- In a large pot of salted, boiling water, cook the pasta to al dente according to the package instructions, about 10 minutes. Drain and set aside.
- Heat a medium, heavy-bottom pot over medium-high heat until hot. Saute the shallots in the olive oil until lightly colored, then add the heavy cream. Reduce the heat to a gentle simmer and reduce by half, 8 to 10 minutes.
- Whisk in the crumbled cheese until melted and incorporated, then stir in the pasta.
- Remove from heat and reserve the base, still in the pan, in a warm place.
- Drizzle the chicken breasts with the olive oil, and season each side of each breast with a pinch each of salt and pepper. Sprinkle over the chopped parsley and rosemary. Grill the chicken over moderate heat until the flesh is firm and the juices run clear, and a thermometer inserted reads 165 degrees. Remove from heat, cover and keep warm until needed.
- In a medium saute pan, cook the pancetta in the oil over medium-high heat until crisp, 5 to 7 minutes
- Strain the pancetta, leaving any fat in the pan.
- Heat the pan with the fat over medium-high heat and sprinkle over the bread crumbs.
- Saute the bread crumbs until darkened and toasted, about 1 minute. Remove from heat and drain the bread crumbs on a paper towel.
- Heat the macaroni base over medium heat until hot, stirring frequently. While the base is heating, slice the chicken into strips.
- Stir the chicken into the base, then stir in the crisp pancetta, parsley and white truffle oil, tossing to coat.
- Divide the mac 'n' cheese among 4 serving bowls and top with the crisp bread crumbs. Serve immediately.

- Preheat oven to 450 degrees F (230 degrees C).
- Prepare a large skillet with cooking spray and place over medium heat. Cook chicken in skillet until no longer pink in the center, 5 to 7 minutes; season with 1 tablespoon garlic powder and transfer to a baking dish.
- Bring a large pot of lightly salted water to a boil. Cook macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain and mix with chicken in the baking dish.
- Melt 1/4 cup butter in a large pot over medium heat. Cook flour in melted butter until the flour is cooked and the mixture forms a roux, about 5 minutes. Stream milk into the pot while stirring to mix with the roux completely; cook until just about simmering, about 5 minutes more. Add Cheddar cheese in small amounts to the sauce and stir to melt completely before adding the next portion; cook and stir until thick and smooth, 2 to 3 minutes. - Melt 1/4 cup butter in the skillet in which you cooked the chicken over medium heat. Stir remaining tablespoon garlic powder into the melted butter; cook until fragrant, 1 to 2 minutes. Remove skillet from heat and stir crushed crackers into the butter mixture to coat; spread over the chicken and macaroni mixture in the baking dish.
- Bake in preheated oven until the topping is crispy, 35 to 45 minutes.

- Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain macaroni as directed on package, using minimum cook time.
- In 5-quart Dutch oven, melt 4 tablespoons butter over medium heat. Beat in flour, onion salt, garlic salt and pepper with whisk until thickened. Cook 1 minute longer. Beat in milk. - Preheat grill to 350 degrees F.
- Quarter red and green pepper, then place them on the grill, cooking until tender. Once grill marks are formed, remove peppers from grill and set aside. Boil elbow macaroni in salted boiling water until al dente - drain and set aside. In a large saucepan over medium heat, melt butter and then whisk in flour to thicken, about 1 minute. Add 1 cup milk and whisk in. Begin adding cheeses 1 at a time, thoroughly whisking each cheese. If sauce becomes too thick, add remaining cup of milk. Once all cheeses are blended add salt, black pepper, cayenne pepper, grilled peppers, jalapeno pepper and stir to combine. Add elbows to mixture and stir again. - Cook pasta according to package instructions. Drain and rinse with cold water to keep the pasta from sticking together. Set aside.
- Heat the olive oil in a large skillet. Add the chicken and cook for 5 to 7 minutes until no longer pink and cooked through. Transfer the chicken to a plate.
- In the same skillet add the onions and cook for 3 to 5 minutes until softened and translucent. Add the garlic and cook for 30 seconds until aromatic. Season with salt and pepper to taste.
- Sprinkle the flour over the onion mixture and stir. Cook for another minute. Whisk in the milk and dried mustard. Add the mozzarella, cheddar cheese and stir it in. Continue to cook until the cheese has melted.
- Add the chicken and pasta to the skillet and stir everything together. Taste for seasoning and adjust as necessary with salt and pepper if needed.

