MOLDED TUNA SALAD



Molded Tuna Salad image

This salad is from *River Road Recipes* originally published by the Junior League of Baton Rouge in 1959. Mrs. Leo Sanchez was acknowledged as the contributor for this easy-to-fix, make-ahead recipe that I see as ideal for a luncheon entree or starter-type salad course for a dinner meal. (Time does not include time for mold(s) to chill till firm). *Enjoy*

Number Of Ingredients 7

2 (6 ounce) cans tuna (water-packed)
2 eggs (hard-boiled & chopped)
1/2 cup pimento stuffed olive (chopped)
1 tablespoon onion (minced, or sub chopped chives)
2 tablespoons plain gelatin
1/2 cup cold water
2 cups mayonnaise

Steps:

  • Using salad oil, lightly grease (or spray w/PAM) a large round mold or 8 individual serving molds. Invert mold(s) on paper towels to allow drainage of any excess oil (Ramekins would work very well w/this).
  • Combine tuna with eggs, olives & onion.
  • Soften gelatin in cold water for 5 minutes. Then dissolve over hot water bath, remove from heat & add mayonnaise gradually, stirring constantly.
  • Fold into tuna mixture, turn into mold(s) & chill till firm.
  • TO SERVE: Unmold on lettuce leaves or mixed greens & garnish as desired.
  • NOTE RE SERVING SIZES: The info I have given is based on individual salad servings as part of a meal. As a luncheon entree, I would expect 6 servings from this recipe.

BROCCOLI RING

Wonderful for a luncheon, or a dinner party.... your guests will be clammering for more when they taste this broccoli ring...not only is it delicious, and easy to make, but looks so nice on a platter with creamed onions in the middle of the mold (Prep time includes boiling the broccoli)

2 1/2 lbs fresh broccoli, cleaned
4 eggs, beaten
1 1/2 teaspoons salt (or to taste)
1/4 cup heavy cream (35%)
pepper
1/4 teaspoon nutmeg
2 teaspoons butter, softened

Steps:

  • Set oven to 350 degrees
  • In a large saucepan, cook broccoli until tender (about 10 minutes); drain, and let cool
  • Chop into small pieces to fit blender or food processor; puree until almost smooth In a bowl, combine the brocolli puree, eggs, salt, heavy cream, pepper and nutmeg
  • Butter a 4-cup ring mold with softened butter
  • Spoon the broccoli mixture into the mold, and cover with foil (if making ahead, refrigerate at this point)
  • Place the mold in a larger pan; pour in boiling water up to a 1-inch depth Place the pan with water and the mold in it in the oven; bake in a 350 oven for 30 minutes, or until custard is set
  • Unmold, and serve with creamed onions in the center.

Oh my, this recipe by Sonia Uvezian from THE BOOK OF YOGURT captured my attention & imagination. I read it, closed my eyes & a pic of it flashed thru my mind - absolutely lovely! What hostess would not be proud to serve this dish as a brunch item, luncheon entree or dinner party salad? (Time does not include refrigeration time)

Number Of Ingredients 16

2 large avocados (peeled, pitted & mashed)
1 tablespoon unflavored gelatin (unflavored, powdered)
1/4 cup cold water
1 cup yogurt (unflavored)
1 large tomatoes (peeled, seeded & finely chopped)
1/4 cup white onion (finely chopped)
1 small garlic clove (crushed to a smooth puree)
2 teaspoons olive oil
2 tablespoons lime juice (strained, may sub lemon juice)
1 teaspoon chili powder
salt
1 lb shrimp (sml-med size, cooked in boiling water 3-5 min , shelled & deveined)
salad greens (platter garnish)
cherry tomatoes (platter garnish)
pitted ripe olives (platter garnish)
lime, slices (or lemon, platter garnish)

Steps:

  • In a saucepan, soften the gelatin in the water. Stir over low heat till the gelatin is dissolved. Remove from heat source.
  • Add yogurt, mashed avocado, tomato, onion, garlic, oil, lemon (or lime) juice, chili powder & salt.
  • Mix thoroughly, taste & adjust seasoning as desired.
  • Turn mixture into a well-chilled 4 cup ring mold. Cover w/aluminum foil & chill for at least 4 hrs or till well-set.
  • To Unmold: Have ready a round, well-chilled platter large enough to allow for the salad assembly as described below. Run the pointed tip of a knife around the edges of the mold to release it. Dip the mold up to the rim into a basin of hot water for just a few seconds. Place the platter upside down over the mold. Hold the platter & mold together & invert. Shake gently to release the molded avocado cream. Repeat process if needed & refrigerate immediately.
  • To Assemble Salad: Fill the center of the ring mold w/shrimp. Surround the outside of the ring w/salad greens & top the greens w/halved cherry tomatoes, olives, lime (or lemon) slices & any remaining shrimp.

1 broiler-fryer chicken (about 2 1/2 pounds)
3 celery leaves
1 small onion, sliced
2 teaspoons salt
1 teaspoon ground ginger
8 peppercorns
2 cups water (for chicken)
1 (8 ounce) envelope unflavored gelatin
1/4 cup cold water (for gelatin)
1/4 cup mayonnaise or 1/4 cup salad dressing
2 teaspoons soy sauce
1/2 cup celery
2 tablespoons walnuts

Steps:

  • 1. Place chicken, celery leaves, onion, salt. ginger, peppercorns and the 2 cups water in a large saucepan; cover. Heat to boiling, then simmer 1 hour or until chicken is tender.
  • 2. Remove from broth; cool while fixing gelatin mixture. Strain broth into a 2-cup measure; add water, if needed, to make 2 cups; return to same saucepan.
  • 3. Soften gelatin in the 1/4 cup cold water in a 1-cup measure; stir into broth. Heat, stirring constantly, just until gelatin dissolves; stir in mayonnaise or salad dressing and soy sauce.
  • 4. Pour into a 6-cup bowl or mold; chill until as thick as unbeaten egg white.
  • 5. While gelatin mixture chills, remove chicken from bones; chop meat very fine. (There should be about 2 1/4 cups.) Stir into chilled gelatin mixture with celery and walnuts. Chill several hours, or until firm.
  • 6. Just before serving, run a sharp-tip, thin-blade knife around top of bowl or mold, then dip bowl very quickly in and out of a pan of hot water. Invert onto serving plate; carefully lift off bowl. Garnish with crisp lettuce and sliced tomatoes, and serve with crusty French bread or toasted hard rolls.

½ cup mayonnaise or salad dressing
2 tablespoons prepared horseradish
1 teaspoon prepared mustard
2 cups chopped cooked corned beef
1 cup chopped celery
¼ cup chopped green pepper
3 large eggs hard-cooked eggs, chopped
2 tablespoons finely chopped onion
6 leaves Lettuce Leaves

Steps:

  • In a mixing bowl, dissolve gelatin in boiling water; stir in mayonnaise, horseradish and mustard. Chill until partially set; beat until foamy. Fold in corned beef, celery, green pepper, eggs and onion. Spoon into an oiled 4-cup mold. Chill until firm. Unmold onto a lettuce-lined platter if desired.
