These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

Number Of Ingredients 8

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

1 c (2 sticks) unsalted butter, room temperature
1/2 c sifted confectioners' sugar
1 tsp vanilla flavoring
2 c all purpose flour
3/4 c quick cooking oats, uncooked (not instant)
1 31/2 oz jar macadamia nuts, chopped
confectioners' sugar

Steps:

  • 1. Preheat oven to 375 F. Beat butter at medium speed with electric mixer until soft and creamy, gradually add confectioners' sugar, beating well after each addition. Add vanilla and flour, mixing well. Stir in oats and chopped nuts. Shape dough into 1-inch balls. Place on ungreased cookie sheet. Bake for 12 minutes. Remove from pan. Roll balls in confectioners' sugar and cool on wire racks.

3/4 cup plus 1-1/2 cups confectioners' sugar, divided
2 teaspoons grated lemon zest
2 teaspoons lemon extract
2-1/4 cups cake flour
1 cup chopped macadamia nuts
1 cup chopped crystallized ginger

Steps:

  • In a large bowl, cream butter and 3/4 cup confectioners' sugar until blended. Beat in lemon zest and lemon extract. Gradually beat flour into creamed mixture. Stir in macadamia nuts and ginger. Refrigerate for 1 hour or until easy to handle., Shape dough into 1-in. balls; place 2 in. apart on parchment-lined baking sheets. Bake at 350° for 14-16 minutes or until lightly browned., Roll warm cookies in remaining confectioners' sugar. Cool on wire racks. When cooled, roll cookies again in confectioners' sugar.

1/2 cup plus 2 cups confectioners' sugar, divided
1-1/2 teaspoons almond extract

1 teaspoon salt
1 teaspoon ground cinnamon
1 cup unsalted cashews
1 cup macadamia nuts
1 cup pecan halves

Steps:

  • Preheat oven to 375°. Cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in extract. In another bowl, whisk flour, salt and cinnamon; gradually beat into creamed mixture. Pulse nuts in a food processor until finely ground. Mix nuts into dough., Shape into 1-in. balls. Place 1 in. apart on parchment-lined baking sheets. Bake until golden brown, 8-10 minutes. Cool on pans 10 minutes., Place remaining confectioners' sugar in a small bowl. Roll slightly cooled cookies in sugar; return cookies to wire racks to cool completely. Roll cookies in sugar again just before serving.

1 cup salted, roasted macadamia nuts, finely chopped
2/3 cup finely chopped dried pineapple
1/4 recipe Basic Sugar-Cookie Dough
1/4 cup confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees, with racks on upperand lower thirds. On a clean work surface, toss nuts with dried fruit. Sprinkle over dough; knead until just blended.
  • Form into 1-inch balls; place 2 inches apart on parchment-lined baking sheets. Bake cookies in upper and lower thirds of oven, switching positions of sheets halfway through, until edges are barely golden, about 15 minutes. Transfer to wire racks to cool completely. Dust with sugar.

1 lb sugar
1/4 cup apricot jam
1 cup macadamia nuts
1 cup packaged sweetened coconut

Steps:

  • Using a food processor, blend all the ingredients except the coconut, pulsing until mix forms a mass.
  • Form rounded teaspoons of mix into balls.
  • Roll and press coconut into the balls.
  • Chill, loosely covered for at least 4 hours or overnight.
