This hearty and delicious Mexican slow cooker recipe is so versatile and a hit at my husband's fire station. Shred the meat and create anything from tacos to taquitos, or enjoy it all on it's own!

1 (4 pound) boneless beef chuck roast, trimmed and cut into 8 portions
½ cup olive oil
¼ cup Worcestershire sauce
2 limes, juiced
1 (14 ounce) can diced tomatoes, undrained
1 large sweet onion, diced
½ green bell pepper, diced
4 cloves garlic, minced
1 jalapeno pepper, seeded and minced
½ cup beef broth
1 tablespoon dried oregano
1 tablespoon ground cumin
1 teaspoon chili powder
½ teaspoon salt, or more to taste
½ teaspoon ground black pepper

Steps:

  • Place beef portions into the crock of a large slow cooker. Mix olive oil, Worcestershire sauce, lime juice together in a bowl; pour over the beef. Add diced tomatoes, sweet onion, green bell pepper, garlic, jalapeno pepper, beef broth, oregano, cumin, chili powder, salt, and black pepper to the slow cooker.
  • Cook on High for 1 hour. Change setting to Low and continue cooking until the beef is tender, about 6 1/2 hours.
  • Remove beef with tongs to a cutting board. Shred with a pair of forks and return to the slow cooker. Continue cooking another 20 to 30 minutes.

3 lbs. lean eye of round beef roast
Salt and pepper
2 tbsp Worcestershire sauce (or Maggi sauce)
4 tbsp fresh lime juice
1 1/2 cups diced onion
1 cup red bell pepper, diced
3 garlic cloves, minced
3 serrano chiles, stemmed, seeded, and minced
1/2 cup nonfat beef broth
1 cup canned diced tomatoes
1/2 tsp dried oregano

Steps:

  • Season the beef with salt and pepper and place into the slow cooker.
  • In a medium bowl, whisk together the lime juice, beef broth, and Maggi. Stir in the other ingredients and then pour over the beef.
  • Cook on low in the slow cooker for 8 hours. Then shred the beef using two forks and serve. I usually like to let the shredded beef hang out in all the cooking liquid/sauce for about 30 minutes before serving. Just keep the slow cooker on low.

1 Tablespoon Chili Powder
2 teaspoons Cumin
2 teaspoons Garlic Powder
2 teaspoons Oregano
1 teaspoon Paprika
1/2 teaspoon Cayenne
Salt & Pepper, (to taste)
3 Tablespoons Vegetable Oil
1 15 Ounce Can Diced Tomatoes
1/2 Cup Beef Broth
2 Bell Peppers, (sliced)
2 Onions, (sliced)
2 Jalapeños, (sliced)
Juice of Two Large Limes

Steps:

  • In a small bowl mix together the chili powder, cumin, garlic powder, oregano, paprika, cayenne pepper, and salt and pepper to taste.
  • Season the roast evenly with the spice mixture. Cover the roast with plastic wrap and refrigerate overnight.
  • Heat the vegetable oil in a large skillet over medium-high heat. When the oil is hot, add the roast and sear until browned on all sides.
  • Add the roast to the crockpot. Pour over the diced tomatoes, broth, bell pepper onion, jalapenos, then squeeze over the lime juice.
  • Cover and cook on low for 8 hours.
  • Serve immediately with your favorite toppings! This meat is great for nachos, burritos, tacos, or salad!

For the marinade:
¼ cup Worcestershire sauce
Juice of two limes
1 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon New Mexico chili powder (or Ancho Chile Powder)
½ teaspoon salt
½ teaspoon black pepper
½ cup vegetable oil or olive oil
To cook the beef:
2-3 pounds Chuck Roast or Skirt Steak (trimmed and cut into portions.)
1 large sweet onion (diced)
½ green bell pepper diced
4 cloves of garlic (minced or pressed)
1 jalapeno pepper (minced)
1-14 ounce can diced tomatoes or tomatoes with green chilies
¼ cup beef broth
1 tablespoon dried Mexican oregano
1 tablespoon ground cumin
1 teaspoon hot pepper sauce such as Tabasco
salt and pepper to taste
1/2 teaspoon cider vinegar
Vegetable oil for searing the beef

