1/2 cup white cranberry juice cocktail
1 cup lychee juice (from a can of lychees)
2 1/2 envelopes unflavored gelatin (1/2 envelope equals about 1 teaspoon of gelatin powder)
1/2 cup peach schnapps (or Cointreau™ for a less sweet jello shot!)
6 chopped lychees, for garnish, if desired

Steps:

  • Pour juices into a saucepan and sprinkle with gelatin. Allow to soak for a minute or two.
  • Heat over low heat, stirring constantly, until the gelatin is fully dissolved (about 5 minutes). Remove from heat.
  • Stir in the vodka and schnapps.
  • Pour into a standard 1 lb loaf pan (about 9" x 5"). Refrigerate until fully set, several hours or overnight.
  • To serve, cut into desired shapes. Garnish each jello shot with a few pieces of chopped lychee, if desired.

  • Combine 3 1/2 tablespoons cold water and gelatin in a small microwave-safe bowl; let stand until gelatin starts to dissolve, about 5 minutes. Warm the water in the microwave to dissolve the gelatin completely, 5 to 10 seconds.

1 (12 ounce) can lychees in heavy syrup

3 tablespoons pineapple juice
1 box lime gelatin
1 box pineapple gelatin

  • 10 to 12 small plastic cups or shot glasses
  • Bruise the mint leaves in the bottom of a cocktail shaker. Add the lime juice, pineapple juice and shake the 2 together. In a medium bowl combine the lime and pineapple gelatins, and the sugar. Steps:

  • Pour juices into saucepan and sprinkle with gelatin, allow to soak for a minute or two.
  • Heat over low heat, Stirring constantly until gelatin is fully disolved. (About 5 minutes) Remove from heat.
  • Stir in vodka and peach schnapps.
  • Pour into standard 1 lb loaf pan (9" x 5") Refrigerate until fully set.
  • To serve, Cut into desired shape. Garnish with a few pieces of chopped lychee. Enjoy!

  • Set a fine-mesh sieve over a 2-cup glass liquid measuring cup and pour the lychees into it. Shake the sieve gently to drain all the liquid. You should have about 1 cup liquid. If not, add enough water to make 1 cup and stir well.
  • Pour ¼ cup lychee syrup into a shallow bowl. Sprinkle the gelatin evenly over the liquid. It should moisten evenly then soften as it sits for 5 minutes. Microwave the remaining lychee syrup until bubbling, 1 to 2 minutes. Scrape the softened gelatin into the bubbling syrup and stir until it dissolves. Stir in the vodka until well mixed.
  • Arrange the lychees in mini muffin cups so that the open sides are upright. Pour the syrup into the lychee cavities and around the lychees to fill each muffin cup nearly to the rim. Place a blueberry in each lychee cavity, stem side down, to form the pupils of the eyeballs. Pour the remaining lychee liquid into muffin cups. Refrigerate until very firm, at least 4 hours and up to overnight.
  • When ready to serve, slide an offset spatula or thin butter knife around the edge of a muffin cup and pop out the Jell-O shot. Arrange on a serving platter. Pop out the shots without lychees and break them into bits with your fingers to scatter around the shots.
