LYCHEE MARTINI

Lychee Martini image

Enid P. Saldana of San Juan, Puerto Rico, writes: "I would love to get the recipe for the lychee Martini they serve at Kittichai, in New York City." This summer, enjoy a vodka Martini with a real twist - lychee. The exotic sweetness of the fruit brightens the citrus flavors in this truly refreshing drink.

Yield Serves 2

Number Of Ingredients 8

1/4 cup sugar
1/4 cup water
1 cup drained canned lychees (15 to 20, from a 16- to 20-oz can)
2 tablespoons fresh lemon juice
6 oz (3/4 cup) vodka (preferably Skyy)
1 1/2 oz (3 tablespoons) Cointreau or other orange-flavored liqueur
Special Equipment
a cocktail shaker

Steps:

  • Heat sugar and water in a 1-quart saucepan over high heat, stirring, until sugar is dissolved, then pour into a heatproof bowl set in a large bowl of ice and cold water. Let stand, stirring occasionally, until syrup is cold, about 3 minutes.
  • Purée lychees with sugar syrup and lemon juice in a blender until smooth, then force through a fine-mesh sieve into a bowl, pressing hard on solids and then discarding them. Fill cocktail shaker halfway with ice cubes and add lychee purée, vodka, and Cointreau. Shake 15 seconds and strain into Martini glasses.

Number Of Ingredients 14

For the Lychee Liqueur:
2 cups lychee fruit
1 lime (zested)
375 milliliters vodka
1 cup simple syrup
For the Lychee Syrup:
1 cup sugar
1 cup water
1/4 to 1/2 cup lychee fruit
For the Cocktail:
1 1/2 ounces vodka
1 1/2 ounces lychee liqueur (or lychee syrup)
Dash of lime juice (fresh)
Garnish: pitted lychee

Steps:

  • Gather the ingredients.
  • Peel and cut the lychee fruits in half. Add the pieces to a glass jar that has a capacity of at least 16 ounces. Add the zest of 1 lime, then fill the jar with the vodka.
  • Seal the jar and give it a good shake.
  • Store in a cool, dark place for four weeks, shaking it every couple of days. Give it a taste test after two weeks, then again a week later to see how the flavor is progressing. Four weeks will give it a good flavor, but it might take more to get to your ideal flavor.
  • Once the vodka is flavored to your liking, heavily strain the fruit from the vodka through a cheesecloth or a very clean kitchen towel. Be sure to squeeze all of the liquid from the lychee.
  • Strain again to ensure all of the liquid is removed from the fruit. During this final straining, you can filter it directly into the bottle that will store the liqueur: Use a funnel and place the cheesecloth inside.
  • Add 1 cup of simple syrup to the bottle, tighten the lid, and shake vigorously. Store the finished liqueur in the refrigerator where it will keep for about three months.
  • Gather the ingredients.
  • Combine 1 cup each of sugar and water in a saucepan.
  • Bring to a slow boil, stirring constantly until the sugar is completely dissolved.
  • Add the lychee fruit, reduce the heat, and cover.
  • Simmer for about 10 minutes.
  • Remove from the heat and allow to cool for about 30 minutes.
  • Strain the fruit from the syrup and pour it into a glass bottle with a tight-sealing lid. It will keep in the refrigerator for two to three weeks.
  • Gather the ingredients.
  • In a cocktail shaker filled with ice, pour the vodka, lychee liqueur or syrup, and lime juice. Shake well .
  • Strain into a chilled cocktail glass .
  • Garnish with pitted lychee fruit. Serve and enjoy.

  • You'll need 1.5 ounces of lychee syrup for each martini. Set a strainer over a bowl or glass measuring cup and pour the lychees through the strainer. Reserve the syrup for the cocktail. (NOTE: One can of lychees should yield about 1 1/3 cups of lychee juice).
  • For Halloween, cut a maraschino cherry in half and gently press it into the lychee, to resemble an eyeball. Skewer the "eyeball" with a cocktail pick and slip it into the martini. If you're hosting a party, you might want to pre-assemble the lychee and maraschino skewers next to a pitcher of pre-mixed martinis.