Steps:

  • For the marinade, combine all the ingredients in a bowl then whisk them to form an emulsion. Add the beef making sure every piece is evenly coated. Cover and refrigerate.
  • Marinate the beef overnight in a bowl in the refrigerator. Before preparing, drain thoroughly and allow meat to come up to room temperature for about 30 minutes.
  • In a Dutch oven, heat a few tablespoons of oil over medium-high heat until very hot. Sear the beef a few pieces at a time to develop a rich brown color on all sides as well as on the bottom of the pan. Do this in several batches if the pot is too crowded.
  • When all the beef is browned nicely and removed from the pan, add the onions, peppers, and garlic to the hot pan. Saute for a few minutes then add the remaining ingredients to the pan along with the beef. Bring to a boil, scraping the browned bits off the bottom of the pan. Reduce heat to low, cover and simmer slowly for about 2 hours. The meat should be very tender and should easily fall apart when pricked with a fork.
  • Remove from heat, remove meat to a cutting board and shred with a pair of forks. Return to the pot and bring to a simmer, uncovered. Reduce the liquid until very thick, almost dry. At this point, adjust the seasoning with salt, pepper, and whatever additional heat you want to add if any.
  • Finish by stirring in the vinegar.

Steps:

  • In a small bowl, add the 5 eggs and season with salt & pepper to taste. Scramble with a fork and set aside

  • Add the tomatoes and cook and cook for two more minutes. Then add the machaca and mix to combine well.

This is a traditional dish of Machaca with eggs from the northern state of Nuevo León. Maybe it is the combination of eggs with the dry meat that men really enjoy having it for breakfast with warm flour tortillas. I still have a package with a little bit of this dried meat.

2 Tablespoons vegetable oil
1/2 cup white onion (finely chopped)
1 cup dry beef meat-machaca (finely shredded (could be substituted with shredded cooked beef))
1 cup tomato (finely chopped)
2 Serrano peppers (chopped)
6 eggs (lightly beaten)
Salt to taste

Steps:

  • Heat the oil in a medium heat skillet, add the onion and sauté for about 4 minutes. Add the dry meat. It will absorb the oil in the skillet. Let it brown a little at medium heat stirring frequently. About 5 minutes for this step.
  • Add more oil if need. Place the chopped tomatoes and Serrano pepper into the skillet. Stir and cook for another 5 minutes. Lower the heat.
  • Now the tomatoes have released their juice.
  • Pour the eggs into the skillet and stir until they are done and to your liking. Taste to see if they need salt. Do not let them dry.
  • Well, some people like to eat this dish very saucy.
  • Serve with and A spicy sauce will be a good addition in case you didn't add the serrano peppers.

1 cup water
6 peppercorns
1/4 medium onion
salt
1 garlic clove
1/4 teaspoon salt
1 tablespoon vegetable oil
1/2 medium onion, chopped
1 california chili pepper, roasted, peeled (or 1 roasted and peeled poblano chili, or 1 canned whole green chili)
2 small tomatoes, peeled, chopped (1/2 pound)
1/4 teaspoon ground cumin
fresh ground pepper (to taste)

Steps:

  • Place meat in large saucepan. Add water, peppercorns, 1/4 onion and salt to taste. Bring to a boil, reduce heat. Cover and simmer until meat is very tender, about 1 1/2 hours.
  • Cool meat in broth. Drain, reserving 1/3 cup broth. Mash garlic with 1/4 teaspoon salt to make a paste. Heat oil in a large skillet. Add chopped onion and garlic paste. Cook until onion is tender. Cut chili into short strips. Add chili strips and tomatoes to cooked onion.
  • Cook 3 to 4 minutes. Add meat, cumin and freshly ground pepper to taste. Cook until meat is heated through. Stir in reserved broth. Taste and add salt if needed. Keep warm.
  • NOTE: Can be served as a main dish or in tacos or other tortilla dishes.

