Berries & Cream from

Simple ingredients elevated with technique. Sweet berries, fresh mint, whipped cream, and a caramel dust create an irresistible dessert! This Berries & Cream recipe is the perfect summertime treat.

1.5 cup granulated white sugar
1 cup raspberries
1 cup blackberries
1 cup quartered strawberries (de-stemmed)
1 cup blueberries (optional)
1/2 cup granulated white sugar
2 tbsp Grand Marnier
1/2 cup mint leaves, chiffonade
1 cup heavy whipping cream (keep very cold)
2 tbsp granulated white sugar
1/2 tsp vanilla extract

Steps:

  • In a large mixing bowl, combine all of the berries and sprinkle half a cup of sugar. Add in the Grand Marnier and mix to combine. Let sit in fridge for an hour. In the meantime make the caramel and the whipped cream.
  • Line a baking sheet with a silpat. In a small sauce pan melt the sugar over a medium flame. Swirl the pan occasionally (do not stir) until all the sugar has dissolved and turned into a medium dark caramel color. Be careful not to burn it!
  • Pour the caramel onto the silpat lined baking sheet in a thin even layer. Let cool completely.
  • Break up the caramel with a wooden spoon. Take the broken shards and pulse them in a food processor until finely ground. Run through a mesh sieve to make a dust. Reserve a few shards if you would like to use them as a garnish. (If you don't have a food processor just put the shards in a cloth kitchen towel and lightly hammer with a meat tenderizer or rolling pin)
  • In a mixing bowl, combine the cream, sugar, and vanilla. Whip until medium peaks form.
  • Add the mint to the berries and mix to combine. Scoop the berries into serving bowls.
  • Top with a large spoonful of whipped cream and dust with the caramel. Garnish with some of the cracked caramel sugar if you'd like. Enjoy!

1 pound fresh strawberries
zest of one orange
juice of one orange, including any pulp
1/4 cup Grand Marnier or Apricot Brandy
1/4 cup raw sugar

Steps:

  • Hull and slice the strawberries and add them to a large bowl.
  • Add in the orange juice, fruited liqueur, sugar, and orange zest. Stir and allow to sit at room temperature, covered, for about 3 hours.
  • Serve with French vanilla ice cream, over waffles, with sweetened whipped Ricotta, with a drizzle of salted or smoked honey, or in a bowl with homemade whipped cream.

3 cups fresh strawberries, hulled and sliced
1/4 cup white sugar
4 oz mascarpone cheese (sweet, Italian-style cream cheese), at room-temperature
1/2 cup heavy whipping cream, very cold
2 tbsp powdered sugar
zest of one lemon
1 tbsp fresh mint leaves, finely chopped

Steps:

  • In a mixing bowl, stir together the strawberries and sugar. Set aside, and let sit for at least 10 minutes.
  • Meanwhile, using a hand-mixer or stand-up mixer with the whisk attachment, on medium speed, blend together the mascarpone cheese and 1 tbsp of the powdered sugar until light and fluffy. Spoon into a separate bowl and set aside.
  • Pour the cream and the remaining sugar into the original mixing bowl and blend on high-speed just until stiff peaks form, about a minute or two. Turn the mixer off and carefully fold the whipped cream into the mascarpone mixture. Add the lemon zest and gently stir to combine.
  • Divide the strawberries among four small plates or bowls and top with the mascarpone cream and a sprinkle of fresh mint. Serve immediately.

This is a wonderful summertime dessert. So delicious with a nice glass of sparkling wine. This is also great served with some dark chocolate. From The Wine Club cookbook. Serve the berries in a white wine glass for a nice presentation. If you do not have rose water you can flavor the whipped cream with vanilla or lemon extract.

2 1/2 cups raspberries
2 1/2 cups blueberries
4 tablespoons sugar
2 tablespoons sparkling wine
1 1/2 cups whipping cream
1 1/2 tablespoons confectioners' sugar
2 1/2 tablespoons rose water

Steps:

  • Place the raspberries and blueberries in separate bowls. Sprinkle each with 2 tablespoons of sugar and 1 tablespoon of sparkling wine. Gently toss the berries; let stand at room temperature for 1 hour.
  • Meanwhile, chill a medium mixing bowl and the beaters of an electric mixer.
  • In chilled bowl beat the whipping cream, confectioner's sugar and the rose water until soft peaks form.
  • In wine glass layer raspberries, whipped cream and blueberries. Fill glasses half full.

Steps:

  • In a mixing bowl, stir together the strawberries and sugar. Set aside, and let sit for at least 10 minutes. Meanwhile, using a hand-mixer or stand-up mixer with the whisk attachment, on medium speed, blend together the mascarpone cheese and 1 tbsp of the powdered sugar until light and fluffy. Spoon into a separate bowl and set aside. Pour the cream and the remaining sugar into the original mixing bowl and blend on high-speed just until stiff peaks form, about a minute or two. Turn the mixer off and carefully fold the whipped cream into the mascarpone mixture. Add the lemon zest and gently stir to combine. Divide the strawberries among four small plates or bowls and top with the mascarpone cream and a sprinkle of fresh mint. Serve immediately. Notes The longer the strawberries and sugar sit, the more juices will be extracted. If you have time, the strawberries can be prepared in advance and sit up to a day soaking in the refrigerator.
