Macaroni Schotel literally means macaroni dish. It's a baked-cheesy dish made of macaroni and cheese. It's a savoury that is delicious to enjoy as an afternoon snack or as a starter.

150 grams/ 5.29 oz Macaroni pasta.
200 grams/ 7.05 oz Boneless-chicken breast.
500 ml/ 16.91 oz Milk.
250 grams/ 8.45 oz Cheddar cheese, grated.
1 medium Onion.
2 cloves Garlic.
6 Eggs, beaten lightly.
Pinch of ground nutmeg.
½ tsp Ground white pepper (preferably), or ground black pepper.
½ tsp Salt.
1 tbsp butter, and more to grease the dish.

Steps:

  • Get a large oval dish ready. Grease it with butter. Set aside.
  • Clean the chicken and cut in big chunks. Then put hot boiling water in a pot and add in the chicken. Boil the poultry until it's thoroughly cooked. Drain it, and when it's a bit cooled down, shred the meat into slivers. Set aside.
  • Boil and cook the macaroni until al dente, drain and set aside.
  • Preheat the oven at Gas 4/ 180℃/ 350℉.
  • Peel and chop the onion.
  • Peel and crush the garlic until it becomes a paste.
  • Heat and melt the butter on a frying pan, and put your chopped onion in and fry until the onion becomes translucent and smells fragrant.
  • Add in the garlic, and fry until the garlic is nicely fragrant.
  • In a mixing bowl, put the cooked macaroni in, add the shredded chicken, onion and garlic, beaten eggs, milk, cheese, nutmeg, salt and pepper.
  • Mix and stir the macaroni mixture until all well blended and mixed.
  • Pour the mixture into the dish. Spread it nicely and evenly.
  • Bake the dish in the oven for about 45 minutes or until it's fully cooked.
  • Enjoy.

Macaroni Schotel (Indonesian Macaroni Cheese) image

Pasta was introduced to Indonesia by the Dutch who would make a version of this casserole in a 'Schotel' or 'schaal', meaning dish in Dutch. The meats can be changed and any vegetable can be added, if you wish.

12 ounces elbow macaroni
1 medium onion, chopped
4 garlic cloves, minced
0.75 (12 ounce) can corned beef, diced
2 hot dogs, sliced down middle then diced
1/4 lb smoked ham, thinly sliced
1 (8 ounce) box neufchatel cheese
1 (12 ounce) can evaporated milk
1 cup milk
2 teaspoons sugar
salt & freshly ground black pepper, to taste
1 1/2 teaspoons ground nutmeg
2 eggs, beaten
1/2 cup parmesan cheese, grated
1/4 cup colby-monterey jack cheese, shredded

Steps:

  • Prepare macaroni according to package directions to the "al dente" stage. Drain and set aside.
  • In a large non-stick skillet, saute the onions on medium-high heat for 5 minutes then add the garlic. Saute until garlic is fragrant (1 minute).
  • Add the corned beef and start breaking into smaller pieces. Saute for 3 minutes. Add hot dog cubes and sliced ham and saute for 1 minute more. Set aside.
  • In a greased baking dish, add half of the noodles and top with meat mixture. Spread meat mixture evenly leaving 1/2 inch space around edges of the pan.
  • Top meat mixture with thin slices of the neufchatel cream cheese, leaving 1/2 inch space around edges of baking pan.
  • In a mixing bowl, combine both milks, sugar, eggs, salt, black pepper and nutmeg. Slowly pour half around edge of baking pan so that it can drain under the meat and cheese mixture.
  • In the remaining sauce mixture, add the parmesan cheese and stir well to combine. Pour over top of casserole from side to side.
  • Layer shredded cheese across the top of the casserole. Cover casserole and place in refrigerator overnight.
  • When ready to cook, heat oven to 400 degrees F and bake for 40-45 minutes. Top should be golden brown. Allow to cool for 15 minutes and serve with ketchup and chili sauce, if desired.

  • Boiling Macaroni. In a saucepan, fill it with 2 liters of water over high heat and bring it to a boil. Add 1 tsp of salt and 1 tbsp of oil. Boil the macaroni for about 10 minutes, stirring occasionally so that they don’t stick together. Once cooked, remove and add 1 tbsp of oil and stir it well.
  • Béchamel and Macaroni Cooking. In a pan over medium heat, add butter. Stir till it melts and add the onions. Saute until fragrant and add in the flour bit by bit while stirring. Add in milk in small amounts until well combined. Reduce the heat of the stove. Add parmesan, chicken/beef powder, salt, sugar and nutmeg. Stir until well combined and slightly thickened. Add the smoked beef and boiled macaroni. Mix well.
  • Baking Macaroni . Preheat oven to 170 degrees. In a heat resistant bowl, add in the macaroni and a generous layer of mozzarella cheese on top. Put in the oven to bake for about 15-20 minutes, until golden brown.