Worcestershire sauce
Traeger Prime Rib Rub
vegetable oil
large yellow onion, diced
red bell pepper, diced
poblano pepper, diced
jalapeño pepper, diced
cloves garlic, minced
(14.5 oz) can Mexican-style diced tomatoes with chiles
beef broth, or more as needed
Juice of 1 lime
chili powder, or to taste
ground cumin
dried oregano, preferably Mexican

Steps:

  • When ready to cook, set the Traeger temperature to 165°F and preheat with the lid closed for 15 minutes.
  • In a roasting pan or sturdy disposable foil pan, place the chuck roast and coat it on all sides with the Worcestershire sauce. Season the roast generously with Traeger Prime Rib Rub.
  • Remove the meat from the roasting pan and place it directly on the grill grates, close the lid and smoke for 1 hour. Set the roasting pan aside, as you will need it later.
  • In a large saucepan over medium heat on the stovetop, add the oil and sauté the onions, bell pepper, poblano pepper, jalapeño, and garlic until softened, about 5 minutes.
  • Add the tomatoes, beef broth, lime juice, chili powder, cumin, oregano, and salt and pepper, and bring to a boil over high heat.
  • Reduce the heat, and simmer the tomato mixture for 20 minutes. Taste for seasoning, adding more chili powder, cumin, oregano, or salt and pepper as needed.
  • Remove the roast from the grill and transfer it to the reserved roasting pan. Increase the temperature of the Traeger to 300°F.
  • Slice the roast into 4 or 5 pieces of roughly equal size. Carefully pour the hot tomato mixture over the meat and cover it tightly with a lid or heavy-duty foil.
  • Place the roasting pan directly on the grill grates. Close the lid and cook for 2 1/2-3 hours, turning the meat over in the juices once or twice, using tongs to lift the lid or foil to avoid steam burns. Add more beef broth as needed, and cook until the roast is very tender and can be pulled apart easily.
  • Let the meat cool slightly, then shred with a pair of forks. If not serving immediately, return to the tomato mixture, cool, cover, and refrigerate. Machaca can be made up to 3 days ahead. Enjoy!

MACHACA AKA SLOW COOKER BEEF BRISKET STRAIGHT FROM #THEKITCHEN

Machaca takes beef brisket to new heights. Marinated and then slow cooked in the slow cooker, this fork-tender brisket with a hint of spice will be a new family favorite and couldn't be easier to make!

1/4 cup of fresh lime juice
1 tablespoon of soy sauce
1 tablespoon of Worcestershire sauce
3 cloves of garlic, minced
1 jalapeno, minced with seeds removed (if you are a wuss like me)
Salt and freshly ground black pepper
1/2 cup of olive oil
3 lbs. of beef brisket, cut into two pieces
2 tablespoons of olive oil
1 large onion, diced
2 large red bell peppers, diced
1/2 teaspoon of dried Mexican oregano
3 cloves of garlic, minced
1 - 2 jalapenos, minced (with seeds removed - see wuss note above!)
One 28-ounce can of fire roasted diced tomatoes with their juice
2/3 cup of low-sodium beef broth

Steps:

  • In a small bowl, whisk together the lime juice, soy sauce, Worcestershire sauce, minced garlic and jalapeno.
  • Add a pinch of salt and about 8 grinds of black pepper.
  • Whisk in the olive oil.
  • To a large plastic bag, add the beef brisket.
  • Pour the marinade into a bag over the beef, seal the bag fully, removing all air and squish around for a bit.
  • Let the beef marinate for about 8 hours or overnight in the fridge.
  • To a large sauté pan (or a stovetop safe slow cooker insert), add a touch of olive oil.
  • Let heat over medium high heat.
  • Remove the beef brisket from the marinade, discarding the marinade, and add the beef to the pan.
  • Sear the beef on all sides and remove to a plate to rest for a minute.
  • To the slow cooker, add the diced onions, red bell peppers, garlic, and jalapenos.
  • Stir to combine.
  • Crush the Mexican oregano between your fingers to release the flavor a bit and add to the slow cooker, followed by the fire roasted diced tomatoes.
  • Test for seasoning and add any salt and pepper, if needed
  • Stir everything to combine and nestle in the seared beef brisket and any juices.
  • Pour over the beef broth, making sure it doesn't come over the top of the beef.
  • Set the slow cooker to low and cook for about 8 1/2 hours.
  • Remove from the slow cooker and let cool on a plate for about 10 minutes until you can shred it with forks.
  • Skim the fat from the sauce and ladle some of the sauce mixture into a dish.
  • Place the shredded beef into a serving bowl and ladle some of the warmed tomato sauce over the beef. Stir to combine.
  • Serve with tortillas, sour cream, lettuce, and queso fresco along with the warmed sauce.
  • Enjoy!

