Steps:
- Preheat oven to 350 degrees.
- Lightly grease and flour a 9 inch spring form pan.
- In a medium bowl whisk together 1 cup flour with baking powder and salt, set aside.
- In a large bowl beat the butter and 1 cup sugar until light and fluffy (medium speed).
- Add vanilla and eggs, one at a time and beat until blended.
- Reduce mixer to low and slowly add flour mixture and beat until just incorporated.
- Pour batter into prepared pan and spread evenly.
- In a medium bowl toss the blueberries with the lemon juice and the remaining sugar and flour.
- Spoon blueberries evenly over the batter (do not press down).
- Bake on the middle rack of the preheated oven until a tester inseted in the center comes out clean, about 1 hour.
- Cool on a wire rack, use a knife to loosen cake from sides of pan if necessary.
- Transfer to cake plate.
- Serve warm or cold, if desired sprinkle with confectioners sugar.

- Preheat oven to 400°. Unroll pie crust into a 9-in. cast-iron skillet or deep-dish pie plate; flute edges., In a large bowl, combine the blueberries, sugar, flour, cinnamon and, if desired, thyme and lemon zest; toss gently. Spoon into crust; dot with butter., In a food processor, cover and process cookies until coarsely chopped. Add the oats, brown sugar, butter, flour, salt and cinnamon; process until crumbly. Sprinkle over berry mixture., Bake until crust is golden brown and filling is bubbly, 45-55 minutes. Cover edges with foil during the last 15 minutes if necessary to prevent overbrowning. Cool on a wire rack. If desired, serve with whipped cream.

MAINE BLUEBERRY CAKE
This recipe takes the cake!! I love it for breakfast, lunch and dinner. Best with fresh blueberries, but frozen will do too. Always coat the blueberries in flour before adding them to the mixture. I don't know why, but my mother taught me that.

- Cake.
- Preheat over to 350°.
- Coat a Bundt pan with cooking spray.
- Dust the Pan with 2 Tbsp of granulated sugar.
- Combine flour, baking powder, baking Soda and salt; set aside.
- In a large bowl, beat together sugar, butter and lemon zest until fully incorporated.
- Add eggs, one at a time and beat into mixture after each egg.
- -Add vanilla and sour cream and stir.
- Add dry ingredients and mix until fully combined.
- Fold in blueberries.
- Spoon batter into bundt pan and bake at 350° for 1 hour.
- Cool in pan 15 minutes before removing and then remove cake from pan and cool completely.
- Glaze: In a small bowl, mix powdered sugar and lemon juice.
- Drizzle over cooled cake.

This is a nice tender cake - one of my Mom's specialties from years ago. It is a great cake to take along to a picnic.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
- Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt and vanilla. Separate eggs and reserve the whites. Add egg yolks to the sugar mixture; beat until creamy.
- Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat berries with 1 tablespoon flour and add to batter.
- In a separate bowl, beat whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter. Pour into prepared pan. Sprinkle top with remaining 1 tablespoon sugar.
- Bake for 50 minutes, or until cake tests done.
