My mother made this often for my daughter and her neighbor friends when they came home from school each day. They loved it and asked their parents to call my mom for recipe. Of course, it would normally be a side dish.

3 cups elbow macaroni
1 (14 ounce) can whole tomatoes
1 -2 tablespoon Lawry's Seasoned Salt
1/4 cup margarine or 1/4 cup butter

Steps:

  • While macaroni is cooking according to package directions, I cut the tomatoes in smaller pieces.
  • Drain macaroni and put back into pot cooked in, add butter and Lawrey's Seasoning Salt (no substitutions).
  • Stir to coat.
  • Add tomatoes along with the juice.
  • You could also add crisp bacon pieces when served.

1 (14.5-ounce) can Hunt's petite-diced tomatoes, undrained
1 (14.5-ounce) can Hunt's whole tomatoes, undrained (broken up slightly with a spoon, if desired)
2 tablespoons margarine
Salt and black pepper, to taste
Dash creole seasoning (like Tony Chachere's), optional
Dash garlic salt, optional

Steps:

  • In a 3-quart saucepan, cook the macaroni in boiling salted water until al dente tender. Drain well in a colander. Return macaroni to the pot along with the remaining ingredients. Simmer over medium heat until bubbly, 5 to 10 minutes, stirring occasionally. Remove from heat and let stand a few minutes before serving.

1/2 tablespoon butter
2 slices bacon (chopped)
1 1/2 cups water
15 ounces petite diced tomatoes (undrained)
6-8 ounces pasta or pizza sauce ((see note))
8 ounces macaroni
1/2 teaspoon seasoned salt ((or to taste))
black pepper (to taste)
grated parmesan ((optional))

Steps:

  • Heat deep skillet or soup pot over medium-high heat. Add butter and chopped bacon. Stir and cook until bacon is brown and fat is rendered. Pour off desired amount of oil from the cooked bacon.
  • Add all tomatoes, pasta sauce, and water to the pot. Bring to a boil, and stir in macaroni.
  • Cook at a low boil for the recommended cook time on the macaroni package. Stir often, scraping the bottom, to prevent pasta from sticking to the pan. Dish is ready to serve when macaroni is cooked to your liking.
  • Serve with grated parmesan for sprinkling on top if desired.

I love Mac and tomatoes. I could eat a bowl or should I say "A POT", by myself. I have to add a few ingredients to it, to make it Italian-Style. I make this for my family and my friends, just a little more for a big pot full.

8 oz large elbow macaroni
2 Tbsp butter
1 can(s) 28-ozs stewed tomatoes, hand crushed
1 Tbsp basil, fresh, chopped
1 tsp oregano, fresh, chopped
1 large garlic cloves, grated
1 tsp sugar
1/2 tsp red pepper flakes, optional
coarse salt and fresh ground black pepper to taste

Steps:

  • 1. Add macaroni to salty boiling water. Cook macaroni until done. Drain
  • 2. Add macaroni back to pot with butter. Add remaining ingredients, stir until combined. Turn heat to medium, and simmer until ingredients blend together, about 15 minutes. Pour into bowl, or eat from the pot.

2 cups uncooked macaroni
1 tablespoon bacon grease
1 (28-ounce) can diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
sugar (optional - see note)

Steps:

  • Cook the macaroni in salted water to al dente according to the package instructions then drain and rinse with cold water to stop the cooking process.
  • In a large pot, melt the bacon grease and pour in the tomatoes with the juice. Bring to a boil, then reduce the heat to medium and cook until most of the liquid has evaporated, stirring occasionally - about 10 minutes.
  • Add the macaroni to the tomatoes and mix well. Add the salt and pepper. Mix well then adjust seasoning to taste. (See my note about sugar below.) Serve warm.

