MAILAENDERLI
These are sweet Swiss cookies. We usually make them for Weihnachten (Christmas Eve) and top them with sprinkles but they are appropriate year-round.

Steps:
- Whisk the eggs in a large bowl. Blend in sugar and beat until mixture is thick and pale, about 10 minutes. Mix in the melted butter and salt. Gradually fold in the flour and lemon zest. Cover and refrigerate for at least one hour or, preferably, overnight.
- Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheet.
- On a floured surface, roll out dough to 1/4 inch thickness. Cut into desired shapes using cookie cutters. Place cookies on prepared cookie sheet. Brush with beaten egg yolks and decorate with sprinkles.
- Bake in preheated oven until golden at the edges, 15 to 20 minutes. Cool cookies on racks.

- Preheat oven to 325°F
- In a bowl, cream together butter and sugar. Add egg yolks, vanilla, and lemon zest, and mix well. Gradually add flour while stirring. Chill.
- Roll out dough to 1/4-inch thickness, and cut into desired shapes.
- Beat remaining egg, and brush each cookie with the beaten egg. Place cookies on a parchment-lined baking sheet, and bake for 20-24 minutes or until lightly golden.

- Place the butter in a bowl, whisk in the sugar and salt. Add the eggs one at a time and continue to whisk until the mixture becomes lighter in colour. Add the lemon zest and flour, mix into a dough using a wooden spoon, flatten a little. Cover the biscuit dough and chill for at least 2 hrs.
- Remove the dough from the fridge approx. 15 mins. prior to rolling. On a lightly floured surface or between a cut-open plastic bag, roll out the dough in batches to approx. 7 mm thick. Cut out popular shapes (e.g. heart), place the biscuits on two trays lined with baking paper. Chill the biscuits for approx. 15 mins.
- Whisk the egg yolk with the water, glaze the biscuits with the egg wash. Optional: to decorate, gently drag a fork diagonally across the glazed biscuits prior to baking.
- Approx. 10 mins. in the centre of an oven preheated to 200°C. Remove from the oven, leave to cool on a cooling rack.

- In a medium saucepan, combine the honey with the granulated sugar, lemon zest, cinnamon, black pepper, nutmeg, ginger, cloves and white pepper. Cook over low heat, stirring occasionally, until the honey and sugar are melted, about 3 minutes. Remove the pan from the heat and add the candied citrus rind, 1 cup plus 2 tablespoons of the almonds and 3 tablespoons plus 1 teaspoon of the kirsch. Sift the 2 cups plus 2 tablespoons of flour and the baking soda over the mixture and stir to incorporate. Line a baking sheet with plastic wrap. Scrape the dough onto the plastic and flatten into a disk. Wrap and refrigerate until firm, about 2 hours.
- Liberally flour a work surface. Roll out the dough to a 12-inch square about 3/8 inch thick. Line a large cookie sheet with parchment paper and slide the dough onto it. Prick all over with a fork. Scatter the remaining 1/4 cup of almonds on top. Cover with plastic wrap and refrigerate overnight.
- Preheat the oven to 400°. In a small bowl, mix the confectioners' sugar with the water and the remaining 2 teaspoons of kirsch. Bake the cookie square for 14 minutes, or until golden. Immediately brush the glaze on top. Slide the parchment onto a rack and let the cookie cool completely. On a work surface, using a large, sharp knife, trim the edges of the square, then cut it into four 3-inch-wide strips. Cut each strip into 3/4-inch bars.
