I Made Ina Garten's Overnight Mac and Cheese, and It's Fully Worth the 24-Hour Wait image

Although I've been getting more comfortable in the kitchen lately, there are still some foods I'd rather leave to the professionals. And for me, mac and cheese

Number Of Ingredients 9

2 teaspoons salt
8 ounces elbow macaroni or cavatappi
1 teaspoon pepper
3 cups heavy cream
2 cups grated gruyère
1 cup grated sharp white cheddar
1/4 teaspoon ground nutmeg
2 tablespoons melted butter (plus extra for the dish)
1 1/2 cups fine fresh white bread crumbs

Steps:

  • A full 24 hours before you plan to serve the dish, bring a large pot of water to a boil. Add pasta and cook for about four-to-eight minutes. Drain and set aside.
  • While pasta is cooking, in a medium saucepan, combine the cream, nutmeg, one cup of the gruyère, 1/2 cup of the Cheddar, salt, and pepper. Occasionally stir and cook until cheese is fully melted.
  • Once the pasta is drained and the cream sauce is cooked, add the pasta into the cream mixture. Mix thoroughly. Cover the pan with plastic wrap. Refrigerate for a full 24 hours. The pasta will absorb the cream and expand.
  • When ready to cook, allow the mixture to sit at room temperature for about an hour. (You can also microwave it for four minutes.) Preheat the oven to 400 degrees.
  • Butter a two-quart dish and transfer the mixture to the dish. Spread evenly. Combine the remaining gruyère and cheddar, and sprinkle evenly on top. Combine the bread crumbs and melted butter, and sprinkle evenly on top. Bake for 20-to-25 minutes, rotating halfway through, until golden brown and crusty. Serve hot.

1 lb elbow macaroni or 1 lb cavatappi pasta
1 quart milk
8 tablespoons unsalted butter (divided)
1/2 cup all-purpose flour
12 ounces gruyere cheese, grated (4 cups)
8 ounces extra-sharp cheddar cheese, grated
1 tablespoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon ground nutmeg
3/4 lb fresh tomato (4 small)
1 1/2 cups fresh white breadcrumbs (5 slices, crusts removed)

Steps:

  • Preheat oven to 375 degrees.
  • Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6-8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt 6 tablespoons of butter in a large (4 qt.) pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minutes or two more, until thickened and smooth. Off the heat, add the Gruyere, cheddar, 1 tablespoons salt, pepper, and nutmeg. Add the cooked macaroni and stir well. Pour into a 3 quart baking dish.
  • Slice the tomatoes and arrange on top. Melt the remaining 2 tablespoons of butter, combine butter with fresh breaf crumbs, and sprinkle on top. Bake 30-35 minutes, or until the sauce is bubbly and macaroni is browned on the top.

1 pound cavatappi or elbow macaroni
1 quart whole milk
8 tablespoons (1 stick) unsalted butter, divided

2 cups grated extra-sharp Cheddar (8 ounces)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
1 1/2 pounds cooked lobster meat, 1/2-inch-diced
1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Steps:

  • Preheat the oven to 375 degrees F. Add the oil to a large pot of boiling salted water, add the pasta and cook al dente according to the directions on the package. Drain well. Heat the milk in a small saucepan, but don't allow it to boil. In a large pot, melt 6 tablespoons of the butter and add the flour. Cook over low heat for 2 minutes, stirring constantly with a whisk. Still whisking, add the hot milk and cook for 1 to 2 minutes, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, the pepper and nutmeg and stir until the cheese melts. Stir in the cooked pasta and lobster. Pile the mixture into 6 to 8 (2-cup) gratin dishes. Melt the remaining 2 tablespoons of butter, combine with the bread crumbs and sprinkle on top. Bake for 30 to 35 minutes, until the sauce is bubbly and the pasta is browned on top.

2 ounces blue cheese, such as Roquefort, crumbled

2 slices white sandwich bread, crusts removed
2 tablespoons freshly chopped basil leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon is crisp. Remove the pan carefully from the oven - there will be hot grease in the pan! Transfer the bacon to a plate lined with paper towels and crumble when it is cool enough to handle.
  • Drizzle oil into a large pot of boiling salted water. Add the macaroni and cook according to the directions on the package, 6 to 8 minutes. Drain well.
  • Meanwhile, heat the milk in a small saucepan, but don't boil it. Melt the butter in a medium pot and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. While whisking, add the hot milk and cook for a minute or 2 more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, blue cheese, 1 teaspoon salt, pepper, and nutmeg. Add the cooked macaroni and crumbled bacon and stir well. Pour into 2 individual size gratin dishes.
  • Place the bread slices in a food processor fitted with a steel blade and pulse until you have coarse crumbs. Add the basil and pulse to combine. Sprinkle the bread crumb mixture over the top of the pasta. Bake for 35 to 40 minutes, or until the sauce is bubbly and the macaroni is browned on the top.
