MADELINE ROSELAND'S DIRTY RICE
Madeline Roseland is my grandmother from Louisiana. She made this every year for Thanksgiving, and like most Cajun recipes, the amounts are general, as well as the prep and cooking times. Cook the rice until it's done. If you use the microwave, it will be finished sooner than the rice steamer. Keep adding spices until it tastes good to you. It should be as spicy as you can handle. If you've ever read a Cajun cookbook, you'll know I'm telling the truth when I say they don't usually use cookbooks or measuring spoons. They just know it and hand it down to the next generation by teaching in the kitchen while actually preparing the recipe. The turkey drippings are what makes this rice so good, and for the very best flavor, use the turkey juice from the bottom of the roasting pan when your turkey is almost done. It just isn't the same without it. I know lots of people don't like the liver, but if you do this recipe correctly, the liver taste does not come through as liver, it just adds a distinctive flavor, but is not overwhelmingly liver. Granny also used Bruce's Ma Cayenne pepper, which has a flavor all its own, but I think the company went out of business years ago, because we haven't been able to find it in forever. Other Cajun brand peppers work better than the traditional red peppers.

Steps:
- Cook rice in turkey stock in microwave or rice steamer.
- If using the steamer, reduce turkey stock to 2 cups.
- Sauté garlic and vegetables in butter until soft.
- Add ground meat and seasoning to sautéed vegetables.
- Brown until done.
- Do not drain liquid--this is not a low fat recipe!
- Just continue cooking until the liquid is reduced almost completely (leave it a little juicy) back into the meat and vegetable mixture. You don't want the rice runny, just moist.
- Stir meat mixture into rice and serve.

DIRTY RICE
This classic Cajun dish pays homage to the Louisiana holy trinity (onions, bell peppers and celery). The finely chopped proteins give the rice its signature "dirty" look. Traditionally, dirty rice includes chicken liver -- you can omit it, but don't fear the liver! It adds another layer of texture and depth of flavor.

Steps:
- Heat the olive oil in a Dutch oven or large heavy-bottomed pot over medium-high heat. Add the sausage, ground beef and chicken livers and cook, breaking the meat into small bits with a wooden spoon, until no longer pink, 3 to 4 minutes. Transfer to a medium heatproof bowl with a slotted spoon.
- Remove and discard all but 2 tablespoons of the fat from the Dutch oven. Add the onion, bell pepper and celery and cook down, stirring occasionally, until the vegetables have softened, 4 to 5 minutes. Add the garlic, thyme and bay leaves and cook, stirring frequently, until fragrant, about 1 minute. Stir in the rice, oregano, smoked paprika, cayenne, 1 1/2 teaspoons salt and 1/2 teaspoon black pepper and cook about 30 seconds. Stir the cooked meat back in, then add the beef broth and Worcestershire sauce. Bring to a boil, reduce the heat to a low simmer and cover. Cook until the rice is tender and has absorbed the liquid, about 18 minutes.
- Remove from the heat. Remove and discard the bay leaves, stir in the scallions and season.
EASY BAKED DIRTY RICE
I got this recipe from a former coworker, whose father, a professional cook, made this for every family get-together and holiday. When he passed away, she took on the responsibility for providing this tasty treat for her family.

Steps:
- Pinch all the ingredients together, with your fingers, in a large casserole dish.
- Spread it all out into an even layer and bake, covered with foil, in a 350°F oven for 30 minutes.
- After 30 minutes, remove the dish from the oven and stir/smoosh (breaking up the pieces of sausage and beef into itty-bitty tiny bits) and add a little more water if it looks dry.
- Bake, uncovered, for an additional 30 minutes.

CAJUN STYLE DIRTY RICE
A Cajun dirty rice or rice dressing recipe adapted to family tastes with the ground beef. It's one of the most requested meals in our home.

- Spray a large non-stick pan with vegetable oil spray.
- Brown meat in pan along with diced onion, pepper, celery and garlic.
- Drain fat and season with cayenne pepper, onion and garlic salt.
- Add water and simmer for about 20- 30 minutes, until the vegetables are cooked down. (You may need to add a little water during the simmer time to keep from sticking.)
- Add Worcestershire sauce, Tabasco sauce, cream of mushroom soup and mirliton.
- Simmer for 15 minutes.
- Add cooked rice, stir gently, until all rice is moistened.
- Add mirliton (optional).
- Top with green onion and parsley, stir lightly and serve.
DIRTY RICE
An Authentic recipe for Cajun Dirty rice. My Mother got from a restaurant in LA. Takes a while to cook, but well worth the results.

- Prepare vegetables as directed.
- Add crushed garlic.
- Brown sausage in large pot.
- Remove sausage and set aside.
- To sausage drippings, add enough bacon drippings or oil to make 1/2 cup.
- Add flour and brown, stirring constantly, over medium-high-heat until the roux is very dark brown (about the color of an old penny).
- Be careful not to scorch the roux.
- Immediately add chopped vegetables and stir and cook a few minutes.
- Then add chopped giblets and cook until pink color is gone.
- Add water, the sausage and seasonings and simmer 2 hours.
- 30 minutes before serving, add green onion tops and parsley.
- Before serving, add hot cooked rice, mix well.
CORY'S SPICY DIRTY RICE
Delicious Louisiana inspired combination of rice, peppers, onion, celery, and your favorite andouille sausage. Spice it up to your liking!

- 1) Finely chop green pepper, onion, and celery and set aside. You want the pieces to be similar in size to cook evenly.
- 2) Begin cooking rice (per directions on box or bag).
- 3) Preheat a large skillet or large pot with olive oil over medium heat.
- 3) Slice andouille sausage into 0.5 -1 inch pieces.
- 4) Place sausage into pot and cook for 4-5 minutes season with a pinch of salt and black pepper.
- 5) Add garlic and other vegetables and cook for 2-3 minutes.
- 6) Place chicken stock into pot and bring to a boil. Stir in cayenne pepper. Reduce heat by half and let simmer for 10-15 minutes until vegetables are tender and stock has reduced by half.
- 7) Combine cooked rice into skillet or pot and add hot sauce. Let simmer for 2-3 minutes to combine all flavors.
- 8) You can serve this with salad or bread. Enjoy!

- In large saucepan, saute bacon over medium heat until slightly crisp (about 10 minutes). Remove bacon from pan, place on paper towels. Drain off fat.
