and Old Bay Seasoning. Lightly mix these ingredients being careful not to overwork the crab meat. Form into 8 round, flat crab cakes.
  • Heat butter in a skillet over medium heat. Fry the cakes on each side until crusty and golden brown. Serve warm.

3 spring onions
½ a bunch of fresh flat-leaf parsley
1 large free-range egg
750 g cooked crabmeat, from sustainable sources
300 g mashed potatoes
1 teaspoon ground white pepper
1 teaspoon cayenne pepper
plain flour, for dusting
olive oil
watercress
tartare sauce

Steps:

  • Trim and finely chop the spring onions, and pick and finely chop the parsley. Beat the egg.
  • Combine the crabmeat, potatoes, spring onion, parsley, white pepper, cayenne and egg in a bowl with a little sea salt.
  • Refrigerate for 30 minutes, then shape into 6cm cakes.
  • Dust with flour and shallow-fry in oil over a medium heat for about 5 minutes each side or until golden-brown.
  • Serve with pinches of watercress and a dollop of tartare sauce.

He says in its introduction: "These are loaded with crab, and even in a state that is famous for this dish, people come to Gardiner to track them down." I haven't tried this yet, although I am planning a trip up the road to Gardiner soon! :)

1 1/2 lbs fresh crabmeat, picked over for shells
1 1/2 cups fresh corn or 1 1/2 cups frozen corn, thawed
3/4 cup red bell pepper, diced
3/4 cup celery, chopped
3/4 cup yellow onion, finely chopped
1 1/2 cups mayonnaise
3/4 teaspoon dry mustard
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 large egg, lightly beaten
2 1/2 cups saltine crumbs, divided
2 tablespoons unsalted butter, plus more as needed

Steps:

  • In a medium bowl, mix together crabmeat, corn, bell pepper, celery, onion, mayonnaise, and mustard. Season with salt and pepper.
  • Gently fold in the beaten egg and 1 ½ cups of the cracker crumbs, taking care not to overwork the mixture.
  • Place remaining 1 cup crumbs on plate or shallow bowl.
  • Form crab mixture into 3-ounce patties, about 3-inches in diameter. Dip both sides of each patty into cracker crumbs, pressing gently to adhere crumbs.
  • Heat a large skillet over medium high heat and melt the butter. Cook crab cakes until golden brown, about 6 minutes per side.
  • Serve.

These little hummers come together quickly and are sooo good. I like to chill the crab cakes for about 15-20 minutes before cooking. I'm partial to Maine crab 'cause it's in my backyard and really sweet. If using other type of crab, don't use the expensive claw meat. The less expensive crab (body and knuckle mixture) binds together better.

12 ounces fresh picked crabmeat
1/2 cup breadcrumbs
2 large eggs (beaten)
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Italian parsley (chopped)
1/2 teaspoon thyme
1/8 teaspoon cayenne pepper
2 tablespoons butter
4 scallions (thinly sliced)

Steps:

  • Combine all ingredients except scallions.
  • Mix well.
  • Add sliced scallions and mix.
  • Form into eight 2-inch crab cakes.
  • In a 10-inch skillet, melt butter over medium-high heat until melted.
  • Add crab cakes.
  • Cook the crab cakes for 3 to 4 minutes on each side or until golden brown.
  • Drain on paper toweling.

1 tablespoon Sesame Oil
2 Shallots (minced)
1 rib Celery (diced small)
1 small Red Pepper (seeded and diced small)
1 bunch Scallions (minced)
1/4 cup fresh Parsley (minced)
2 tablespoons Butter
4 ounces Ritz Cracker Crumbs
1 tablespoon Ginger (minced)
2 tablespoons Green Tabasco
2 teaspoons Salt
1 teaspoon freshly ground Black Pepper (to taste)
1 tablespoon Old Bay Seasoning
3 tablespoons freshly squeezed Lemon Juice
2 teaspoons Paprika
6 ounces fresh or canned lump Maine Crab Meat (picked over)
3 cups Panko Breadcrumbs
Butter (to pan sear the crab cakes)
Village Tavern Summer Vegetable Slaw (Recipe below), to top
Village Tavern Sweet Chili Ginger Remoulade Sauce (Recipe below), to top

Steps:

  • Prepare Village Tavern Summer Vegetable Slaw and Village Tavern Sweet Chili Ginger Remoulade according to recipes below. Store, covered, in the refrigerator, until ready to use. These can be made a few hours in advance.
  • Preheat oven to 350°F.
  • Add sesame oil to a large skillet. Place on stovetop over medium high heat.
  • When oil is hot, add shallots, celery and red pepper. Sauté until tender.
  • Add scallions, parsley, 2 tablespoons butter, Ritz crumbs, ginger, green Tabasco, salt, black pepper, Old Bay Seasoning, lemon juice and paprika and remove from heat. Allow to cool enough to handle.
  • Place mixture in a large bowl.
  • Add in the crab meat and mix well.
  • Remove about 1/2 to 3/4 cup crab meat and form into a cake about 2 inches in diameter. Place on a wax paper-covered plate. Repeat until all crab mixture is used.
  • Pour panko breadcrumbs into a medium bowl.
  • Place a crab cake into panko and turn to coat all sides well.
  • Heat a small bit of butter over medium high heat in a large skillet (use the same one as before, wiped clean, if you like).
  • Place cakes in 2 or 3 at a time, and pan sear until golden brown on both sides. Remove to a foil-covered baking sheet. Continue until all cakes are browned.
  • Place cooking sheet into preheated oven. Bake about 4 minutes, until cakes are cooked through.
  • Spoon some Village Tavern Sweet Chili Ginger Remoulade Sauce onto a serving plate. Place a 1 or 2 crab cakes onto sauce. Top with Village Tavern Summer Vegetable Slaw.
  • Serve hot.
