MACKINAC ISLAND FUDGE

This is the authentic recipe. I've had this for years. My grandkids love it. Its very easy to make.

Number Of Ingredients 8

1/2 cup milk
1/2 cup butter, not margarine
1/2 cup brown sugar
1/2 cup white sugar
1/8 teaspoon salt
1 teaspoon pure vanilla extract
2 cups powdered sugar
1/2 cup chopped nuts

Steps:

  • Mix milk, butter, sugars and salt in a heavy saucepan. Cook over medium heat and bring to a boil, stirring, constantly. Boil 6 mins., stirring constantly.
  • Remove from heat; add vanilla and powdered sugar.
  • Beat with mixer until smooth and thick; add nuts.
  • Pour into buttered pan and freeze for 20 minutes Cut into pieces once set. Makes 1 pound.
  • To make peanut butter fudge: Follow vanilla nut fudge recipe but cut butter to 1/4 cup and add 1/2 cup peanut butter.

Butter Pecan Fudge is your favorite ice cream all wrapped up in a creamy fudge. Amazing!

1 cup unsalted butter
1 cup granulated sugar
1 cup light brown sugar, packed
1 cup heavy whipping cream
1/4 teaspoon kosher salt
1 tablespoon pure vanilla extract
3 cups powdered sugar
2 cups chopped pecans

Steps:

  • Line an 8- by 8-inch baking dish with parchment paper. Set aside. In a large saucepan over medium high heat, combine sugars, cream, butter and salt. Bring to a boil. Stirring constantly, boil for a full 4 minutes (ROLLING BOIL). Remove from heat. Pour hot mixture into a mixing bowl and add in the vanilla and powdered sugar. Beat until smooth (several minutes). Fold in chopped pecans and pour into prepared baking dish. Refrigerate for 3-4 hours until firm. Before cutting into pieces, allow to come to room temperature.

This butter pecan fudge is extra creamy with a deliciously sweet, buttery flavor. Toasted pecans give it a nutty flavor and add tons of texture. It only takes 15 minutes to make, and it makes a great gift too!

3/4 cup chopped pecans
1/2 cup unsalted butter
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup whipping cream (33-35% MF)
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups powdered sugar (sifted)

Steps:

  • Preheat the oven to 350F degrees.
  • Sprinkle the pecans on a cookie sheet and bake in the preheated oven for 5-10 minutes. When they're done, you will be able to smell a delicious nutty aroma.
  • Line an 8x8 inch pan with parchment, or line with aluminum foil and grease with butter.
  • Add the butter, brown sugar, white sugar and whipping cream to a medium saucepan. If using a candy thermometer, clip it to the side of the bowl.
  • Melt the ingredients together over medium-low heat.
  • Once the butter is melted, bring the mixture to a boil. Boil for 5 minutes without stirring, or until the candy thermometer reads 235F degrees.
  • Remove from the heat and cool for 10 minutes.
  • Stir in the salt and vanilla extract.
  • Stir in the sifted powdered sugar, then fold in the toasted pecans.
  • Spoon the batter into the lined pan and let set for 2 hours.
  • Cut into small squares with a sharp knife.

Steps:

  • Coat an 8-inch square baking dish with nonstick cooking spray.
  • In a large saucepan, bring the butter, heavy cream, granulated sugar, brown sugar, and salt to a boil over medium heat, stirring frequently.
  • Allow to boil for 5 minutes, stirring constantly, then remove the pan from the heat.
  • Stir in the pecans and vanilla.
  • Add the confections' sugar and stir until smooth and well combined.
  • Spread the mixture into the baking dish.
  • Allow to cool to room temperature then cut into 1-inch squares and serve, or store in an airtight container until ready to serve.

Ah Mackinac Island, a Michigan tourism paradise known for its horse-drawn carriages, lilacs, the Grand Hotel [scene of the movie "Somewhere In Time"] and, oh yes, fudge. Wander through the streets and about every 3rd or 4th shop you pass will be a fudge shop, and you'll usually be able to watch the freshly boiled up fudge being spread and cooled on a marble slab. It's strangely addicting watching this process, and if you hang around awhile you'll get a sample eventually. This recipe purports to be an authentic version, though no particular fudge shop was mentioned as owning the recipe. The initial recipe is for a vanilla fudge. Chocolate fudge and peanut butter fudge variations follow, so read through the entire recipe if you want to make either of those flavors.

3 cups vanilla ice cream (1-1/2 pints)
1 cup chopped pecans, toasted and cooled
1 cup semisweet chocolate pieces
2 tablespoons unsalted butter
⅔ cup whipping cream
⅔ cup light-colored corn syrup
1 tablespoon creme de cacao
½ teaspoon vanilla
4 pecan halves

Steps:

  • Scoop ice cream into 4 balls (3/4 cup each); place in a small baking pan. Freeze about 1 hour or until firm. Place toasted pecans in a pie plate. Roll each frozen ice cream ball in the pecans. Return coated ice cream balls to pan and freeze about 1 hour more or until firm.
  • In a small heavy saucepan, combine chocolate and butter. Cook and stir over very low heat just until melted. Stir in whipping cream and corn syrup. Cook and stir over medium-low heat about 3 minutes or just until the mixture boils around edges. Remove from heat. Stir in the creme de cacao and vanilla. Cover and cool to room temperature.
  • To serve, place ice cream balls in four chilled dessert dishes. Spoon some of the sauce over each ice cream ball. If you like, garnish each serving with a pecan half. Makes 4 servings.

1 teaspoon plus 1/2 cup butter, cubed
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup heavy whipping cream
1/8 teaspoon salt
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar
1 cup coarsely chopped pecans, toasted

Steps:

  • Line an 8-in. square pan with foil; grease foil with 1 teaspoon butter., In a large heavy saucepan, combine remaining butter, granulated and brown sugars, cream and salt. Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads 234° (soft-ball stage). Remove from heat. Add vanilla to pan (do not stir)., Cool, without stirring, to 110°, about 30 minutes. Beat with a spoon until fudge just begins to thicken. Gradually stir in confectioners' sugar until smooth; add nuts and continue stirring until fudge becomes very thick and just begins to lose its sheen. Immediately spread into prepared pan. Cool., Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.
