Steps:
- Combine all filling ingredients in a bowl. Mix well.
- Scoop around 1 to 1 1/2 tablespoons of filling and place over a piece of lumpia wrapper. Spread the filling and then fold both sides of the wrapper. Fold the bottom. Brush beaten egg mixture on the top end of the wrapper. Roll-up until completely wrapped. Perform the same step until all mixture are consumed.
- Heat oil in a cooking pot. Deep fry lumpia in medium heat until it floats.
- Remove from the pot. Let excess oil drip. Serve. Share and enjoy
AIR FRYER LUMPIA

Steps:
- Heat oil in a large skillet over medium-high heat. Add pork and cook until browned, about 5 minutes, breaking it into small pieces. Add water chestnuts, green onion, soy sauce, and vinegar; cook for 5 additional minutes.
- Increase heat to high and add cabbage. Cook until cabbage is soft and liquid has evaporated, about 2 minutes. Turn off heat and stir in grated carrots. Let mixture cool for 3 minutes.
- Preheat air fryer to 400 degrees F (200 degrees C).
- Meanwhile, place a lumpia wrapper on a clean surface in a diamond shape, with one corner at the bottom. Place 2 tablespoons of filling in the wrapper. Fold up bottom half and then tightly fold in sides. Gently roll and seal with a couple drops of water. Repeat with remaining wrappers and filling.
- Lightly mist each roll with olive oil. Arrange as many lumpia in your air fryer basket as possible without them touching. Cook in the preheated air fryer for 5 minutes. Flip and cook 3 additional minutes. Transfer to a paper towel-lined plate. Repeat with remaining lumpia.

- Remove casing from sausage and cook in a skillet over medium heat until slightly browned, 4 to 5 minutes. Add green onions, onions, carrots, and water chestnuts. Cook and stir until onions are soft and translucent, 5 to 7 minutes. Add garlic and cook for 1 to 2 minutes. Season with soy sauce, salt, and ginger. Stir until filing is well combined and remove from heat.
- Lay a spring roll wrapper at an angle. Place a scant 1/4 cup filling in the center of the wrapper. Fold bottom corner over filling and tuck in the sides to form a roll. Use your finger to lightly moisten edges with water. Repeat with remaining wrappers and filling. Mist each roll with avocado oil spray.
- Preheat an air fryer to 390 degrees F (198 degrees C). Place lumpia rolls in the basket, making sure they are not touching; cook in batches if necessary. Fry for 4 minutes; flip and cook until skins are crispy, about 4 minutes more.

VEGAN AIR FRIED SPRING ROLLS (VEGAN LUMPIA)

- Take the frozen spring roll paper out of the freezer and thaw them on the countertop while you are preparing the filling.
- Cook the vermicelli noodles according to its package. Drain and rinse the noodle under cold water and cut them into small pieces using kitchen scissors. Set aside.
- Heat 1 tablespoon of oil in a large-size skillet.
- Cook the onion for a couple of minutes and add the minced garlic. Continue to cook for about 45 seconds with frequent stirring.
- Add the celery and carrot. Cook until celery is cooked, about 2-3 minutes.
- Add the bean sprouts and cook for a couple of minutes.
- Add the noodles and continue to cook with frequent stirring for 3 to 5 minutes. Season with salt and pepper.
- Remove from the heat and let the mixture cool (about the temperature that you can handle the filling without comfortably).
- Meanwhile, separate the spring roll papers. Set them aside and cover them with a damp paper towel from drying out.
- Assemble spring rolls (Please see the photos and instructions above).
- Brush the spring rolls with some vegetable oil.
- Place the spring rolls in the air fryer basket and cook for 5 minutes at 390F. Flip them over and brush with a little more oil. Continue to cook them for 5 additional minutes until they are golden brown and crispy.
- Serve right away.
AIR FRYER FROZEN EGG ROLLS
There's several things which affect how the frozen egg rolls cook. They all vary in size, thickness, type of filling, thickness & type of wrapper so you'll have to adjust timing. For best and even cooking, don't overcrowd the basket. Fill just an even single layer. Cook in batches if needed.We found it best to initially cook at a lower temperature to heat through the center. Then finish for a few minutes hotter, to crisp the outside of the egg rolls.All air fryers are different and some cook much hotter than others. Once you cook your first batch, you'll know more of what works for your model of air fryer and size of food. These were tested on basket style air fryers. Read more recipe notes below the recipe.
