MAGIC BARS

Magic Bars image

These sweet little treats are so easy to make and take just 15 minutes to put together. The graham cracker crumbs and sweetened condensed milk magically come together to make an ooey-gooey bottom layer.

Provided by Food Network Kitchen

Categories     dessert

Time 1h55m

Yield 48 bars

Number Of Ingredients 7

1 stick (8 tablespoons) unsalted butter, melted, plus more for buttering the dish
2 cups graham cracker crumbs
One 14-ounce can sweetened condensed milk
1 cup semisweet chocolate chips
1 cup butterscotch or peanut butter chips
1 cup pecan pieces, roughly chopped
1 cup shredded, sweetened coconut

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • Combine the melted butter and graham cracker crumbs in a small bowl with your hands (the mixture should hold together when squeezed). Pour the mixture into the prepared dish and press it into the bottom in an even layer, using the bottom of a measuring cup to help. Pour the sweetened condensed milk over the crumbs, then sprinkle the chocolate chips, butterscotch chips, pecans and coconut over the milk.
  • Bake until the sides are golden brown and begin to pull away from the dish, 30 to 40 minutes. Let cool completely in the dish. Cut into 48 small pieces (they are rich). The cookies can be refrigerated in an airtight container for up to 3 days.

MAGIC COOKIE BARS RECIPE

Magic Cookie Bars Recipe image

A rich, creamy, crunchy dream dessert made with butterscotch, chocolate, and coconut, topped with pecans and sea salt, all on a graham cracker crust.

Provided by Morgan Baker

Categories     Dessert

Time 1h2m

Number Of Ingredients 9

8 tablespoons unsalted butter, melted and slightly cooled, plus more for greasing
24 graham crackers
2 tablespoons packed light brown sugar
1 14-ounce can sweetened condensed milk
10 ounces chopped dark chocolate
1 cup butterscotch chips
1 ¼ cups chopped pecans
2 cups unsweetened coconut flakes
Flakey salt, for garnish

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Line a 13x9 inch baking dish with parchment paper so the parchment hangs over on the two longest sides. Generously grease with butter.
  • Use a food processor to grind the graham cracker into a semi-fine meal.
  • Add the brown sugar and pulse several times to incorporate.
  • With the processor running, slowly add the 1/2 cup butter until well combined.
  • Add the graham cracker mixture to the prepared pan, pressing firmly to create an even crust on the bottom.
  • Pour the sweetened condensed milk over the crust and smooth in an even layer with a silicone spatula.
  • Sprinkle half of the chopped chocolate, half of the butterscotch chips, and half the pecans evenly over the condensed milk.
  • Sprinkle the coconut flakes over the mixture in an even layer.
  • Sprinkle the remaining chocolate, butterscotch, and nuts evenly over the coconut.
  • Sprinkle the flaky sea salt evenly over the mixture.
  • Bake for 28 to 32 minutes, or until the toppings are slightly golden brown.
  • Remove from the oven and cool on a wire rack, about 15 minutes.
  • Use the excess parchment to lift the bars from the baking dish. Cut into equal size pieces, 12 to 24 bars, depending upon preference, and serve.

  • While oven is preheating, begin making sweetened condensed milk, as this takes the most time. Add all ingredients into a saucepan, and bring to a gentle boil. Immediately reduce to low heat, and allow to simmer, stirring every 5 minutes until mixture has thickened, and reduced to about half its original size (this takes mine 40-60 min.).

  • Combine crust ingredients and press into the bottom of a 8×8 baking dish. Bake at 350 for 12 min. or until golden brown.
  • Meanwhile, make the sugar free condensed milk. Bring the heavy cream, 2 tablespoons butter, and sweetener to a gentle boil and cook stirring frequently until it is light golden brown and thick enough to coat the back of a spoon.
  • Remove from the heat. Either cool until room temperature before stirring in the egg yolk OR, if you are impatient like me, very slowly pour the liquid over the egg yolk while whisking like crazy. (No one wants scrambled yolk in their magic cookie bars).
  • Now it is time to assemble. Sprinkle coconut, chocolate chips, and walnuts onto the crust. Drizzle condensed milk over the top. Bake at 350 for 20-25 min. until set and golden brown. Cool completely and chill in the fridge before serving or the crust can crumble.

  • In a large bowl using handheld or stand mixer, cream the butter and brown sugar together on medium speed. Beat for about 2 minutes until smooth and combined. Add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed.
  • Add the flour, graham cracker crumbs, baking powder, and salt. With the mixer running on low, slowly mix until combined, then beat in the butterscotch chips. Press graham cracker dough into the prepared baking pan and bake for 5 minutes. Remove from the oven and layer with chocolate chips, coconut, and pecans. Drizzle sweetened condensed milk evenly on top. (Remember, not the full can. 8 ounces is a little more than 1/2 of a 14 ounce standard can.) I sprinkled a couple more butterscotch chips on top, but that’s optional.
  • Bake the bars until set, about 30 minutes. I loosely covered the pan with aluminum foil halfway through baking to prevent browning. Make sure you rotate the pan a couple times during the bake time as well. Allow to cool for 30 minutes at room temperature and then stick in the refrigerator to cool all the way through. Once the bottom of the pan is cold, you may cut the bars into squares.
