THAI ROAST PORK WITH PINEAPPLE



Thai Roast Pork With Pineapple image

This recipe has all the tastes of great Thai food - sweet, sour, spicy or hot and salty flavours. Serve with savoury rice and a simple sauteed green vegetable. Recipe taken from a Homemaker Favourites booklet produced by Homemakers Magazine in Canada

1 pineapple
8 garlic cloves, roughly chopped
1 cup fresh coriander, chopped
1/4 cup rice vinegar
1/4 cup light brown sugar, packed
2 tablespoons soy sauce
2 tablespoons fish sauce
1 tablespoon ground coriander
1 1/2 teaspoons pepper
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg, grated
1 (4 lb) bone-in pork rib roast (about 2 kg)
1/4 teaspoon salt
coriander sprig

Steps:

  • Cut rind from pineapple in wide strips; core and cut pineapple into bite-size pieces. Set aside rind and fruit.
  • In food processor, process garlic and fresh coriander, adding enough of the vinegar to make smooth paste. Mix in sugar, soy sauce, fish sauce, ground coriander, pepper, cumin, cloves, nutmeg and HALF of the cayenne and remaining vinegar.
  • Place pork in roasting pan; cover with spice mixture. Lay pineapple rind (rind side up) over top. Pour 1 cup (250 mL) water into pan; roast in 325°F (160°C) oven for 1-½ hours, adding 1/4 cup (60 mL) water at a time to pan, if necessary, as liquid evaporates.
  • Remove rind; continue to roast pork, basting every 10 minutes with pan juices, until meat thermometer inserted in centre registers 170°F (75°C), 30 to 45 minutes.
  • Transfer to serving platter; surround with pineapple pieces; sprinkle remaining cayenne and salt over pineapple; spoon pan juices over pork. Garnish with coriander stems and leaves, if desired.

This recipe was given to us from a neighbor. He got it from his fave Thai restaurant. I have made it a few times. In a word, it is AWESOME! It is time consuming but well worth it. This make a great appetizer when serving Thai or any Asian cuisine

1 fresh pineapple, slices, cored and cut into large flat triangle shaped pieces
1/3 lb ground pork
2 tablespoons canola oil
1 teaspoon cilantro, minced
1 tablespoon onion, minced
1 teaspoon garlic, minced
1 1/2 tablespoons fish sauce
1 1/2 tablespoons lime juice
1 1/2 tablespoons tamarind juice
1 3/4 tablespoons palm sugar
1 tablespoon crushed peanuts
1/2 bunch cilantro leaf
1 -2 whole red chili pepper, shredded, for garnish

Steps:

  • Heat 2 T oil then stir fry all ingredients in STEP 1, until fragrant.
  • Add pork and stir fry until color changes and pork it cooked through.
  • Add STEP 2 ingredients to above and crushed peanuts; stir to mix.
  • Remove from heat, drain on paper towels, allow to cool completely.
  • Place meat mixture over pineapple pieces; top with whole cilantro leaf and sprinkle with shredded red pepper.
