- Arrange a mixture of 2 varieties of corn chips on a very large platter or use your broiler pan as a platter.
- Combine salsa ingredients in a bowl and set aside for flavors to marry.
- Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion and peppers to the pan and saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in beans and reduce heat to low.
- In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.
- Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. UBER NACHOS! Serve immediately as is or, garnish with your choice of extra toppings from the toppings list.
SUPER NACHOS
This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

- Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
- Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
- Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
- Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
- Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

This is a Paula Deen recipe. I made these for a fight night get together we were having and my guests loved them. In fact, I wanted more and they were all gone! Hope you enjoy this easy and delish recipe. Prep time includes cooking time.

- Heat oven to 350.
- Lay chips on oven safe platter. You will be layering this so split them.
- Warm beans and chili on stove or in microwave. Stir beans until smooth.
- Spread beans over tortillas. Top with onion, cheese, jalepenos, chili and cheddar cheese. Repeat by layering tortilla chips and toppings until gone.
- Place in oven and bake until cheese is melted.
- Dollop with sour cream. Add tomatoes and green onions on top.
CAST-IRON SKILLET MACHO NACHOS - A QUICK AND EASY RECIPE
Steps:
- Brown the ground chuck in a medium-size skillet over medium heat, and drain any grease. Add 2/3 cup of water, the taco seasoning mix and bring to a boil. Cook 4-5 minutes. Remove from heat and set aside.
- Add a single layer of tortilla chips to the bottom of a baking sheet or large pan. Sprinkle half of the ground beef mixture and half of the black beans over the chips. Top with 1-2 cups shredded cheese.
- Place on a rack at least 10 inches under the broiler for one to three minutes or until the cheese has melted. Carefully remove from the oven.
- Add another layer of chips, meat mixture, and beans and top with the remainder of the cheese.
- Add a few dollops of sour cream, a few spoonfuls of salsa, and top with jalapeño slices.
- Put under the broiler and cook until the cheese is melted and bubbling. Watch it carefully! This will only take one to three minutes.
- Serve immediately with additional salsa and sour cream while still hot.

This recipe made me crave Mexican food so we went out for Mexican that night! Have not tried this recipe yet but wanted to post since I was able to find it on foodnetwork.com. Cooking and prep times are estimated.

- Have all the prepped ingredients easily accessible to assemble nachos.
- Preheat oven to 350.

- Prepare taco meat by first browning the ground beef in a medium skillet. Drain excess fat. Over medium heat, add the Penzeys taco seasoning and stir well to incorporate. Add 3/4 cup of water and simmer for 5-10 minutes, or until the water is mostly absorbed. This can be made ahead of time and refrigerated. Just warm it up a bit before layering with the chips.
- Preheat grill to medium low. Place a large cast iron skillet on the grill grates and let heat for 5 minutes.
- Remove skillet from the grill and place 1/3 of the chips in the pan and top with 1/3 of the cheese, plus 1/3 of all the remaining ingredients, except for the jalapeno. Repeat to make 3 layers. Top with the sliced jalapenos. Transfer skillet back to the grill and grill until the cheese has melted. Depending on your grill heat, this should take 10 to 15 minutes.
