INVISIBLE APPLE CAKE



Invisible Apple Cake image

This unique dessert features dozens of layers of thinly sliced apples held together by a custard-like cake batter. It's not overly sweet and looks impressive when sliced.

1 ½ lb apples (choose sweet ones like fuji, honeycrisp, ambrosia, pink lady)
3 large eggs
6 tbsp sugar
1/2 cup milk (any kind)
1 tbsp unsalted butter (melted)
3/4 cup all-purpose flour
1/3 cup sliced almonds
powdered sugar (for topping)

Steps:

  • Peel the apples and slice very thinly, about 2 mm thick. Please see notes above for method to slice the apples.
  • Preheat the oven to 350F. Line an 8 inch by 4 inch baking loaf pan with parchment paper.
  • In a large bowl, whisk the eggs and sugar until pale yellow. Add the milk and melted butter and mix until smooth.
  • Sift in the flour. You want to sift it in to keep the batter light. If you do not have a flour sifter, this can easily be done with a mesh strainer. Add about third of the flour into the strainer. Place strainer directly above the bowl with the batter and tap the side of the strainer against your palm, letting the flour sift through into the bowl. Repeat with remaining flour. Whisk the batter until smooth.
  • Add about half the sliced apples to the batter. Do your best to separate any slices stuck together before adding. Use a rubber spatula to stir apples until they are all coated with batter. Add in remaining apples and stir and coat until all apples are thinly coated in batter.
  • Spoon the apples into parchment paper-lined loaf pan. Try your best to make the apples all face the same way. Pour leftover batter over cake. Use spatula to scrape bowl to get every last bit of the leftover cake batter into your loaf pan.
  • Sprinkle almonds over top of cake.
  • Place loaf pan into the middle section of your oven and bake for 40 minutes. Cover top of cake lightly with a foil tent and bake another 10-20 minutes or until cake is done. To check if cake is done, stick a toothpick into the cake batter and the batter should no longer be liquid. Baking time can vary depending on the amount of apples you used and how much moisture was in the apples.
  • Let cake cool to room temperature. Place into fridge to set overnight.
  • Right before serving, remove cake from fridge. Top with powdered sugar. Use a sharp knife to slice cake.

4 eggs (at room temperature)
3/4 cup sugar
8 tablespoon butter (unsalted and melted )
1 teaspoon vanilla extract
3/4 cup all-purpose flour
2 cups milk (lukewarm *)
powdered sugar (for dusting)

Steps:

  • Preheat oven to 325 F degrees. Grease a 8 inch x 8 inch baking dish or line it with parchment paper so that it's easier to get the cake out.
  • Separate the eggs and beat the egg yolks with the sugar until light and fluffy. Add butter and vanilla extract and continue beating for another minute or two after which you can add the flour and mix it in until fully incorporated.
  • Slowly start adding the milk and beat until everything is well mixed together.
  • Add the egg whites to a mixer and mix until stiff peaks form.
  • Add the egg whites to the cake batter and gently fold them in. Another variation to folding in the egg whites would be to whisk them in to the cake batter, this is a lot faster and easier. Make sure you don't fold the egg whites in completely, you still want to see some of the white bits floating at the top.
  • Pour batter into baking dish and bake for 40 to 70 minutes or until the top is lightly golden. The baking time could vary greatly depending on the oven, so take a peek at around 40 minutes and see how it looks.
  • Sprinkle some powdered sugar after cake has cooled.

3/4 cup dark brown sugar
2 large eggs
1/3 cup neutral oil (like canola or grapeseed)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon kosher salt
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 small apples (peeled, cored, and chopped into 1/4- to 1/2-inch pieces (about 2 cups))
1/2 cup toasted walnuts (chopped)
1 tablespoon whiskey (optional)
1/2 teaspoon instant espresso powder (optional)

Steps:

  • Position a rack in the center of your oven and preheat the oven to 350°F. Butter or coat a 9-inch round baking pan with nonstick spray. Line the bottom of the pan with a round of parchment paper.
  • In a large bowl, whisk the brown sugar and eggs until pale and foamy, about 1 minute. Add the oil, vanilla, cinnamon, nutmeg, salt, and whiskey and espresso powder, if using. Whisk until smooth and emulsified.
  • Add the flour, baking powder, and baking soda and whisk until well-combined and smooth.
  • Use a rubber spatula to fold in the apples and ¼ cup of the nuts.
  • Pour the batter into the prepared pan and use an offset spatula to gently smooth the top, making sure the apples are well dispersed and go all the way to the edges of the pan. Tap the pan gently on the counter to release any air bubbles. Sprinkle the remaining ¼ cup nuts over the cake.
  • Bake until puffed and golden, and a tester inserted into the center comes out clean, 30 to 40 minutes. There may be a bit of moisture on the tester from the apples. Set the pan on a rack to cool for about 15 minutes. Run a thin knife around the edge and carefully turn the cake out onto a cooling rack. Then invert it again so that it's puffy side up, if desired.
  • Store the cake, wrapped tightly, at room temperature or in the fridge for up to two days.

You don't need fancy inserts or special pans to make a sweet and satisfying baked dessert in an instant pot. This easy recipe lets you cook up a warm, spiced apple treat right in the bowl of the machine.

1/4 cup packed dark brown sugar
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
Pinch grated nutmeg
6 Honeycrisp apples, peeled and cored, but left whole
One 15.25-ounce box yellow cake mix
8 tablespoons (1 stick) unsalted butter, melted and cooled
3 large eggs
3/4 cup skin-on sliced almonds
Ice cream, for serving
Caramel sauce, for serving

Steps:

  • Whisk together the brown sugar, granulated sugar, cinnamon, allspice, nutmeg and 1 1/2 cups water in a bowl and add to a 6-quart Instant Pot®. Add the apples to the pot. Follow the manufacturer's guide for locking the lid and set to pressure cook on low for 1 minute (see Cook's Note).
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.
  • Break each apple in half using a wooden spoon. Place the cake mix in a bowl and combine with the butter, eggs and 3 tablespoons of the liquid from the pot; the mixture will be thick. Pour it evenly over the apples in the pot. Sprinkle with the almonds. Lock the lid and set to pressure cook on low for 30 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Allow to sit for 15 minutes. Spoon the cake into bowls and top with ice cream and caramel sauce.
