We really loved the crunchiness of this bar, and the sweet chocolate just topped it off!

Number Of Ingredients 10

1 c sugar
1 c brown sugar, firmly packed
1 c butter
1 tsp vanilla
2 eggs
1 c peanut butter
2 c oatmeal (not quick, but old fashioned)
2 c all-purpose flour
1 tsp baking soda
1 tsp salt

Steps:

  • 1. Cream sugars and butter together. Add the vanilla, eggs, and peanut butter and combine. Add the remaining ingredients and mix together. Spread dough on a greased jelly roll pan (18x13x1"). Bake at 350 degrees F for 15 minutes (until golden brown). While hot, spread 1 1/2 cups peanut butter on top. Cool so that the peanut butter has become solid again. (They can be put in the fridge so they set up faster). Spread your favorite chocolate frosting on top and cut into bars.
  • 2. Here is the recipe for frosting, given by the contributer on the blog. 1 stick (1/2 cup) margarine, softened 1/4 cup milk 1-2 tsp vanilla (depending on your taste) 3 T cocoa 2-3 cups of powdered sugar Mix all ingredients with a mixer until smooth and spread on top of bars.

These bars go back many years - They were such a favorite of my kids at the school they attended so they asked the "lunch lady" for the recipe! They became known as the Lunch Lady Peanut Butter Bars. 30 years later, they're still a favorite!

3/4 c butter
3/4 c sugar
3/4 c brown sugar, firmly packed
2 eggs
1 1/2 tsp vanilla extract
3/4 c peanut butter, creamy
1 1/2 c old fashioned oatmeal or quick cooking oatmeal
1 1/2 c all purpose flour
1 1/4 tsp salt
1/2 tsp baking soda
FILLING LAYER
3/4 c peanut butter, creamy
FROSTING
1/2 c butter
2 Tbsp cocoa powder
1/2 c milk
1 tsp vanilla extract
3 1/2 c powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees. Lightly grease a jelly roll pan (11X15). In a separate bowl, combine the flour, baking soda and salt. Set aside.
  • 2. Ie a large mixing bowl, cream together the butter, sugars, peanut butter, eggs and vanilla until light and fluffy.
  • 3. Gradually incorporate the dry ingredients. Then stir in the oatmeal. Spread batter onto the jelly roll pan. Bake 15-20 minutes or until golden brown. Cool for 10 minutes.
  • 4. Whip the 3/4 cup of creamy peanut butter until it becomes lighter in color and very fluffy. Then spread the whipped peanut butter over the cookie base.
  • 5. Melt the butter in a saucepan, adding the milk and cocoa. Cook until just boiling (mixture becomes a little thick) Stir constantly. Remove from the heat & add the vanilla. Gradually add the powdered sugar to the mixture & stir until creamy. Pour over the peanut butter & gently spread over the cookie. Cool completely & then cut into bar cookies.
  • 6. Note: If desired Sun Butter can be used if there is an allergy to peanut butter.

2 cups sugar
2 large eggs, beaten
1 teaspoon baking soda
1 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
1 cup butter, 2 sticks
1 cup peanut butter
1/2 cup butter, 1 stick
1/2 cup peanut butter
2 tablespoons milk
4 cups powdered sugar

Steps:

  • Bars:.
  • Preheat oven to 400°F. Grease a large cookie sheet or line with parchment paper.
  • Mix together dry ingredients: flour, sugar, baking soda, and salt. Set aside.
  • Whisk together ½ cup milk, vanilla extract, eggs. Set aside.
  • In a saucepan, melt 1 cup (2 sticks) of butter and 1 cup peanut butter, bring to a boil. Remove from heat and slowly add flour mixture, followed by milk and egg mixture. Mix until well combined.
  • Pour batter onto cookie sheet, spreading batter evenly to edges. Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool completely before frosting.
  • Frosting:.
  • In a saucepan, bring 1 stick butter and ½ cup peanut butter to a boil. Add 2 tablespoons milk and slowly mix in powdered sugar until well combined. Pour frosting over cake, spreading evenly to edges. Allow frosting to cool and set before serving.
