Our favorite meatloaf recipe does great in the slow cooker. Made with familiar flavorings that have stood the test of time, this meatloaf is as classic as it gets. And it's about as easy as it gets, too-just toss together the ingredients, set your loaf in a foil-lined slow cooker and forget it! Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.

Old-fashioned meatloaf made with saltine crackers cooked in the slow cooker.

3 large eggs
1 cup diced white onion
1 cup diced red or green bell pepper
1/3 cup ketchup
1/4 cup milk
1/2 tsp. onion powder
1 tsp. salt
1/2 tsp. pepper
25 saltine crackers
2 lbs. 7% - 10% fat ground beef
1 cup ketchup
1 Tbsp. brown sugar
1 tsp. mustard
1 tsp. worcestershire sauce ((optional))

Steps:

  • In a large bowl, add the eggs ,onion, bell pepper, ketchup, milk, onion powder, salt, and pepper. Crush the saltine crackers in next, and mix this all together with clean hands. Add the meat next, only mixing everything until it just comes together.
  • Spray a 6-quart slow cooker with non-stick spray, and shape the meat into a loaf on the bottom of the slow cooker. Your meatloaf should hold into a loaf form without falling apart. Add more crushed saltines if the mixture seems too wet.
  • Cover, and cook on LOW for 5-6 hours, without opening the lid during cooking time.
  • Scoop out the fat with a spoon, discard.
  • Mix together the sauce ingredients, and spoon over meatloaf.
  • Cover and cook for 30 more minutes on LOW if you want the sauce heated. Serve and enjoy!

1/2 cup tomato sauce
2 large eggs, lightly beaten
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1 small onion, chopped
1/3 cup crushed saltines (about 10 crackers)
3/4 teaspoon minced garlic
1/4 teaspoon seasoned salt
1/8 teaspoon seasoned pepper
1-1/2 pounds lean ground beef (90% lean)
1/2 pound reduced-fat bulk pork sausage
SAUCE:
1/2 cup ketchup
3 tablespoons brown sugar
3/4 teaspoon ground mustard
1/4 teaspoon ground nutmeg

Steps:

  • Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

2 lb hamburger
1/2 c chopped green pepper
1/2 c chopped onions
1 c milk mixed with 1 packet gravy mix or (8 oz ) tomato sauce
1 large egg
1 1/2 tsp salt
1 c cracker crumbs
6-8 medium potatoes, cut up

Steps:

  • 1. mix together all ingredients except potatoes. use either the mix/gravy mixture or to tomato sauce, not both.
  • 2. shape into loaf and place in the slow cooker with potatoes around the sides.
  • 3. cook on low 8-1o hours. you can put half of the tomato sauce into the meatloaf , pour the rest over the meatloaf.

  • In a medium bowl, mix together ground beef, green pepper, onion, eggs, salt, cracker crumbs, and 3/4 cups of the ketchup. Use a spoon or your hands to incorporate the mixture. Line your slow cooker with aluminum foil and spray with non-stick spray. Shape the meat mixture into a loaf and place in slow cooker. Cook on LOW for 6-8 hours or HIGH for 3-4, until the meat is no longer pink. In the last 15 minutes, mix together remaining ketchup, mustard and brown sugar and spread on top meatloaf. Let cook for remaining 15 minutes. Let cool, slice and serve. Notes Variation: Instead of 3/4 cups ketchup in the meatloaf, you can use 8 ounces tomato sauce. For a different flavor, you can also use 1 cup milk mixed with 1 packet gravy mix.

  • Reserve 2 T. ketchup.

  • Top with remaining ketchup.

  • Remove the parsley stems and chop the leaves (this will make around 2 tbsp of freshly chopped parsley), finely grate the raw onion and mince the garlic cloves. This can be done quickly in a mini food processor.
  • Add the parsley, onion, breadcrumbs and garlic to a large mixing bowl and combine with the dry herbs, spices (chilli and paprika), salt and pepper. Stir everything through and then add the pork and beef mince. In a separate bowl mix the ingredients for the glaze, and set aside.
  • Warm the milk in a jug and crumble in the beef stock cube, stir well until dissolved. Add to the meat and herbs along with the beaten eggs. Mix everything together well - it's easiest (and most fun!) to do this with your hands. The mixture will now be moist and holding together, and will look like sausage meat ready to be shaped into meatloaf.
  • Take a piece of foil approx 50 x 30 cm (20 x 12 inches) and place the meatloaf mixture in the centre. Shape the mixture into a loaf with your hands ensuring the length will fit into your slow cooker. Press the edges firmly to compact the loaf and close any cracks in the edges, then cover the top of the meatloaf generously in glaze mixture. Wrap the meatloaf tightly in the sheet of foil, folding the ends (rather than twisting) to ensure they don't rip. Pierce each end with a skewer to allow juices to drain.
