This is a nice rich mac and cheese. Serve with a salad for a great meatless dinner. Hope you enjoy it.

Steps:
- Cook macaroni according to the package directions. Drain.
- In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
- Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

BAKED MACARONI AND CHEESE
Steps:
- Gather the ingredients.
- In a small saucepan over low heat, melt 3 tablespoons butter. Or place it in a medium-size microwave-safe dish and heat until melted, about 15 seconds.
- Add panko and Parmesan to melted butter and stir until well combined. Set panko topping aside.
- Gather the ingredients.
- Bring a large pot of water to a boil and salt it generously.
- Meanwhile, in a large heavy saucepan over medium heat, melt remaining 4 tablespoons butter. Whisk in flour and red pepper flakes, if using. Cook, stirring, until flour is blond in color, about 4 minutes.
- Gradually whisk in milk. Increase heat to medium-high and let sauce come to a simmer, whisking frequently. Reduce heat to medium-low and let sauce simmer for about 5 minutes or until it starts to thicken.
- Add cream, grated cheese, Parmesan, mustard, salt, and black pepper, stirring until everything is smooth. Taste for seasoning, adding more salt and/or black pepper as necessary.
- Add pasta to boiling water and cook until barely al dente (follow package directions, but stop a minute or two before pasta is completely tender). Set aside 1 cup of pasta cooking water, then drain pasta.
- Whisk reserved pasta cooking water into cheese sauce, combining it thoroughly.
- Add pasta to cheese sauce and stir to combine.
- Heat oven to 400 F. Butter a shallow 4-quart baking dish.
- Spoon pasta mixture into prepared baking dish. There will appear to be a lot of sauce, but not to worry. Some of it will be absorbed into pasta as it cooks, and saucy is better than dry.
- Place baking dish on a sheet pan to catch any drips and sprinkle panko topping evenly over pasta. Bake until golden and bubbling, 30 to 40 minutes.
- Remove pasta from oven. Let sit for a few minutes. Serve hot.

- Preheat oven to 350°. Cook macaroni in a 6-qt. stockpot according to package directions for al dente. Drain; return to pot., In a large saucepan, melt 6 tablespoons butter over medium heat. - Spray inside of cooker with nonfat cooking spray. Then, in cooker, combine lightly cooked macaroni, evaporated milk, milk, eggs, 3 cups cheddar cheese, salt, and pepper.

- Preheat oven to 350°.
- Boil your pasta until it is almost al dente. The pasta will cook again in the oven, so do not cook your pasta completely at this point. When the pasta is done, drain and rinse with cold water to stop the cooking.
- While the pasta is boiling, melt the butter in a large sauce pan.
- Whisk in the flour to create a roux. Whisk and cook for 2 minutes.
- Whisk in the cream and milk and simmer until it starts to thicken.
- Melt in 2 cups of the cheese, stirring constantly.
- Season with the garlic powder and salt and pepper to taste. Taste and add more seasonings or cheese to your liking.
- Layer half of the pasta into he bottom of your baking dish, pour half of the sauce on top and then sprinkle half of the remaining cheese on top. Repeat with the remaining pasta, sauce and cheese.
- Cover with foil and bake at 350° for 20-30 minutes, until the sauce is bubbling. You can remove the foil for the last 10 minutes to brown the top, if desired.

- Heat Smart Balance butter spread in pan over medium heat until melted. Add flour all at once, whisking until smooth. Cook, stirring occasionally, over medium heat until flour mixture is cooked, about 3 minutes.
- Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture begins to thicken, at least 5 minutes. Stir in salt and Tabasco.
- Add parmesan and mozzarella to sauce, reserving a little of both to sprinkle on top later. Stir until cheese is melted.
- Meanwhile, cook Dreamfields pasta according to directions on box and drain.

- Preheat oven to 350°F. and butter a 3- to 4-quart gratin dish or other shallow baking dish.
- In a heavy saucepan melt 6 tablespoons butter over moderately low heat. Add flour and cook roux, whisking, 3 minutes. Add milk in a stream, whisking, and bring to a boil, whisking. Add mustard, cayenne, and salt and pepper to taste and simmer sauce, whisking occasionally, until thickened, about 2 minutes.

- Make topping:

- Make sauce:

- Cook macaroni in boiling water until al dente. Reserve 1 cup cooking water and drain macaroni in colander. In a large bowl stir together macaroni, reserved cooking water, and sauce. Transfer mixture to baking dish.
- Sprinkle topping evenly over macaroni and bake in middle of oven 20 to 25 minutes, or until golden and bubbling.
