When my daughter was a teen, these butter pecan cookies earned her two blue ribbons from two county fairs. Then a few years ago, her own daughter took home a blue ribbon for the same cookie. Needless to say, these mouthwatering morsels are real winners!-Martha Thefield, Cedartown, Georgia

- Place chopped pecans and 1 tablespoon butter in a baking pan. Bake at 325° for 5-7 minutes or until toasted and browned, stirring frequently. Set aside to cool. , In a large bowl, cream brown sugar and remaining butter until light and fluffy. Beat in egg yolk and vanilla. Gradually add flour and mix well. Cover and refrigerate for 1 hour or until easy to handle. , Roll into 1-in. balls, then roll in toasted pecans, pressing nuts into dough. Place 2 in. apart on ungreased baking sheets. Beat egg white until foamy. Dip pecan halves in egg white, then gently press one into each ball. , Bake at 375° for 10-12 minutes or until golden brown. Cool for 2 minutes before removing to wire racks.

CREAM CHEESE BUTTER PECAN COOKIES
I combined a couple of recipes to come up with this cookie. I had made another version found online and they were delicious and tasted just like the ice cream, but they were a crumbly, shortbread texture and I wanted more of a soft cookie. This is what I got with this recipe!

Steps:
- In a large bowl, use a mixer to cream the brown sugar, butter, cream cheese, rum extract vanilla extract and egg yolk.
- Using a large spatula or spoon, Stir the pecan and toffee pieces into your mixture.
- Using your spoon or spatula, fold your flour and salt into the mixture, a little bit at a time. Thoroughly blend in each addition, before adding more.
- Cover and refrigerate for at least an hour. (I let mine sit overnight).
- Preheat your oven (use convection bake if you have it) to 375 degrees F.
- Use light colored baking sheets and lightly grease them. Use a teaspoon to dig out your dough, using more if you like larger cookies, and roll into a ball. Slightly flatten each ball with your palms.
- Bake for 8 minutes, or until light golden brown. (The cookies will cook a bit more once they are out of the oven.).
- Let your cookies cool ON THE BAKING SHEET before moving them to your racks. My rule of thumb was when I could pick up the baking sheet and it may have been slightly warm, but I definitely didn't need to worry about oven mitts. This includes the bottom center of the sheet.
- Storage: To keep your cookies soft, place a piece of bread in the bottom of an airtight container and pile the cookies on top.
TOASTED-PECAN BUTTER COOKIES
These rich, crisp, delicate cookies owe their crumbly texture to confectioners' sugar. Pecans enhance their buttery flavor.

- Preheat oven to 325 degrees. Break each pecanhalf into 2 or 3 pieces. Cream butter and sugar with a mixer until pale. With mixer running, add vanilla and salt, then reduce speed to low. Gradually add flour, beating until just incorporated. Stir in pecans until distributed evenly. Cover dough, and refrigerate until firm, 15 minutes(or overnight; let dough come to room temperature before using).
- Drop 2-tablespoon scoops of dough onto baking sheets, 2 inches apart. Bake, rotating sheets halfway through, until edges of cookies are golden, about 15 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to wire racks, and let cool. Dust with confectioners' sugar just before serving.
CHOCOLATE CHIP MAPLE-PECAN COOKIES
These cookies are outrageously wonderful, they bake out to the perfect texture!!! You can sub walnuts for pecans, melted cooled butter for these, not softened butter! You can shape the cookie batter and then freeze to be baked at a later time.

- Set oven to 375°.
- Line 2 cookie sheets with parchment or wax paper.
- In a small bowl whisk together flour, baking soda and salt.
- In a large bowl using an electric mixer beat melted butter with both sugars on high speed until fluffy (about 5 minutes).
- Add in eggs one at a time then egg yolk beating until creamy.
- Beat in the maple extract.
- Reduce the speed to low and add in the flour mixture until JUST blended.
- Stir in chocolate chips and pecans.
- Chill the dough for about 2 hours until semi-firm, or up to 24 hours.
- You can scoop the dough onto baking sheets and freeze to use later if desired.
- Scoop about 1/4-cup batter onto cookie sheet, leaving about 3-inches apart.
- Flatten mounds into 3-inch rounds using moistened palm of your hand.
- Repeat with remaining cookies (you will have to use two baking sheets for this and bake in two separate batches).
- Bake 1 sheet at a time for about 13-15 minutes.
- Transfer the cookies to a rack to cool and continue with remaining cookies.

- Cream butter in large mixing bowl.
- Gradually add brown sugar and granulated sugar.
- Cream well.
- Add unbeaten egg yolk and vanilla and beat well.
- Blend in sifted flour to form a stiff dough.
- Shape dough into small balls.

EASY BUTTER PECAN COOKIES
This is one of my most requested cookies. It is crunchy on the outside, soft on the inside, and oh so nutty good. Make sure you don't overcook them, they will harden and set-up as they cool. Take them out of the oven when the edge start to brown and the top is still pale. I'm not sure about the number of servings, but it makes a lot.

- Separate white of egg from yolk and set aside.
- Cream butter and sugar. Beat egg yolk with water and add to creamed butter mixture. Add vanilla, flour and salt.
- Lightly grease a cookie sheet. Patting dough with hands, thinly spread onto cookie sheet, covering only a three-fourth area of the sheet.
- Cut white of egg to keep it from being too stringy and smear over top of batter by hand. Sprinkle finely chopped pecans on top and press inches.

Steps:
- Cream the butter and margarine. Gradually add 1/4 cup plus 2 tbsp sugar, beating well at medium speed of an electric mixer.
- Add the water and vanilla, beating well. Gradually add the flour to the creamed mixture, beating well. Stir in ground pecans.
- Shape dough into 1-inch balls; place 2 inches apart on a greased cookie sheet. Flatten the balls to 1/4 inch thickness with the palm of your hand. Bake at 350 degrees for 10 to 12 minutes. Let cool slightly on the cookie sheet.

- In a 300°F (149°C) oven, toast the chopped pecans on a large parchment paper or silicone mat-lined baking sheet for 15 minutes. Stir twice during this time. Turn oven off and set pecans aside.
- In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the granulated sugar and brown sugar and beat on medium high speed until fluffy and light in color. Beat in eggs and vanilla on high speed. Scrape down the sides and bottom of the bowl as needed.
- In a separate bowl, whisk the flour, cornstarch, baking soda and salt together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be quite thick. Add the toasted chopped pecans, mix on low for about 5-10 seconds until evenly distributed. Cover dough tightly with aluminum foil or plastic wrap and chill for at least 3 hours and up to 3 days. Chilling is mandatory for this cookie dough.
- Remove cookie dough from the refrigerator and allow to sit at room temperature for 20 minutes– if the cookie dough chilled longer than 3 hours, let it sit at room temperature for about 30 minutes. This makes the cookie dough easier to scoop and roll.
