When I was a kid, one of my all-time favorite treats was magic cookie bars. This recipe combines all the same classic flavors in a magic brownie bar! —Mandy Rivers, Lexington, South Carolina

1 package (17-1/2 ounces) brownie mix
1 package (11 ounces) butterscotch chips
2 cups sweetened shredded coconut
1 cup chopped pecans, optional
1 can (14 ounces) sweetened condensed milk

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil. , Prepare brownie mix batter according to package directions. Transfer to prepared pan. Top with butterscotch chips, coconut and, if desired, pecans. Drizzle with milk. Bake until topping is light golden, 35-40 minutes., Cool completely in pan on a wire rack. Lifting with foil, remove brownies from pan. Cut into bars. Store in an airtight container.

13 tablespoons butter
6 1/2 ounces unsweetened chocolate
1 1/2 cups cake flour or 1 1/2 cups all purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
4 eggs
2 cups sugar
1 1/4 teaspoons vanilla
1 cup coarse chopped walnuts, toasted

Steps:

  • Grease a 13x9x2 inch baking pan. Preheat oven to 325.
  • In a heavy small saucepan, heat the butter and chocolate over low heat, stirring, till chocolate is melted and smooth; set aside to cool.
  • In a small bowl sift together flour, baking powder and salt.
  • In a large mixing bowl, beat eggs and sugar with an electric mixer on high speed for 5 minutes or till light yellow and fluffy, scraping side of the bowl occasionally.
  • Add cooled chocolate mixture and vanilla. Beat on low speed until combined. Add flour mixture; beat on low speed until combined, scraping sides of bowl. Stir in walnuts.
  • Spread batter in pan. Bake 30 minutes or until brownies appear set. Cool in pan on wire rack; cut into bars.

1 ½ cups sifted cake flour or all-purpose flour
¾ teaspoon baking powder
½ teaspoon salt
4 eggs
2 cups sugar
1 ¼ teaspoons vanilla
1 ¼ cups coarsely chopped walnuts, toasted

Steps:

  • Grease a 13x9x2-inch baking pan; set aside. In a heavy small saucepan, heat the butter and chocolate over low heat, stirring constantly, until chocolate is melted and smooth. Set aside to cool. In a small bowl, stir together flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, beat eggs and sugar with an electric mixer on high speed for 5 minutes or until lemon-colored and fluffy, scraping sides of bowl occasionally. Add cooled chocolate mixture and vanilla. Beat on low speed until combined. Add flour mixture. Beat on low speed until combined, scraping sides of bowl. Stir in walnuts. Spread the batter in the prepared pan. Bake in a 325 degree F oven for 30 minutes or until brownies appear set.
  • Cool in pan on a wire rack. Makes 15 servings.

  • *I substituted 1 cup chocolate chips.