2 tablespoons Maggi sauce or 1 tablespoon soy sauce plus 1 tablespoon Worcestershire sauce
3 cloves garlic, minced
1 serrano chile, stemmed, seeded, and minced
Salt and freshly ground black pepper
1/2 cup olive oil
One 3- to 4-pound beef brisket, trimmed and cut into 3 large pieces
3 tablespoons vegetable or olive oil
1 1/2 cups diced onion (about 1 large)
1 cup beef broth
1 cup diced red bell pepper (about 1 large)
1/2 teaspoon dried oregano
3 cloves garlic, minced
2 serrano chiles, stemmed, seeded and minced
One 28-ounce can diced tomatoes with their juice
Salt and freshly ground black pepper
1 1/2 pounds (about 3 1/2 cups) shredded Slow Cooker Braised Brisket, heated
Eight 4-inch crisp corn tostada shells
1 cup shredded iceberg lettuce
1 avocado, peeled, pitted and finely diced
1 cup fresh tomato salsa
1/2 cup Mexican crema or sour cream
4 ounces crumbled queso fresco cheese (about 1 cup)
Lime wedges, for serving

Steps:

  • For the marinade: Combine the Maggi sauce, lime juice, 2 tablespoons water, garlic and serranos in a medium-size bowl, season with salt and pepper. While whisking constantly, slowly add the olive oil, Put the brisket pieces into a large food-safe plastic bag and pour the marinade over it, turning the meat to coat. Seal and refrigerate for at least 8 hours or preferably overnight.
  • Allow the meat to come to room temperature. Drain the meat and discard the marinade.
  • For the brisket: Pour the oil into the bottom of a slow cooker. Add the onions, broth, peppers, oregano, garlic, chiles, tomatoes and some salt and pepper. Mix well, and then nestle the meat into the liquid in the bottom of the slow cooker. Cook the brisket on medium-high heat until the meat is tender and shreds easily with a fork, about 5 hours.
  • Using a slotted spoon, transfer the meat to a cutting board and let stand until cool enough to handle, about 15 minutes. Shred the meat into 2-inch-long pieces. Return the shredded meat to the slow cooker, stir to combine, and let stand until the meat is hot, about 10 minutes. Taste and season with salt and pepper, if necessary.
  • The warm braised meat can be used to fill burritos, tacos, tostadas or sandwiches. Leftover meat can be stored in an airtight container for up to 3 days or frozen in plastic freezer bags or containers for up to 1 month.
  • For the tostadas: Spread about 1/3 cup of the warm meat over each of the crisp shells. Top each tostada with about 2 tablespoons lettuce, some diced avocado and 2 tablespoons salsa. Drizzle about 1 tablespoon crema over the top and garnish with crumbled queso fresco.
  • Serve with lime wedges on the side for squeezing over the top.

These go with Recipe #260124. Mmmmm! This is great stuff! Hope you enjoy! Most Machaca Burritos have green bell pepper in them, but this recipe doesn't have it--add it if you like, sliced and cook with the onions.

1 cup machaca burrito meat, Crock Pot Machaca Burrito Meat
12 eggs
30 grape tomatoes, cut into thirds
1/2 cup mozzarella cheese

Steps:

  • Melt butter in a large skillet, and saute onions for 5 minutes.
  • Add in meat and tomatoes and mix with the onions.
  • Once heated through, break eggs over meat mixture and scramble together until done.
  • Sprinkle cheese over Machaca mixture and let melt.
  • Spoon mixture onto tortillas and fold and eat! You can use sour cream and salsa if you like, but we like it without!

