Steps:
- Preheat oven to 250 degrees F (120 degrees C).
- Mix sugar, cinnamon, and salt together in a bowl.
- Whisk egg white and water together in a separate bowl until frothy. Toss pecans in the egg white mixture. Mix sugar mixture into pecan mixture until pecans are evenly coated. Spread coated pecans onto a baking sheet.
- Bake in the preheated oven, stirring every 15 minutes, until pecans are evenly browned, 1 hour.

Steps:
- Preheat oven to 225.
- Mix water and egg white--whisk.
- Mix with pecans.
- Mix together sugar, cinnamon, and salt.
- Mix with pecans.
- Spread on cookie sheet.
- Bake for 45 minutes at 225 stirring occasionally.
- Increase temp.
- to 275 and continue baking for 15 minutes.
- Cool.
- Enjoy.
- Taste better after a day or so.

- Combine coconut sugar, water, vanilla, and salt in a bowl. Set aside.
- Toast pecans for 2-3 minutes in a saucepan over medium heat, stirring to prevent burning. Stir until you smell a beautiful nutty aroma!
- Quickly drizzle the sugar water mixture into the pan, stirring the nuts to coat. Stir constantly for about 15 seconds and then immediately remove from heat so they don't burn.
- Spread the pecans on a piece of parchment to cool.
