MAGIC COOKIE BARS (HELLO DOLLIES) RECIPE - (4.4/5)

Magic Cookie Bars (Hello Dollies) Recipe - (4.4/5) image

Provided by Foodiewife

Number Of Ingredients 7

1/2 cup butter, melted, 1 stick
1 1/2 cups graham cracker crumbs
1 (14-ounce) can Sweetened Condensed Milk
2 cups semisweet chocolate morsels
1 1/3 cups flaked coconut
1 cup chopped nuts (I used walnuts)
NOTE: You can use butterscotch morsels for a different twist

Steps:

  • Heat oven to 350°F (325°F for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray, or make a parchment paper "sling"* . Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. NOTE: An offset spatula makes this easy to do. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork (I use the palm of my hand). Bake 25 minutes or until lightly browned. Cool.* Cut into bars or diamonds. Store covered at room temperature. I like to make a "sling" by layering two pieces of parchment paper, which has been lightly sprayed. This helps the parchment paper to "stick" to the pan. I also leave a couple of inches of overhang. That way, it's easy to lift the baked cookie out of the pan to cool on a rack. That way I can easily cut the bars with a long knife or a bench scraper.

  • 2. Bake for 30 minutes. Take out of oven, and cool in the pan on a wire rack..10-15 minutes. Then lift parchment up from the pan and cut cookies into bars.
  • 3. NOW the fun part! Put on a sparkly dress, a feather in your hair... then playing the part...and singing, "HELLO DOLLY,..WELL HELLO DOLLY"! as you dance over to your neighbors home, with a lovely plate of DOLLIES!
  • 4. ***NOTE: After assembling all the ingredients,to bake these bars...I tripped on my dogs leach, and fell prone face down on the floor, right on the left side of my face. Fracturing the left 5th meta-carpal bone in my left hand, while trying to stop my fall. I ended up at Urgent Care, with a black and blue face, a blackand bruised eye, and a wrist& hand brace for 3-4 weeks. This morning I am swollen and can't use my left hand. Fingers are sore and stiff. Typing with only my right hand goes very slow. Bottom line is...I could not bake the coookie bars as planned. So the cooked cookie bar foto is from Hotti Biscotti. I am blessed..it could have been ..very tragic. Thank you GOD! For all blessings. Even for my friend Ellie being here,(to give me a perm). She helped me up then drove me for treatment and x-rays. • Crush the graham crackers in a large food storage bag. This can be done by hand or with a rolling pin, just be careful not to puncture the bag. Or you can use graham cracker crumbs if your store carries them. Measure out 2 cups of the crumbs and pour them into the 9” x 13” glass baking dish.

  • Preheat oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper, leaving enough overhang on the sides. Set aside.
  • In a large bowl using handheld or stand mixer, cream the butter and brown sugar together on medium speed. Beat for about 2 minutes until smooth and combined. Add the vanilla extract and egg, beating until combined. Scrape the sides of the bowl down as needed.
  • Add the flour, graham cracker crumbs, baking powder, and salt. With the mixer running on low, slowly mix until combined, then beat in the butterscotch chips. Press graham cracker dough into the prepared baking pan and bake for 5 minutes. Remove from the oven and layer with chocolate chips, coconut, and pecans. Drizzle sweetened condensed milk evenly on top. (Remember, not the full can. 8 ounces is a little more than 1/2 of a 14 ounce standard can.) I sprinkled a couple more butterscotch chips on top, but that’s optional.
  • Bake the bars until set, about 30 minutes. I loosely covered the pan with aluminum foil halfway through baking to prevent browning. Make sure you rotate the pan a couple times during the bake time as well. Allow to cool for 30 minutes at room temperature and then stick in the refrigerator to cool all the way through. Once the bottom of the pan is cold, you may cut the bars into squares.

  • Make the coconut milk sweetened condensed milk by placing the coconut milk, maple syrup, and salt in a small saucepan over medium heat. Bring to a simmer and cook for 25-30 minutes, stirring occasionally until the mixture has reduced to 1 cup of liquid. The milk may splatter when it starts to boil, so just stir it and lower the heat slightly. Check how much liquid you have by pouring it into a glass measuring cup.
  • While the coconut milk reduces, make the cookie crust. Place the hazelnut flour, coconut flour, salt, and baking soda in the bowl of a food processor. Pulse to combine. Add the coconut oil, maple syrup, egg and vanilla and process until smooth. Press the dough into the prepared pan in an even layer. Bake for 15 minutes, until set.
  • When the crust is done pre-baking, remove it from the oven and top it with 1 cup of chocolate chips. Press the chocolate chips into the crust slightly. Top with the chopped pecans and shredded coconut. Pour the reduced coconut milk mixture over everything. Sprinkle the remaining 1/4 cup chocolate chips and a little more coconut over the top. Bake for 25 minutes.
