THE BEST BAKED MAC & CHEESE RECIPE EVER
Super creamy and gloriously cheesy, this classic baked mac and cheese boasts a golden bubbling lid with ooey gooey goodness underneath.

Steps:
- Boil the pasta JUST until al dente, according to package directions. Drain and return to the pan you boiled it in. Set aside. (Mix in a little butter to keep the noodles from sticking if it's going to be awhile before you make the sauce)
- Preheat the oven to 375 degrees Fahrenheit.
- To a medium saucepan over medium heat, add the butter. When the butter has melted, add the flour, salt, dry mustard, pepper, and 1/8 teaspoon smoked paprika. With a wooden spoon or whisk, stir constantly for three minutes.
- Add the milk in a thin stream, stirring constantly with a whisk. Continue to stir constantly until the sauce thickens enough to coat the back of a spoon, 5-8 minutes.
- Remove from heat and add 2 cups of the cheese, stirring until melted. You'll reserve the last cup of cheese for topping. Pour the cheese sauce over the pasta and toss gently until all of the pasta is coated.
- Add half the pasta to a two-quart casserole dish (I like a tall 8-inch by 8-inch baking dish). Sprinkle on half the cheese. Add the rest of the pasta. Sprinkle on the rest of the cheese, then dust lightly with the smoked paprika.
- Bake for 25-30 minutes, until the mac and cheese is bubbling and browning on top.
- Serve, topping individual servings with parsley or cooked, chopped bacon if desired.

Steps:
- Preheat oven to 350ºF. Coat a 4-quart baking dish with cooking spray.
- Cook macaroni according to package directions; drain and transfer to a large bowl. While macaroni is still hot, stir in Cabot Cheddar cheese; stir until cheese softenes slightly. Add lobster, milk, sour cream, mustard and nutmeg; mix well to combine.
- Transfer mixture to prepared baking dish and top with fat free cheese and grated topping. Bake until top is golden, about 30 to 35 minutes.

MACARONI GOODNESS
I let my husband name this dish. Of all the things I cook he says this is one of his favorites. I certainly don't mind making it because it's so good and so easy. I guess I can stop trying to be "gourmet" if this is what he really wants to eat. :-) This is good comfort food and is easy for a quick weeknight meal. The quantities listed below are approximate since I just eyeball most of the stuff. If I don't have the family size box of mac and cheese on hand I just use 2 regular boxes. I also like to use the frozen veggies that you can microwave right in the bag.

Steps:
- Prepare mac and cheese as directed on box, adding additional shredded cheese along with packaged cheese mix.
- Steam veggies in microwave.
- Saute onions, garlic, celery, keilbasa, and grill seasoning until onions and celery are tender.
- Combine all ingredients in greased 13x9 baking dish.
- Melt 2 Tbsp butter and combine with bread crumbs.
- Top casserole with buttered bread crumbs.
- Bake at 425 for 15 minutes or until bread crumbs begin to brown.