Shredded Beef Machaca

For the pot roast (or use your favorite basic pot roast recipe)
3-4lbs beef chuck roast, halved
Salt and pepper
2 tablespoons ghee (clarified butter)
1 onion, sliced
4 cloves garlic, chopped
1 cup beef broth
1 bay leaf
For the Machaca
2 tablespoons ghee or high heat oil
1 cup diced white onion
2-3 cloves garlic
1-2 poblano peppers, roasted, skinned and diced
1/2 teaspoon ground cumin
1/2 teaspoon coriander
1/2 teaspoon smoked paprika
1 cup red chile sauce or your favorite salsa
2-3 large eggs, whisked
Salt and pepper to taste
Squeeze of lime juice
Dash of hot sauce, optional
Crumbled cotija cheese
Avocado slices
Warm corn tortillas
Mexican crema or sour cream
Fresh chopped cilantro
Salsa

Steps:

  • To make the pot roast
  • Pre-heat the slow cooker on low. Season both halves of the beef chuck with salt and pepper.
  • In a large skillet, heat the ghee over medium high heat and brown all sides of the chuck roast. Transfer the chuck roast pieces to the slow cooker and add the beef broth, bay leaf, onions and garlic. I don't add too much liquid when preparing a pot roast in my slow cooker as I want the pot roast to slowly cook in as much of it's own juices as possible. This will make for a very tasty pot roast. Adding too much liquid will cause the roast to boil which will give it a bland and chewy texture.
  • Let the pot roast cook on low for about 6-8 hours.
  • When the pot roast is done, shred the beef and set aside.
  • To prepare the Machaca
  • Heat a large skillet and add another two tablespoons of ghee or high heat oil. Sauté the diced onions until soft and slightly caramelized and then add the garlic. Sauté for one minute longer. Stir in the diced poblano peppers, cumin, coriander and smoked paprika.
  • Add the shredded beef and chile sauce and toss to combine.
  • In another small pan, add a little butter to the pan and cook the eggs, scrambled style. When the eggs are done, fold them into the machaca.
  • Add a squeeze of lime and season to taste with salt, pepper and a dash of hot sauce.
  • Serve with crumbled cotija, avocado slices, warm tortillas, sour cream, fresh cilantro and additional salsa.

  • Chop tomatoes and onion. Then finely chop garlic, Serrano chili and cilantro.
  • Heat pan to medium and pour in cooking oil.
  • Add shredded beef to the pan and quickly stir. Be careful as oil may splatter.
  • Stir machaca constantly for three minutes, making sure beef doesn't stick to the pan.
  • Add onions to the pan and stir to combine.
  • Add garlic. Cook for one minute, stirring constantly.
  • Add tomatoes and Serrano chile. Cook for one minute, stirring frequently.
  • Crack four eggs into a bowl and add salt and pepper to taste. Note that beef may already be salty, so taste the beef before adding salt.
  • Sprinkle cilantro on top of eggs and beat with a fork or whisk until well combined.
  • Pour eggs into the pan with machaca mixture. Increase heat and cook for two minutes, stirring constantly.

3-4 pound chuck roast (trimmed of excess fat)
1 medium yellow onion (diced)
½ red bell pepper (chopped)
3 large garlic cloves (minced)
1 can Rotel with green chiles
4 oz can chopped green chiles
¼ cup lime juice
2 Tablespoons Maggi sauce or soy sauce
½ teaspoon salt
½ teaspoon dried oregano
¼ teaspoon ground black pepper
10 burrito-sized tortillas
Shredded Mexican cheese
Shredded lettuce

Steps:

  • Place the chuck roast into the bottom of a slow cooker insert. Layer the onion, bell peppers, and garlic cloves on top. Pour Rotel and green chiles on top.
  • In a small bowl whisk together lime juice, Maggi sauce, salt, oregano, and pepper. Pour the mixture into the slow cooker. Cover the slow cooker and cook on HIGH for 4-5 hours or LOW for 7-8 hours.
  • Use 2 forks to shred the meat.
  • Place meat in tortillas, top with desired toppings, and roll into burritos.
