Maafé is a traditional West African recipe that consists of a beef stew cooked in peanut butter and tomatoes.

2 lb lamb meat ((or beef stew), cut into 1-inch/2,5 cm dice)
1 onion (, finely chopped)
½ cup creamy peanut butter
5 tablespoons tomato paste
4 carrots (, peeled and cut into 1-inch/2,5 cm pieces)
3 sprigs fresh thyme
2 bay leaves
2 tablespoons peanut oil
Salt
Black pepper

Steps:

  • Heat the oil in a heavy saucepan, add the onion, and cook over medium heat until it is translucent.
  • Add the meat and continue to cook, stirring occasionally, until it is lightly browned on all sides.
  • In a small bowl, mix the peanut butter with 1-½ cup (400 ml) of cold water and pour it over the meat.
  • Dilute the tomato paste with 2 cups (500 ml) of hot water, and pour over the stew. Stir well.
  • Add the remaining ingredients and lower the heat. Cover, and cook, stirring occasionally, for 1 hour, or until the meat is tender.
  • Remove the thyme sprigs and bay leaves. Serve hot over white rice.

Mafe is a Senegalese classic. It is also an entrant into the peanut stew sweepstakes that could be held for dishes from all over the continent. Here the meat of choice is lamb, but mafe could also be prepared from beef or chicken. Traditionally the stew is served with white rice.

2 tablespoons peanut oil
1 large onion, minced
2 pounds lamb stew meat, cut into 1 1/2-inch pieces
1/2 cup creamy peanut butter
1 1/2 cups cold water
1/3 cup tomato paste
2 cups hot water
4 large carrots, scraped and cut into 1-inch pieces
3 sprigs fresh thyme
2 bay leaves
Salt and freshly ground black pepper, to taste

Steps:

  • Heat the oil in a heavy saucepan, add the onion, and cook over medium heat until it is translucent. Add the meat and continue to cook, stirring occasionally, until it is lightly browned on all sides.
  • In a small bowl, mix the peanut butter with the cold water and pour it over the meat. Dilute the tomato paste with the hot water, pour the liquid over the stew, and stir well to make sure all the ingredients are well mixed. Add the remaining ingredients, lower the heat, cover, and cook, stirring occasionally, for 1 hour, or until the meat is tender. Remove the thyme sprigs and bay leaves. Serve hot over white rice.

1/2 cup peanut butter
2 cups stock (your choice, preferably unsalted)
2 tablespoons canola oil
1 cup chopped onion
4 garlic cloves, minced
1 cup green bell pepper, peeled, seeded and chopped
1 cayenne pepper, seeded and chopped (or other or more)
1 cup carrot, peeled and chopped
2 lbs beef stew meat, trimmed and cut into 1 and 1/2-inch cubes
salt and pepper
2 cups tomatoes, peeled and diced (or one 14 and 1/2 oz. can diced tomatoes with liquid)
1 sprig thyme
1 bay leaf

Steps:

  • Whisk together peanut butter and stock and reserve.
  • Season the meat with salt and pepper.
  • Heat the oil in a large saucepan over medium heat.
  • Brown the meat well on all sides; do not crowd the meat; saute in batches if necessary.
  • Remove meat and keep warm.
  • Add the onion, garlic, peppers, and carrots to the pan and saute until the onions are translucent.
  • Add the peanut butter and broth mixture, scraping all the brown bits up from the bottom and sides of the pan.
  • Return the reserved meat (and any juices) to the pan with the tomatoes and their liquid, the thyme and bay leaf.
  • Stir well and bring to a boil. Reduce heat to low and simmer, stirring often, for about 1 hour or until the meat is tender.
  • Taste for seasoning.
  • Remove the thyme sprig and the bay leaf and discard.
  • Serve hot over rice.