8-10 just picked san marzano tomatoes or 4 large fresh tomatoes
water to cover
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 onion, diced
2 cups fresh tomatoes (You can substitute for a can of a quality brand of diced tomatoes)
1 1/2 cups macaroni
1 1/2 cups water (more is needed as you cook)
1 Knorr tomato bouillon with chicken flavor
2 tbsp extra virgin olive oil
1 tbsp butter
pinch of sugar if your tomatoes are too tart

Steps:

  • Cut an X in the top of each tomato to allow for easy peeling. Bring a pot of water to a boil. When at a rolling boil, add your tomatoes to the water and cook for a couple of minutes until you see the skin starting to release from the tomato. Remove from the heat and when they have cooled a little, peel them over a bowl to not lose any of the juices. .Then squeeze them to chop them up in chunks. You don't want to puree them, just use your hands to chop them up a little. You will need about 2 cups of the finished tomatoes.
  • Add the butter and extra virgin olive oil to a saucepan and sauté your peppers and onions until they have softened and the onions have become translucent. Add your tomatoes, the water and bouillon and cook for about 10 minutes. Then add the macaroni, stir to combine, lower heat and cover. Cook until your macaroni is tender, 15 to 20 minutes, adding water if needed. Enjoy!

This creamy tomato macaroni is one of my most popular and easiest pressure cooker pasta recipes. Simple and delicious, always buttery or creamy, it's bound to please everyone in the family. It's a little different than mac and cheese because there's less cheese, more tomato.

3 tablespoons butter
½ cup finely diced onion
½ cup finely diced celery
1 garlic clove (smashed)
1 teaspoon dried basil
½ teaspoon salt
1 tablespoon tomato paste
28 ounce canned tomatoes, chopped
1 cup chicken stock
2 cups dried elbow macaroni
½ cup heavy cream
salt and freshly ground black pepper
grated Parmesan cheese

Steps:

  • Pre-heat the pressure cooker using the BROWN setting.
  • Add the butter, onion, celery, garlic, basil and salt and sauté until the vegetables start to soften - about 5 minutes. Add the tomato paste and continue to cook for another 2 to 3 minutes.
  • Add tomatoes, chicken stock and dried pasta. Stir and lock the lid in place.
  • Pressure cook on HIGH for 5 minutes.
  • Release the pressure using the QUICK-RELEASE method and carefully remove the lid. Stir in the heavy cream and season to taste with salt and pepper. Let the pasta sit in the cooker for about 5 minutes or until it is cool enough to eat. Serve with the grated Parmesan cheese sprinkled on top.

1 Tbsp garlic (, minced)
2 tsp Italian seasoning ((or 1 tsp each of basil and oregano))
4 cups chicken stock (or broth (water if you don't have broth))
3 cup macaroni (, uncooked (or pasta of choice))
29 ounces canned tomatoes (, 2 cans - crushed and/or diced)
½ tsp salt (, more to taste)
½ tsp black pepper (, more to taste)
parsley (to top (optional))
parmesan cheese (to top (optional))

Steps:

  • Heat Dutch oven or stock pot to medium heat.
  • Add oil to pan along with garlic and herbs. Stir to mix while cooking. Cook 1-2 minutes or until begining to brown.
  • Add broth (or water) and pasta. Heat to high to bring to boil (uncovered).
  • Reduce heat to low and cover.
  • Cook 15 minutes covered, stirring every 5 minutes or so to prevent sticking. Pasta should have absorbed all or most of the liquid by this time.
  • Add tomatoes and stir. Heat for another 5 minutes or so and serve hot.

1 teaspoon bacon grease
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can chopped stewed tomatoes, with juice
½ teaspoon white sugar
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Pour the macaroni into a saucepan and place over medium heat; stir in the butter, bacon grease, tomato sauce, stewed tomatoes with juice, and sugar; season with salt and pepper. Steps:

  • In a large pot, cook the elbow macaroni according to package instructions, but stop short of al dente. Drain the macaroni and return it to the pot. Add the tomato sauce, stewed tomatoes, and sugar to the drained macaroni, stirring it all together so the macaroni is well coated with sauce. Continue to cook the macaroni for about 10 more minutes for the flavors to combine. Serve immediately.