CHICKEN-BACON MACARONI AND CHEESE

- Spray a large casserole dish with cooking spray. Cook macaroni according to package directions. Drain well, and place pasta in a layer in the bottom of the large casserole dish. Top pasta with cubed chicken and bacon pieces.
- While pasta is cooking, melt butter in a large pot over medium heat. Whisk flour into the melted butter, so that both are fully mixed together and smooth. Continue to whisk, cooking the flour and butter, for approximately 5 minutes. Gradually whisk in milk so that it is smooth and fully incorporated with the flour/butter mixture. Add in salt, pepper, and Dijon mustard. Keep whisking, fairly constantly, until mixture is starting to simmer and thickening. Reduce heat to low and whisk in cheddar cheese. When cheddar cheese is fully melted, turn off heat, and whisk in 1/2 lb of Monterey Jack. Whisk until complete melted.
- Pour cheese sauce directly over the pasta, chicken and bacon that is in the large casserole pan. Gently stir ingredients together until well combined. Sprinkle with remaining Monterey Jack cheese.
- In a small bowl, mix melted 3 tablespoons butter with Panko. Sprinkle evenly on top of macaroni and cheese.
- Baked at 375 degrees F for approximately 30 minutes, or until breadcrumbs are browned. Remove from oven and allow to cool for 5-10 before serving.
BUFFALO CHICKEN MAC 'N' CHEESE

- Position an oven rack in the center of the oven and preheat the oven to 375 degrees F. Place the chicken in a 13-by-9-inch baking dish. Toss with the hot sauce, celery salt, 4 tablespoons melted butter and black pepper to taste. Bake until the chicken is tender and cooked through, about 30 minutes. Increase the oven temperature to 425 degrees F.
- Shred the chicken and transfer to a medium bowl, along with any juices from the baking dish. Cover loosely with plastic wrap, and set aside. Wipe out the baking dish with a paper towel and brush with 1 tablespoon melted butter. Set aside.
- Meanwhile, in a medium skillet over medium heat, melt 6 tablespoons butter. Add the panko and cayenne and season with some salt. Saute until deeply golden, stirring constantly, 4 to 6 minutes. Remove from the heat and add the thyme. Stir to combine and set aside.
- Bring a large pot of water to a boil and salt it generously. Add the pasta and cook to slightly less than al dente, about 3 minutes less than the package instructions. Drain.
- In a medium pot over medium heat, melt the remaining 3 tablespoons butter. When the foaming subsides, add the celery and onion. Cook until softened, 4 minutes. Add the flour and stir to coat. Continue to cook, stirring, 1 minute. Gradually add the milk, whisking continuously, and bring to a simmer. Add the Cheddar, gruyere and Parmigiano-Reggiano and whisk until the cheeses are melted and the sauce is smooth. Season to taste with salt and pepper.
- Add the pasta to the cheese sauce and stir to coat evenly. Transfer to the prepared baking dish. Top with the chicken mixture and half of the blue cheese. Sprinkle with the breadcrumbs and bake until bubbling around the edges and completely warmed through, 15 to 20 minutes.
- Top with the remaining crumbles of blue cheese and celery leaves. Serve immediately.

- Prepare the macaroni and cheese base by bringing a large pot of salted water to boil; add the pasta and cook until al dente, according to package directions, about 10 minutes.
- Meanwhile, heat a medium saucepan, over medium high heat, and saute shallots, in the olive oil, until they just begin to color; stir in heavy cream, reduce heat to a simmer, and cook until reduced by half, about 8 to 10 minutes.

- Preheat oven to 400 F.
- Cook the pasta al dente according to package instructions.
- Marinate the chicken and pan sear them in an oven safe skillet until golden brown on the outside. The set aside. Wipe the skillet with paper towel to remove excess liquids.
- In the same skillet, melt 2 tbsps. of butter over medium heat then stir in the Panko crumbs and Cajun seasoning. Toss around until it's "lightly" golden and then remove from heat. Set aside.
- In the same skillet, melt 3 tbsps. of butter and add in the flour. Mix well together well to make a smooth paste texture.
- Add the milk, chicken broth, black pepper, Cajun seasoning, onion powder, garlic powder and salt. Mix and simmer on medium heat until the sauce thickens up a little.
- Add the cream cheese and let the cheese melt up. Then add in the cheddar cheese and continue to stir until the cheddar cheese melts and the sauce becomes smooth and creamy.
- Stir in the cooked pasta and chicken and mix well to coat with the cheese sauce.
- Remove the skillet from heat. Top with 1/4 cup of cheddar cheese and cover with the panko crumb mix.
- Place the skillet in the oven and bake for 15-20 minutes until the crumbs become golden brown.
- Remove and serve immediately. Garnish with some fresh pepper flakes and chopped parsley.
