CHERRY COOKIE BARS
Steps:
- Preheat the oven to 350 ̊. For the filling: Combine the cherries, granulated sugar, cornstarch and almond extract in a bowl and let stand while you make the dough.
- For the dough: Sift the flour, baking powder and salt into a medium bowl; set aside. Cream the butter, granulated sugar and orange zest in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until combined, about 2 minutes. Add the egg, egg yolk and vanilla and mix until fully incorporated, about 1 minute. Add the dry ingredients in three batches, alternating with the milk, and beat until the dough comes together (it will be soft).
- Press two-thirds of the dough into the bottom of a 9-by-13-inch baking dish. Pour the cherry filling and any juices on top and spread it out. Crumble the remaining dough over the filling. Bake until the cherries are bubbly and the dough is golden, about 35 minutes. Transfer to a rack to cool completely, about 1 hour.
- For the glaze: Combine the powdered sugar, lemon zest and milk in a medium bowl until smooth; thin with more milk, if necessary. Drizzle on the bars and cut into pieces.

- 1. Heat oven to 350^. Spray a foil lined 13x9-inch baking pan with foil extending over edge of pan(for easy lift up edges of foil to remove from pan for easy cutting after baking)
- 2. Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.
- 3. Bake 25 to 30 minutes or until lightly browned. Loosen from sides of pan while still warm; cool on wire rack. cut into bars or diamonds or squares.

- 1. Preheat oven to 350 degrees. (325 for a glass baking pan) In a small bowl, combine graham cracker crumbs and the butter, mix well. Press crumb mixture firmly with your hands to the bottom of a well buttered 13 x 9-inch baking pan.
- 2. Pour 1/2 can of sweetened condensed milk over crumb mixture. Layer evenly with the remaining ingredients (chocolate chips, chopped cherries, & coconut) Press down firmly. Pour the last 1/2 of sweetened condensed milk evenly over the last layer. This will help bind the ingredients together.
- 3. Bake for 25 minutes or until lightly browned. Cool. Cut into bars. Store covered at room temperature.

Moist,chewy cookie bar with a refreshing contrast to the sweetness of the condensed milk. I put parchment paper in the bottom of the pan and refrigerate for a few hours before removing the parchment and cutting into squares.

- Pour can of sweetened condensed milk over crumb mixture and spread.
- Sprinkle dried cherries over milk and press lightly.
- Bake at 325 degrees for about 20 - 25 minute.
- Check when edges begin to brown and milk bubbles and starts to turn brown.
- Note: may also add some white chocolate chips, nuts and coconut - we like them better without all the additional toppings, but to each his own.
