ASIAN VINAIGRETTE SALAD DRESSING
This is simple to throw together, light and tangy. I often vary the ingredients, using honey or orange juice instead of sugar, adding wasabi powder -- whatever I'm in the mood for. The joy of cooking is being creative! If you wish to substitute the oil, use a bland vegetable oil, extra virgin olive oil or "light" olive oil. Regular olive oil is too strong for this recipe.

Steps:
- Mix first 5 ingredients in a bowl or food processor.
- If using a bowl: SLOWLY drizzle in the sesame and peanut oil, whisking constantly so that the dressing will emulsify.
- If using a food processor, leave it running while you drizzle in the oil.
- When dressing is well combined, add sesame seeds and scallions.
- Serve immediately or refrigerate and use within a week.
LUNCH LADY'S IRRESISTIBLE ASIAN SALAD DRESSING
I had this dressing on a simple Asian cabbage salad at a no-frills little lunch counter. The dressing was so good that I had to ask the lady there for a copy, which she was happy to share. Try this on a crispy cabbage salad and top with sunflower seeds. Enjoy!

NOBU'S ASIAN MATSUHISA SALAD DRESSING
This comes from the world famous Nobu restaurant. There, they serve it over a lightly seared ahi-tuna over greens salad. However, I decided to just post the dressing on its own because it is SO good on SO many different salads. Have fun with it!

Steps:
- Combine the onion, rice vinegar, water, granulated sugar, pinch of sea salt, mustard, ground black and ground black pepper in a bowl.
- Stir until the salt and mustard have dissolved.
- Add the grapeseed and sesame oils and soy sauce and mix well.
SUMI SALAD (ASIAN CABBAGE SALAD)
A crunchy, refreshing salad with unusual flavor. This recipe was given to me by my friend Joan Truman. If you are fortunate enough to live near a Japanese market, purchase Nissen ramen noodles. They come in a red and gold package. The only word I recognize is Nissen; everything else is Japanese. These noodles do not come with a flavor packet as the seasoning is already in the noodles. Although you can use regular ramen noodles with seasoning packets, I prefer the taste of noodles that are already seasoned.

- Dressing:.
- Mix sugar, rice vinegar and salt together in small saucepan. Heat over medium until sugar and salt dissolve. Let mixture cool and then combine with remaining dressing ingredients. Set aside.
- Salad:.
- Heat 2 tablespoons oil in skillet. Toast almonds and sesame seeds until lightly browned. Combine with onions, cabbage, and dressing. Approximately 30 minutes before serving, crush ramen noodles in their package and combine with salad.
- Note: This salad is best if you make it the night before you plan on serving it. The sweet and salty flavors develop overnight and although the cabbage softens a bit, it still retains it's crunchy texture. A good summer salad for picnics since it travels well and doesn't contain mayonaise.

A tangy dressing that you only need to use a tiny bit of because it's richly flavored. It's fat free and wonderful! If you must, then you can drizzle a little olive oil into your salad after tossing it with this dressing but, honestly, it doesn't need it to make a delicious salad! Also a yummy dressing for sauteed tofu and vegetables. Enjoy!

- You can either whir ingredients in blender, which makes it a little frothy- which I like.
