BLUEBERRY VEGAN PANCAKES



Blueberry Vegan Pancakes image

You won't be able to tell that these Blueberry Vegan Pancakes are vegan - made without eggs, milk, or butter. These pancakes are incredibly thick and fluffy, and soak in just the right amount of maple syrup. Feel free to swap out the blueberries for bananas, add in some nuts, or even a touch of cocao powder.

1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup oat milk ((or any other milk-alternative))
3 tablespoons sunflower oil ((or any other neutral oil), plus extra for cooking)
1 teaspoon cider vinegar
1 1/4 cup frozen blueberries

Steps:

  • Heat a griddle or large skillet (preferably cast iron - see notes) on medium-low to medium heat. Using a paper towel, rub on a bit of oil. Each pancake takes about 8 minutes total to cook, so if you can only fit one pancake on your griddle, use 2 pans at once to reduce the total cooking time.
  • In a large bowl, mix together all the dry ingredients, except the blueberries. Make a well in the middle and add in all the liquid ingredients. Mix with a fork until everything comes together. The batter should be mostly smooth, but a few small lumps are fine.
  • When your griddle is evenly pre-heated (around 10 minutes if you are using cast iron), drop on a bit less than 1/2 cup of batter on the heated pan, and lightly spread the batter with the back of the spoon to make a round. Quickly place on about 1/4 cup of blueberries in a single layer before the batter it sets. Try not to put the blueberries on the edge of the pancakes, though some may roll to the edge as the batter settles. Drop on a bit more batter to partly cover some of the blueberries.
  • Cook until the edges of the pancakes are dried and starting to brown, and the surface of pancakes have some bubbles and a few blueberries have burst, about 5 minutes. You may need to adjust the heat to medium-low so the surface of the pancake does not burn. Keep in mind that these pancakes cook slow compared to other traditional pancake recipes since these are very thick and do not contain any egg. Do not rush the cooking time by turning up the heat. (See also the notes about how different materials of the griddle will affect the cooking process).
  • Once the pancakes are ready, carefully flip with a spatula, and cook until browned on the underside, about 3-4 minutes more. Transfer to a cooling rack and cover loosely with aluminum foil. You may want to keep them warm in oven while you finish cooking the other pancakes.
  • Continue with more oil and the remaining batter. I usually make 5-6 pancakes, depending on how large I make them. Serve with maple syrup and any other topping of choice.

I'm trying to eat less flour, but I also insist that my meals be tasty. After trying dozens of other people's recipes, I took ideas from all of them to create this. It's probably the most delicious thing I've ever had! By substituting out the eggs, it's easy to turn this into a vegan meal as well. Try a bite before topping with syrup, it's decadently yummy as-is! I make 'silver dollar' pancakes to take as snacks to potlucks.

1 teaspoon ground cinnamon
½ teaspoon baking powder

2 eggs
⅓ cup honey
¼ cup almond milk
1 tablespoon coconut oil, or as desired

1 cup blueberries
1 teaspoon coconut oil, or as needed

Steps:

  • Process oats in a blender or food processor until the consistency of flour. Combine ground oats, cinnamon, baking powder, and salt in a bowl.
  • Whisk eggs, honey, almond milk, 1 tablespoon coconut oil, and vanilla extract together in a separate bowl. Stir oat mixture into egg mixture until batter is well mixed; fold in blueberries.
  • Heat 1 teaspoon coconut oil on a griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 egg

¾ cup fresh blueberries

Steps:

  • Preheat griddle over medium heat. Stir together the flour, baking powder, nutmeg, cinnamon and sugar, set aside.
  • In a medium bowl, stir together the egg, yogurt, milk and oil. Gradually stir in the flour mixture, then fold in the blueberries.
  • Pour batter onto hot greased griddle, two tablespoons at a time. Cook over medium heat until bubbles pop and stay open, then turn over and cook on the other side until golden.

2 ripe bananas
1/4 - 1/2 cup buckwheat flour (or plain flour) (*See note 1)
1/4 cup blueberries
pinch of cinnamon ((optional))
1 tsp coconut oil for frying (*See note 2)

Steps:

  • Mash bananas and then stir in the flour and cinnamon.
  • Add the blueberries and stir through.
  • Heat a non stick frying pan on high and add the coconut oil.
  • Reduce to a medium heat and spoon 1 tbsp of batter into frying pan per fritter.
  • Fry fritters until brown on both sides
  • Remove fritters and allow to cool a little before serving.

3/4 cup unbleached all-purpose flour
1/4 cup buckwheat flour
1/4 cup whole wheat flour
2 tablespoons cornmeal (optional)
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 tablespoon salt
1 1/2 teaspoons cinnamon
2 eggs
2 tablespoons melted butter
1 -1 1/2 cup whole milk
1 cup fresh blueberries
1 thinly sliced banana

Steps:

  • Mix the dry ingredients together in a medium size bowl.
  • In a seperate bowl beat the eggs with one cup of milk and the melted butter.
  • Add this wet mixture to your dry ingredients until you have a basic pancake batter. Add the additional 1/2 cup of milk if the mixture is too thick, but don't stir too much or pancakes will be tough.
  • When the batter is ready gently fold in the blueberries.
  • Heat a griddle, adding a little clarified butter or oil. Ladle a five inch circle of batter onto the griddle. Drop a few slices of banana into each circle. Cook pancakes until the tops are covered with tiny bubbles, then flip them over and finish cooking.
  • Serve hot with butter and pure maple syrup.
