This was the million dollar winner a couple of years ago in the Pillsbury Bake-Off in Dallas, Texas. It has a wonderful rich taste. (This was the 1st time a man had won the bake-off.)

1/3 cup sweetened condensed milk, preferably low-fat kind
1/2 cup semi-sweet chocolate chips
1 (20 ounce) package devil's food cake mix
1 1/2 teaspoons cinnamon
1/3 cup vegetable oil
5 -6 canned pear halves in natural juice, pureed (about 1 1/4 cups)
2 eggs
1/3 cup chopped macadamia nuts or 1/3 cup pecans
2 teaspoons water
2 cups butterscotch sundae sauce
1/3 cup milk

Steps:

  • Preheat oven to 350.
  • Spray a 9" or 10" springform pan with Pam.
  • In a small saucepan, combine condensed milk and chocolate chips.
  • Heat on med-low setting til chocolate is melted, stirring occasionally.
  • In a large bowl, combine cake mix, cinnamon and oil until crumbly.
  • Place pears in a blender and blend until smooth.
  • In a large bowl, combine 2 1/2 cups of the cake mix mixture, pears and eggs.
  • (The rest of the cake is used for the topping.) Beat with an electric mixer at low speed until moistened, then at med speed for 2 minutes.
  • Spread batter evenly in prepared pan.
  • Drop chocolate chip mixture by spoonfuls over the batter.
  • Stir nuts and water into remaining cake mix mixture blending well, and sprinkle over batter.
  • Bake 45-50 minutes or until top springs back lightly when touched in center.
  • (Be careful not to overbake or cake will be dry.) Cool 10 minutes.
  • Remove side of pan and cool.
  • Combine butterscotch topping and milk in saucepan over med-low heat heat for 3-4 minutes or until well blended, stirring occasionally.
  • To serve, spoon about 2 tablespoons of warm sauce on to plate and top with wedge of torte.

LIME AND MACADAMIA FUDGE

This is from the first edition of 4 Ingredients and comes highly recommended by the co-ordinator of my DS's recreation group for intellectualy and/or physically challenged adults. She has also made it using lemon in place of the lime and says both versions are equally delicious. I have not made this myself so I am estimating times and yield (do not include refrigeration time to set).

395 g condensed milk (can)
500 g white chocolate chips
150 g macadamia nuts (chopped)
2 limes, zest of (zest only, finely grated) or 1 large lemon, zest of (zest only, finely grated)

Steps:

  • Line a 18cm (7 1/8") square tin with baking paper.
  • Place condensed milk and melts in a saucepan and stir over a low heat until smooth, remove from heat.
  • Add nuts and zest and mix well.
  • Pour into tin and refrigerate overnight prior to cutting.

Yield Makes 4 dozen 2-inch squares

Number Of Ingredients 11

1 cup all-purpose flour, spooned in and leveled
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter
4 ounces unsweetened chocolate, coarsely chopped
1 cup (lightly packed) very fresh dark brown sugar
1 cup granulated sugar
4 large eggs, well beaten
1 teaspoon pure vanilla extract
1 1/2 to 1 3/4 cups coarsely chopped, salted macadamia nuts
1 small recipe Midnight Chocolate Glaze (recipe follows)

Steps:

  • Position the rack in the middle of the oven. Heat the oven to 375°F. Line a 10 1/2 x 15 1/2 x 1-inch jelly roll pan with aluminum foil and butter the foil.
  • In a medium bowl, thoroughly whisk together the flour, cinnamon, and salt. Set aside.
  • In a large bowl set over a pot of barely simmering water, slowly melt the butter and the chocolate. Stir occasionally. Remove from the heat and, using a whisk, blend the brown sugar into the mixture, stirring until melted. Gradually mix in the granulated sugar. Stir in the eggs and the vanilla. Add the dry ingredients, stirring just until combined. Do not overmix.
  • Spread the batter evenly in the prepared pan, smoothing it with the back of a tablespoon. Sprinkle the surface with the macadamia nuts and press them gently into the batter. Bake for 13 to 15 minutes, or until the top is set and the bar begins to pull away from the sides of the pan. Do not overbake. The squares should remain slightly moist on the inside. (Note: If the batter rises in the pan during baking, prick the bubbles gently with a fork to release the air.) Remove from the oven and let stand until almost cool.
  • While the bar is cooling, make the glaze. To web the bar, dip a small whisk into the glaze and squiggle it across the pan. If the glaze becomes too thick, thin it with a little very hot water. Let stand until the glaze is set.
  • Carefully lift the bar from the pan by grasping the foil on both sides and place it on a large cutting board. Pull down the sides of the foil and cut into 2-inch squares using a thin-bladed, sharp knife. Storage: Store in an airtight container, layered between strips of wax paper, for up to 5 days. These cookies may be frozen.

Time does not include 3 hrs for cooling.

2 1/2 cups granulated sugar
2/3 cup unsweetened coconut milk
1/2 cup butter
2 cups white chocolate chips (best quality 12-oz. pkg.)
1 (7 ounce) jar marshmallow creme
3/4 cup macadamia nuts, chopped
1 teaspoon vanilla extract
1/4 teaspoon coconut extract

Steps:

  • Line 9-inch-square baking pan with foil, extending foil over edges of pan.
  • Grease foil with butter.
  • Butter sides of 3-quart heavy-duty saucepan.
  • Combine sugar, coconut milk and 1/2 cup butter in prepared saucepan.
  • Cook over medium heat, stirring frequently, until mixture boils.
  • Clip a candy thermometer to side of pan, making sure the bottom of the thermometer does not touch bottom of pan.
  • Reduce heat to medium-low.
  • Continue boiling at a moderate, steady rate without stirring, until thermometer registers 238° F., softball stage (about 15 minutes).
  • Adjust heat as necessary to maintain a steady boil. Remove from heat.
  • Stir in morsels until melted and smooth. Stir in marshmallow crème, nuts, vanilla and coconut extracts until well combined. Transfer mixture to prepared baking pan; cool for 3 to 4 hours or until firm.
  • Lift from pan; remove foil.
  • Cut into 48 pieces.
  • Store tightly covered.

Number Of Ingredients 9

2 teaspoons plus 1/2 cup butter, divided
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
3 cups chopped macadamia nuts, divided
12 ounces German sweet chocolate, chopped
1 package (12 ounces) semisweet chocolate chips
1 jar (7 ounces) marshmallow creme
2 teaspoons vanilla extract
1/2 teaspoon salt, optional

Steps:

  • Line two 9-in. square pans with foil; butter the foil with the 2 teaspoons butter. Set aside. , In a large heavy saucepan, combine the sugar, milk and remaining butter. Bring to a gentle boil. Cook for 5 minutes, stirring constantly. Remove from the heat; stir in 2 cups nuts, chopped chocolate, chocolate chips, marshmallow creme, vanilla and salt if desired., Pour fudge into prepared pans; sprinkle remaining nuts over top and press in lightly. Refrigerate until firm. Using foil, lift fudge out of pans. Discard foil; cut fudge into 1-in. squares. Store in an airtight container.
