As a good South Floridian, I love making mojitos. It's a very refreshing drink; light, minty and perfect for a summer day. I also like to experiment with this drink, and so far I've made two great discoveries. My rhubarb mojito is always a star when we have our friends over, so I decided to take it to the next level and invented the lychee mojito. A lot of my friends and neighbors have lychee tress in their backyard so I suddenly found myself with more than 2 pounds of these lovely fruits in my fridge.

Ingredients

2 cups lychees, peeled and rinsed (or one can of lychees in light syrup)
1 cup water
1 cup confection sugar
1/4 cup of white rum
1/2 cup lychee simple syrup
2-3 tablespoons fresh lime juice
Splash of club soda
3 mint leaves
Ice, to taste
Lychees, limes and mint leaves to garnish

Steps:

To make the simple syrup: Add the lychees, water and confection sugar in a pot and bring to boil for 10 minutes.
You will usually make simple syrup with regular sugar, as confection sugar will make your syrup look murky. In this case, I want the syrup to look murky to enhance the white milky color of the main ingredient.
Drain into a jar or pot and reserve in the fridge.
To make the drink: Cut the limes in quarters and place them in a cocktail shaker with the mint leaves. Give them a quick muddle.
Add all the ingredients but the club soda to the shaker, shake vigorously for two minutes, strain the liquid into a glass half full with ice. Add the club soda.
Garnish with lychees, lime and mint leaves.

1 bunch fresh mint
2 limes, cut into eighths
8 lychees, canned
Crushed ice
4 tablespoons lychee liqueur
8 tablespoons Cuban gold rum
Club soda

Steps:

Into 4 tall Collins glasses, add 1 tablespoon maple syrup, about 10 mint leaves, 3 to 4 lime wedges and 2 lychees. Just before your guests arrive, muddle together to bring out the flavors.
When your guests arrive, fill each glass with crushed ice, 1 tablespoon lychee liqueur and 2 tablespoons rum. Then fill the glasses the rest of the way with club soda, garnish with a sprig of mint and serve.
